    • Shredded Cheese - I use freshly grated Colby Jack or Mild Cheddar. Using freshly grated cheese from the block ensures a smooth sauce and no hidden carbs.

      I used to watch NASCAR religiously with my parents and sister. I don't watch it anymore as it's really too much drama. I did meet Tony Stewart's dad once when Tony Stewart and Matt Kenseth visited my area for a special meet and greet and race event, so that was pretty cool!

      Would you believe me if I told you I can hear the Nascar races from my back yard when they are going on? Also when they seem to practice all-the-time. We live right near the Watkins Glen track.
