Are you ready for a stupid easy recipe for some amazing chicken tacos your whole family will love?

Good because that is what I am bringing you today! 

I love one pot meals that just about make themselves, and this fits that bill to a T. Aside from the chopping of toppings, which are all optional, this recipe can be made in your sleep. Or in the morning while you are drinking your coffee, making breakfast, and packing lunches.

Speaking of super easy one pot/one pan recipes, I have a question for you. I am thinking about doing a cookbook and thought that one pot/one pan recipes would be the perfect cookbook for y'all. It would be one pot, one pan, skillet, slow cooker, and pressure cooker recipes. 

What do you think? 

I just know that I have really kind of become obsessed with creating recipes that don't use every pan in the kitchen. Sheet pan meals dinners have realllllly become a favorite. Things like my Sheet Pan Steak Fajitas, Sheet Pan Mini Meatloaves, and even my Southwestern Style Sheet Pan Breakfast, happen at our house every month. It is so nice to make an easy meal that has almost nothing to clean up! 

Just ask Kevin.

He appreciates not ending up with dishpan hands 😄


But, about this recipe, OhhEmmmGeeee people! 

Stupid easy and wicked good! A great combo in my book. 

It is also super easy to tailor to your families taste. You can use mild to hot salsa, and mild to hot green chiles.

Toppings?

We love everything but the kitchen sink on ours. But, if you have picky eaters, or just don't feel like chopping, these tacos are just as good with a bit of cheese and lettuce. Maybe a little sliced or diced avocado?

Yes, please use avocado. I developed an allergy to them a couple of years ago and miss them terribly 😔

Yield: 6 to 8 servings

Creamy Slow Cooker Green Chile Chicken Tacos

These green chile chicken tacos are so easy to make, full of flavor, and perfect for the crazy busy nights when you have no time for cooking.
prep time: 5 MINScook time: 4 hours  |  total time: 4 hours and 5 mins

ingredients:

  • 2 pounds boneless skinless chicken breasts
  • 1 1/2 cups salsa verde
  • 2 (4-ounce) cans fire roasted diced green chiles (mild, medium, or hot)
  • 1/4 cup plain Greek yogurt
  • Kosher salt
  • Fresh cracked black pepper
  • Small flour or soft corn tortillas
For Garnish
  • Chopped white onion
  • Chopped tomato
  • Sliced jalapeno
  • Sliced radish
  • Queso fresco cheese, crumbled (can substitute a mild feta or goat cheese)
  • Chopped cilantro 


instructions

  1. Place the chicken breasts, salsa verde, salt, and pepper in the slow cooker, cover and cook on high for 4 hours or low for 8 hours. Allow to cool a bit and then remove the chicken breasts and shred them. 
  2. Remove all but 1 cup of the liquid from the slow cooker, and stir in the Greek yogurt. Return the chicken to the slow cooker and stir to completely coat it with the creamy green chile sauce. Replace the lid.
  3. Heat a dry non-stick skillet over medium heat. One at a time, place the tortillas in the pan and cook for 30 seconds. Turn the tortilla over, and cook for an additional 30 seconds. 
  4. Fill the tortillas with the creamy green chile chicken, top with desired toppings.
