So by now, you have guessed, I am sure, that the slow cooker, and my sheet pans, and my favorite things in my kitchen currently. Aside from the occasional one pot/one skillet situation.
Am I lazy? 
Hmmmm sometimes.
Mostly I am wore slam out by Hawk. 
Do any of you have puppies? It has been 12 years since I have raised a puppy. Kevin agreed to get a puppy IF I did the training. He has never raised a puppy so he was leaving it all up to me. 
I was totally game for it since I have raised MANY puppies, plus I fostered dogs and rescued wildlife for years.
It's like riding a bike I said, no big deal I said.....PPpfffftttttt I obviously had selective memory.

Now, don't get me wrong, his training is coming along beautifully. 

He is 12 weeks old and knows how to;
Sit
Stay
Stand up
and is 99.9% potty trained (minus the little piddle accident by the door because Mom or Dad took a bit too long to get their shoes on.

He also knows to automatically got to a sit/stay when I feed him and waits for me to say it is OK to eat. He does a sit/stay at the door when I come to put the leash on him to go potty too. 

This little guy is so wicked smart, cute as a button, and has a ton of personality!

Case in point. Dad is his favorite toy so he is the only person I have not been able to break the rough play/nipping/biting thing with. 

He will bite Dad's hand, or jacket, or pant leg, or shoestring, and Dad will say "NO". 

Hawk's response?

He tosses that little head around and barks back at him.

I haven't quite decided if Hawk is a two-year-old or a teenager. I guess, when he has his sassy pants on, he is a teenager.

Now, when he gets sassy with Mom he gets a firm no and I turn and ignore him for a minute, doggy time out so to speak.

Dad? He laughs *facepalm*

I need to train Dad as much as Hawk I think.

Anywho, back to the food.

This is a sheet pan supper that I have made many many maaaaaaany times. Why I haven't shared it up until now? 

Hmmm 
Sleep deprivation? Possibly
Senior moment? Could be
ADD? Ya, that could definitely be it!

Maybe it is a bit of all three.

But at least I am finally sharing, right?

Actually, this recipe contains several of my fave things. 

  1. Sheet pan
  2. Pork tenderloin
  3. Bacon
  4. BBQ sauce
  5. Roasted veggie


How could you possibly go wrong with this combo I ask.

I will answer that for you.

YOU CAN'T!

Now, the veggie changes from time to time. Broccoli, asparagus, potato, so you have to adjust the recipe just a tad for each one. Check out my other sheet pan recipes to see the cooking times for each.

And, depending on your grocery store/butcher, you may not be able to find a 2 lb pork tenderloin. In that case buy two if the biggest ones you can, then start checking internal temp around 20 minutes. They say 145 is the perfect internal temp but, since there is no fear of trichinosis in domestic pork anymore, we like our pork a nice medium rare so I go to about 130 to 135. 

Make sure to let the pork rest for about 10 minutes before slicing it to keep all of those lovely juices in the meat!

This is one of those back pocket recipes you need to have for those crazy days when your brain is fried but you still need to get dinner on the table. 

I use it as a refrigerator clean out meal too. 

The veggie can depend on what I have left over in my crisper drawer.

You can even just do the tenderloin and serve it with a nice side salad.

Wala, dinner is done!

Oh look, Hawk is sleeping. Maybe I can get some laundry done before he wkes up and want s to "help me" fold!!

Sheet Pan Bacon Wrapped BBQ Pork Tenderloin

The easiest way to get that BBQ flavor without having to light the grill, this sheet pan meal is so easy and perfect for a busy weeknight meal.
prep time: 15 MINScook time: 25 MINStotal time: 40 mins

ingredients:


  • 1 (2-pound) pork tenderloin (or 2 1-pound+)
  • 1 pound thin sliced bacon, how much you use will depend on the size of your tenderloin(s)
  • BBQ rub
  • 1 large head cauliflower, cut into florets 
  • 3 tablespoons olive oil, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Kosher salt
  • Fresh cracked black pepper
  • BBQ Sauce 

instructions

  1. Rub the tenderloin with the BBQ rub, making sure to coat it well. Set aside and allow it to marinate at room temperature for 15 minutes to 1 hour.
  2. Preheat the oven 400 F.
  3. In a large bowl, toss the cauliflower with 2 tablespoons olive oil, garlic powder, onion powder, salt, and pepper. 
  4. Grease the sheet pan with the remaining 1 tablespoon of olive oil.
  5. Scatter the cauliflower over the sheet pan in an even layer, leaving room for the tenderloin(s).
  6. Wrap the tenderloins in bacon and lay them, seam side down, on the baking sheet.
  7. Generously brush the tenderloins with the BBQ sauce.
  8. Place in the oven and bake for 25 to 30 minutes, turning the cauliflower halfway through the cooking time. Begin checking the internal temperature at 25 minutes. You are looking for 145 - medium or 135 - medium rare.
  9. Remove from the oven and cover with foil, allow the meat to rest 10 minutes before you slice and serve.
