Football season is upon us again my friends and honestly, I don't know how to feel. Those of us that are diehard Seahawks fans are feeling a little lost with the huge changes to the team this year. So it just feels weird, and wrong.
However, there is one thing I can always get on board for and that is football food!
If my team isn't doing well I can at least enjoy some tasty grub right?
Buffalo has always been a go-to flavor for football game day. In the past I had some carbalicious stuff going on, but being low carb doesn't mean you can't enjoy your favorite flavors!
Is Buffalo Chicken Keto?
Now, if you are talking about the battered and fried wings or tenders, well then no, absolutely not.
Between the carbs in the batter, and the type of oil it is fried in. There are no-nos everywhere in that scenario.
But with just a few changes Buffalo Chicken can be a welcome addition to any low carb or keto game day menu.
Using ground pork rinds instead of breadcrumbs in the meatballs saves us carbs.
And I know many of you are like "pork rinds? WTF Bobbi?" but I am here to tell you that ground pork rinds add ZERO carbs vs 21 net carbs for a 1/2 cup of regular breadcrumbs!
Even if you don't think you like pork rinds I promise you they don't make the meatballs taste like pork rinds. They are just there in place of the breadcrumbs to help bind the meatballs.
You can of course use something like almond flour, but that will add carbs so just be aware of that.
P.S. before going low carb I hated pork rinds.
Then you want to make sure that the Buffalo sauce and ranch dressing (if you use it) you use is keto friendly. Those carbs can sneak in there in so many different places.
I have made homemade versions of both and promise I will get them on the blog soon!
I do use a tiny bit of carrot in this recipe to get that Buffalo "feel" but if you are strict keto you can go ahead and omit it.
So, with the changes I have made, each meatball has less than 1 net carb!

INGREDIENTS NEEDED TO MAKE CHEESE STUFFED BUFFALO CHICKEN MEATBALLS

- Ground chicken
- Egg
- Onion powder
- Celery salt
- Carrot
- Garlic
- Spicy pork rinds
- Pink sea salt
- Fresh cracked black pepper
- Cream cheese
- Cheddar cheese
- Bacon
- Keto Buffalo wing sauce
- Blue cheese crumbles
HOW TO MAKE CHEESE STUFFED BUFFALO CHICKEN MEATBALLS
STEP 1
Mix the ground chicken, egg, onion, celery, carrot, garlic, breadcrumbs, salt, and pepper.
STEP 2
Mix the cream cheese, cheddar cheese, and bacon.
STEP 3
Roll the chicken mixture into 20 balls, one tablespoon at a time, flatten them, placing one teaspoon of the cheese mixture into the centers of the chicken patties, wrapping them around the filling, and placing them on a baking sheet.
STEP 4
Bake in a preheated 400F oven until cooked and lightly golden brown, about 20 minutes.
STEP 5
Toss the meatballs in the buffalo hot sauce and top with blue cheese crumbles.

Can these Cheese Stuffed Buffalo Chicken Meatballs be made ahead of time?
Yes, they can. You can make them up to the point of baking them and store them in the fridge, in an airtight container, for up to 2 days. Or you can freeze them for up to 3 months.Can I leave out the blue cheese? What other cheese can I add?
I have been known to use gorgonzola, which is a milder cheese. But, if you really don't like blue cheese at all but want to add that tangy bite, give feta crumbles a try instead.How should I store the leftover Cheese Stuffed Buffalo Chicken Meatballs?
Store any leftovers you may have in an airtight container in the refrigerator for up to 4 days.

My husband is a huge Buffalo chicken wing lover. He will toss some wings on the grill, or in the air fryer, slap some Buffalo sauce on them, dip them in ranch, and go to town.
Me? I guess I like things bite-sized and a bit less messy?
Yes, these meatballs are messy to make, but when it comes to eating them they are perfect in my mind. And honestly, who wants to get all messy sitting in the living room watching the game?
Not me!

Stuffed Buffalo Chicken Meatballs
Ingredients
- 1 pound ground chicken
- 1 large egg
- 1 tablespoon organic onion powder
- 1 teaspoon organic celery salt
- 1 large carrot peeled and grated
- 1 clove garlic minced
- 1/2 cup ground spicy pork rinds
- pink salt
- cracked black pepper
- 4 ounces cream cheese room temperature
- 2 ounces cheddar cheese shredded
- 2 slices bacon cooked and crumbled
- 1/3 cup keto Buffalo wing sauce
- blue cheese crumbles
Instructions
- In a large bowl, mix the ground chicken, egg, onion, celery, carrot, garlic, breadcrumbs, salt, and pepper.
- Mix in the cream cheese, cheddar cheese, and bacon.
- Using a small 1-tablespoon cookie scooper, make 20 balls, flatten them, placing one teaspoon of the cheese mixture into the centers of the chicken patties, wrapping them around the filling, and placing them on a baking sheet.
- Bake in a preheated 400F oven until cooked and lightly golden brown, about 20 minutes.
- Toss the meatballs in the buffalo hot sauce and top with blue cheese crumbles.
