Pork Tenderloin with Port Shallot Sauce

Today is the 1 year anniversary of #SundaySupper. 

If you don't know what #SundaySupper is, it is the movement started by our fearless leader Isabel Laessig aka The Family Foodie. She wanted to bring back a time when families ate together around the dinner table. The days when families took the time to be together and enjoy a good meal. 

In today's times, and with our multitasking lives, "family" has kind of fallen by the wayside and her vision was to change that. 

I remember when she asked me if I wanted to join the #SundaySupper family. I was shocked and so honored to be included in a group with such amazing talent. 

Through the last few months, I have learned so much and have been inspired by Isabel and the other wonderful bloggers from our foodie family.

To celebrate this fantastic milestone we have all chosen recipes from other #SundaySupper contributors, and believe me that was not an easy task. I could spend the next year just making the fabulous dishes that these amazing bloggers have shared for our #SundaySupper events. 

I finally settled on recreating a recipe originally posted by my sister blogger Paula Montenegro of Vintage Kitchen Notes. Her Pork Tenderloin with Port Shallot Sauce jumped off the page at me and I knew it would make Kevin happy that I chose meat. 

We all know he suffers through my soup and pasta obsession, so I knew a meal like this would put a smile on his face. Little did I know how big that smile would be. I think it was only overshadowed by the smile that lit my face up when I tasted this amazing dish, and when I say amazing I mean 


The pork is oh so tender and the Port Shallot sauce compliments it so well. 

Sweet, savory, it has it all! If you are looking for a main dish for an upcoming family meal look no further. This has got to be on your table!!

Yield: 2 to 4 servings

Pork Tenderloin with Port Shallot Sauce

This pork tenderloin is sweet and savory, it has it all! If you are looking for a main dish for an upcoming family meal look no further. This is it!
prep time: 10 minscook time: 25 minstotal time: 35 mins


  • 1 cup chicken stock
  • 1 (1 1/4 pound) pork tenderloin
  • 3/4 cup Tawny Port wine
  • 1/2 cup sliced shallots
  • 4 tablespoons olive oil
  • Kosher salt
  • Freshly ground black pepper


  1. In a medium saucepan, boil broth until it reduces by one half.
  2. Meanwhile season pork with salt and pepper. 
  3. In a skillet, heat 2 tablespoons olive oil. Add pork and sear well on all sides. Remove and reserve on a plate.
  4. In the same skillet, heat remaining 2 tablespoons olive oil. Add the sliced shallots, and some black pepper. Cook over medium heat until they begin to turn golden, about 3 minutes. 
  5. Add 1/4 cup of the port wine and let reduce until almost evaporated. 
  6. Add 1/4 cup of reduced stock and let reduce again until almost evaporated. 
  7. Repeat with another 1/4 cup of port. 
  8. When the mixture is thick and liquids are syrup-like add the seared pork back to the skillet and the remaining 1/4 cup each of port and 1/4 cup reduced stock.
  9. Let cook for about 5 minutes. Remove from heat, transfer pork to a cutting board and let rest for 3 or 4 minutes.
  10. Meanwhile, check the remaining sauce left in the skillet. If it´s too liquid reduce it a bit more while the pork is resting.
  11. Cut the meat into inch-thick slices, arrange on the plates and spoon sauce over.
