Friday Flashback 8/30/13

Ya, I know, kind of heavy for me right? I have just been really introspective this last week. Things that have happened in my life, good and bad, have been forefront in my mind. The last few years of my life have been a roller coaster. I mean a serious "hang on because this is going to be a wild ride" roller coaster. I am not complaining, I know I have grown from each situation, and I guess maybe that is what this is all about. I am thankful. Thankful for the love of my family and friends, thankful for the fact that I wake up each morning healthy, thankful that my life allows me to do this which in turn has allowed me to have you all in my life. Are there things I still want in my life? Of course there are. But I am realizing that I need to appreciate what I have for now and believe that if the things I want are meant to be, they will be.

OK, enough of the serious stuff! Let's get on to the fun things....

This past week I spent quite a few hours in my garden trying to clean it up. Two things had happened. One is I did not research what containers I should use for each plant, or how many I should put in each container. OK lesson learned and next year I will do better. Two, well I have to admit with the fabulous weather we have been having, and my friend tempting me with the pool in her back yard (It's all her fault) I didn't give my babies the love that I had been. So they were looking a little ragged.

But I went to work and 2 hours later......

OK I know I love my tomatoes way too much probably, so let's see what went down outside of my garden this week.

California Burgers with Spicy Red Onion Aioli

Boy I sure seem to like big ol' sloppy burgers don't I? But heck, who doesn't? If you don't need at least two napkins it isn't a real burger in my mind! 

This is another in my continuing line of burgers I have been making. I have just become obsessed with cooking on the grill since it has been so hot. Then the grilling obsession turn more toward a burger obsession and well, as you can tell from the other burgers I have come up ( Inside Out Bacon Cheddar Burgers with Caramelized Onions, Big Fat Greek Burgers, The Mr T Burger, and the Big Pig Burger) my imagination goes crazy. I just love the process of thinking about all of the things I could throw at a burger, and what would work well together.

This burger actually came about because a local company, called Purdy Organics, offered me some samples of their products. I used the Cider Vinegar with Rosemary and Garlic to brine a chicken and it came out fabulous!! You can see that recipe here. This time I tried the spicy pickled red onion and immediately know I wanted to use them on a burger somehow.

I knew I wanted to do something more exciting than piling them up on the burger so I decided do use them in the sauce. I love flavored sauces or aiolis (which is just a fancy name for mayo) on a burger. Give me sweet, spicy, tangy, cheesy, oh ya bring it on!

Then I thought about the toppings I wanted. I wasn't sure and went back and forth on a few things, but in the end I decided just to put the toppings I would want on it. fresh tomato, lettuce, avocado, yum!! It all just reminds me of California, hence the name I gave the burger. Whether it reminds me of California, or just tastes ding dang good, all I know is I love this burger!

Florentine Meatball Subs with Provolone Cheese Sauce

I love sub sandwiches, specifically meatball sub sandwiches. But here in my little town, the only place you can find a meatball sub is Subway. Don't get me wrong, Subway has some good sandwiches (plus my daughter works there) but a really good meatball sandwich? Not so much. 

I have been making my own at home (why I haven't posted them I don't know). But you know I can never just make the normal dish right? Nope, so I have played around with Beer Braised Meatball Sandwiches, Caprese Meatball Subs, and now these Florentine Meatball Subs. 

Shoot you have seen my mind go crazy with hamburgers. Between the Big Fat Greek Burger, Mr T Burger, Inside Out Bacon Cheddar Burgers with Caramelized Onions, and most recently the Big Pig Burger, I know you aren't surprised that I would come up with some wacky sub sandwiches too.

These sandwiches were soooooo good. As you can tell by the picture, I went for the extra EXTRA Provolone Cheese Sauce. Provolone just happens to be one of my favorite cheeses, but the salty creamy cheese with the garlic, spinach, and onion in the meatballs? YUM heaven on a bun!! I saved the other half of the meatballs and sauce and froze them for another night. I can't wait, it will be soon I know that for sure!!

Chocolate Chip Banana Bread

First off, if you have followed my blog, Facebook, or Twitter for any length of time you know that I am "bakingly challenged". I tend to be a bit hit or miss when I do it. Either it is fabulous or and epic fail. So due to that I have kind of taken a step back when it comes to even trying. 

Oh, don't get me wrong, I have seen tons of gorgeous baked goods that I have wanted to give a shot. I want to have those wonderful smells coming from my kitchen that only baking gives you. But there is that little nagging thought that I will just mess it up. So I don't even try.

Then the other day I was faced with 4 small over ripe bananas and a boyfriend telling me what a waste of money they were. He was going to throw them away when I stopped him.

Me - Don't throw those away
Kevin - Why? They are bad.
Me - Well......I am going to make something with them
Kevin - What?
Me - I am going to bake something
Kevin - This I gotta see

Oh ye of little faith. If you make it a challenge it is a whole different ballgame!! So off I went into my kitchen to get my bake on!

I dug around in my cookbooks, magazines, and papers, looking for a good recipe. I found this handwritten on a sheet of paper. My mom didn't cook much, but she could bake. She had a recipe for Pumpkin spice cake with a whipped cream frosting that I would kill to have again, but somehow through the years it has been lost.

So imagine how ecstatic I was to run across this! At that moment I decided it was meant to be. The baking gods were smiling on me and it was fate that dictated this chocolate chip banana bread be made! OK a little too much there? I tend to get carried away at times I know, but heck I was president of the Thespians in high school. I have drama in my blood folks. 

Oh, back on track, the result of all of this drama/fate/whatever was one fabulous loaf of chocolate chip banana bread!! Moist, not too sweet. Oh my goodness I was so happy, you seriously have no idea how happy I really was. As soon as I tasted it I wanted to make more to give to everyone just to prove I can actually bake!!

I wont be making some for everyone but I might let a few people put in their request.

Hot Reuben Dip for #SRC

For this months Secret Recipe Club, I was assigned the blog Flying on Jess Fuel. First off I was excited just because my daughters name is Jess. Then when I went her her blog I was super excited. She has some seriously mouth watering food over there! Plus she and her hubby are just so ding dang cute you want to squeeze them!!

After reading through her blog, and drooling like a teething baby, I decided I wanted to try this Hot Reuben Dip. With football season upon us (well atleast pre-season football), and NASCAR still going strong, we spend a lot of weekend time in front of the TV enjoying both of them. Plus, we LOVE Reuben sandwiches, so of course this dip just about jumped off the page at me.

I changed things just slightly. I made some homemade 1000 Island Dressing instead of using bottled. We don't using dressing so I didn't want to buy a whole bottle when it would just go to waste. So I made the amount of homemade dressing that the recipe called for. Other than that the only thing I did was to broil it slightly to get the top a bit browned.

Well, can I tell you how good this dip is? WOW! We seriously devoured it. A NASCAR race, cold beer, and this dip? Oh ya, we were in heaven!!

Beef Taquitos for Global Street Food #SundaySupper

I was sooooo excited when I found out the theme for this weeks Sunday Supper was global street food. I grew up in Southern California, and spent a lot of time in Mexico as well. I think I lived on these beef taquitos, or rolled tacos, for many many years! There was a local taco shop that I went to all of the time. I started eating there when I was fifteen years old, I just loved them and couldn't seem to get enough of them. I even passed that love down to my kids, so they are junkies just like Mom! They spent many a day, and allowance dollars, at that shop.

Homemade Healthy "Refried" Beans

I have an obsession for Mexican food, I know I have said that a million times before. But they say the first step is admitting you have a problem. I don't think it is a problem at all really, but tell that to Kevin please. Kevin is my polar opposite when it comes to Mexican food. While I am thinking about when I might have more, he is thinking about anything but that!

When I was young, and living in San Diego, I ate tons and I mean TONS of Mexican food. There was pretty much a taco shop on every corner. You know, kind of like Starbucks in Seattle. Now being young, my metabolism could handle a ton of Mexican food. But as I got older...mmmm not so much. Which really isn't fair in my mind. 

So whenever I can I try to take something I love, that is less than healthy, and make it new by removing fat and calories. I decided that beans were a huge one that I wanted to tackle. You don't even want to know how much fat and how many calories we in my favorite restaurants refried beans!! One word.....LARD!! So I totally removed the "refrying" process. I went with a little bit I had learned from living in So Cal and made up the rest. I mean what could go wrong right? Ya I am the queen of epic fails so I knew anything and everything could go wrong. 

Well, with the help of my daughter, the beans came out really good. It doesn't exactly match the beans from my favorite San Diego taco shop, but everyone loved them! The great thing is that you can freeze them. So go ahead and make a big batch, you won't waste a thing!

Homemade Healthy Refried Beans

1 pound dried pinto beans
2 tablespoons onion powder
1 tablespoon garlic powder
1 tablespoon Mexican chili powder
1 teaspoon cumin
Kosher salt
Cracked black pepper
Queso Fresco cheese

Place the beans in a large bowl and cover them water. You want as much water as possible because the beans will double in size at least. Let them soak overnight.

The next day, drain and rinse the beans and discard any stones or hulls. In a large pot, cover them generously with fresh water and simmer on the stove. Begin checking the beans in about 1 to 1 /2 hours. They should be tender at this point. Add the onion powder, garlic, powder, chili powder, cumin, salt, and pepper. Continue to simmer, stirring occasionally, until the liquid has cooked down to a thick gravy constancy. If you want a smooth consistency, you can use a potato masher to smash the beans. I leave them whole since the cooking process tends to lend to a lot of the beans "melting" into the liquid.

Continue to simmer if you want your beans thicker. Adjust seasoning, and serve topped with crumble Queso Fresco cheese.


Friday Flashback 8/22/13

Happy Friday everyone! I hope this past week has been good to you. Even though my birthday was the 13th, we continued the celebration at various locations for about a week. I guess if I have to get older I am going to make sure I have fun doing it! From pool parties, to hanging out at our local bar with friends and family, to a wonderful dinner on the water, this birthday has by far been one of the best I have ever had!!

These pictures were taken (by iPhone because I forgot my regular camera) at The Lobster Shop in Tacoma. They have the best food of any local restaurant we have tried. No matter what I have ordered, it has always been delicious. We both had the Large Prawn Scampi and it was wonderful (of course I forgot to take a photo of the food....sheesh Bobbi) and a nice bottle of wine. Pair that with the amazing weather we have been having here and being able to sit on the water.....amazing!!

Sooooo I am going to blame the fact that I didn't post on Monday on all of the festivities. It is a good excuse right? Just say yes, it will make me feel a whole lot better.

However, the rest of the week I was a good girl and I think there was some pretty tasty food here for you to enjoy. Pair that with a terrific giveaway and what more could you ask for? Don't answer that, just make sure to enter the giveaway. Speaking of the giveaway.......

Citrus Soy Cod in Foil

I have been on a cooking in foil kick lately. Just like my Greek Shrimp in Foil Packets. Our summer has just continued to be fabulous so I am looking for anything and everything to put on the grill. I knew I wanted to do fish again, and had really wanted to grab some halibut, but it was soooooo expensive I decided to pass and go with some nice cod. You could use whatever white fish you want though really.  

Picking this night to make this dish really was a great choice as well because not only was my daughter over for the night, but Kevin was sick in bed. So I needed something that would be quick, easy, and not a mess to clean up.

This is also a very flexible dish. I used cod but you can use another white fish. I used red bell peppers and bok choy, but you could use any veggies you wanted. I had wanted to throw some Japanese eggplant in there but they didn't have any at the store. Zucchini, summer squash, even some thin slices of lemon would work well in this dish.

I made this along with the Spicy Sesame Peanut Noodles, but rice would be a perfect side because you could use the sauce in the packet to flavor it. However you chose, or whatever you chose, I how you do decide to give this one a try. We loved it, even the sick one gave it a thumbs up.

Flashback Friday 8/16/13

Hi everyone and Happy Friday. Why the birthday cake? Well, Tuesday was my birthday, or as I like to say, the anniversary of my 29th birthday! I had a wonderful day. My kids and some friend all joined up at my girlfriends house. She is the one with the pool so that is where we have all been pretty much non stop this summer. We are lucky if we get a month of summer like weather here in Western Washington, but this year has been amazing!! We have had about 2 months of weather in the 80's.....heaven!! So we have all but moved in to my friends house. We laugh that she needs to put a box for people to drop money in for the pool fund.

I have also been doing a bit of wildlife watching around my house and yard. With the temps so nice it seems to have brought all of the critters out. I am seeing deer and other animals on a daily basis. But my favorite is the squirrels in my back yard. I can't tell you how many times I have been sitting at my desk and catch movement out of the corner of my eye, only to look over and see a little squirrel outside my sliding glass door looking back at me!

He just needed a little drink.

Other than animal watching, and partying it up, I have been cooking up a storm. Last night I made my Big Pig Burgers and ooohhhhhh boy did they come out even better than I planned!! My kids all went crazy over them. My son sent out a mass text with a picture of the burger and informed me that I put the local burger shop to shame. Aaawwww how sweet is that?

I have also been working on a few new recipes but I will keep them hush hush for now, top secret stuff ya know?

We went out for some nibbles and a few beers the other night, I told you it was my birthday, I have just celebrated all week that is all.

Spicy Sesame Peanut Noodles

My daughter came to stay with us for a few days last week. She brought a bag of her favorite foods with her and of course one of them was ramen noodles. This girl has loved ramen since she was a little girl. I just laughed. 

Me - You know we already have food in the house
Her - ya I know
Me - So what is with the bag?
Her - don't have the right food!

OK that hasn't changed. Both of my kids would come to me whining "Mommmmmmmmmmm I am starvvvvvvvvvvvving" 

"OK then makes something to eat" 

"But there is nothing in the house to eat!" 

They say this as we have a fully stocked pantry *sigh*

Anyway, she decided to prove to me that her food was better. 

Ppfffttttt OK go for it. 

She made me leave the kitchen so I couldn't see how she made this gourmet ramen dish. I just laughed and went to the living room to watch Food Network. 

Out she brings this steaming bowl of noodles. "Hhmmmm what is that smell? Do I smell peanut butter?" "Yes," she proudly exclaims. 

Now I am looking at the bowl like it might contain some kind of nuclear waste. "You put peanut butter in your chicken ramen?" 

She grins, "Yup, and there is sriracha in it too". 

"WOW you really are going all gourmet on me aren't you?" 

At this point I realize that I was doing the same thing to her that the family has done to me....doubting before I tried. Soooooo I tried it. Now you know I am not a big fan of packaged food like that buuuuuuuuut I have to be honest here, it ROCKED! 

At that moment I knew I wanted to try to make a spicy peanut noodle dish. I browsed through several recipes and kind of mish mashed what I liked into one. This is what appeared, and it is gooooooood! The nice thing is that you can serve these noodles hot or cold. I grabbed some out of the fridge the next day and didn't want to wait for them to heat up, they were great. Kevin had leftovers the next day too. It's a keeper for sure.

Grilled Asparagus with Balsamic Glaze

I made Mini Meatloaves with Balsamic Glaze using Mandarano's Balsamic Glaze. If you haven't checked out that post you need to!! I knew I wanted to make the meatloaves with their balsamic but I also knew I couldn't wait to use it on some grilled veggies. Two of my favorite things in one place....YUM!!! 

Last year I did Grilled Veggies with Garlic Balsamic Reduction and that was when my love first bloomed for this tasty grilled treat. Now that I have Mandarano's Balsamic Glaze the reduction process is no longer necessary YAY. Can I tell you how many tries it took me to get the reduction perfect? It was a would laugh at me.

I of course had to  squeeze that garlic in and since I was using the glaze I decided to just marinate the asparagus for a while. You know, let the asparagus and garlic hang out and get to know each other for a while. The result was perfect. There was a subtle garlic flavor beneath that glaze, along with the sweet asparagus taste and just a touch of smoke flavor from the grill. WOW my stomach is growling now. I am going to see if I have any more asparagus in the fridge........

BLT with Baked Avocado Egg Salad {Guest Post at Hun What's For Dinner}

A while back my friend Cindy asked me to do a guest post for her blog Hun What's For Dinner. I was happy to do it and very honored she asked me, also she wanted me to do it today, which is my birthday, I thought it was an awesome idea. 

I have known Cindy for quite a while now. I met her through mutual blogger friends on Facebook. One of the great things about being a food blogger is that you  meet some pretty fantastic people that share the same love so they don't think you are crazy when you talk about obsessing over food. I mean my family looks at me like I have grown a third eye when I babble on about recipes I am working on "You want to put what with what?", they roll there eyes and sigh loudly when they have to wait to eat because I am taking a million and one pictures of the meal hoping to get just the right one "Are we actually going to be able to eat before it is cold this time?", and grumble when I again want to watch one of my countless cooking shows "Isn't there something, ANYTHING else on that you want to watch?". So having a foodie family gives us all the support and understanding we we don't feel like we need a 12 step program anymore!

You know I have talked about my Pintrest obsession before. I get on there and have to pry myself away....usually several hours later! One of the things I have been seeing for quite some time is baked avocado with eggs. I was interested but, with my little trip to the ER and not being sure if it was avocado that sent me there, I was a little leery of them. Once I finally got the green light from the Doc I knew that I wanted to tackle the idea but with my own twist. 

I looked at several recipes, and boy are there tons, before I decided that I wanted to try them as a salad. I thought that the creaminess of the yolk along with, what I assumed would be an even creamier avocado after baking, who needs dressing? Also, I love BLTs with avocado and a fried eggs (hence this post for BLTAE Sammies with Homemade Bacon Mayo), so a salad with  sweet ripe tomato, peppery arugala, and salty bacon, seemed the perfect combination to compliment that gorgeous baked avocado.

I was right! I would have liked my yolk a bit runnier, I like a reallllllllllllly runny yolk, but the flavors were perfect. This to me is a breakfast! No more ho hum cereal or eggs and toast, bring me a BLT Baked Avocado and Egg salad and I will be a happy camper!!

Friday Flashback 8/9/13

Wow it is Friday again!!  This has been a week filled with ups and downs. Monday we had a ceremony to spread the ashes of a good friend. It really was very peaceful to be out in the water saying our goodbyes, but tough at the same time because it now seemed so final that he was actually gone. We spent two days with his wife, keeping her company and reminiscing. 

Wednesday I received a phone call from a friend of mine from high school. We won't go into how long we have known each other, lets just say a realllllllly long time. He called to say he was in town and wanted to stop by. I was so excited! I hadn't seen him in 7 years or so. It was awesome to catch up. It seemed just like yesterday that we had been sitting together talking.

Yesterday was the first day of preseason and our Hawks played the Chargers. It was hard for me to see my two teams play against each other, and I did catch a lot of flack from my old friends for rooting for the Seahawks, but they won and I will admit I celebrated.

Now, why do I have a picture of Pikes Place Market on the blog? Well, Tuesday is my birthday and Pikes Place is one of my all time favorite places to go. I mean HUGE farmers market + food blogger? It's a no brainer right? The last time I was there was during the BlogHer Food conference earlier this year. Kevin went a long with me and one of the activities they had was a scavenger hunt through Pikes Place. We had a blast running all over the market looking for the items we needed to find. The game was played online so when you found items you had to take a picture and upload them to the game. This let me combine two of my favorite and photography.
