It is funny. Kevin and I have been together for over 5 years now and this month I just found out he likes pumpkin and sweet potatoes. How am I just now getting this information???
So when I found out that this Sunday Supper theme was One Pot Meals I decided I wanted to use one of those ingredients. I have been wanting to do a Pumpkin Mac and Cheese, but when I mentioned Spicy Sausage + Sweet Potatoes to Kevin his eyes lit up, so I knew that was what I was going to make. I can continue with my Mac and Cheese obsession at another time.
Kevin loved this soup which, if you have read much on my blog you will know, is an accomplishment all on it's own! Soup to him is not a meal, it is an appetizer. So I could not have been happier to hear that he liked it. But he didn't just tell me he liked it, he actually went into detail about why. Color me totally shocked!!
I have to agree with him, one of my favorite things about this soup is the spicy sausage is balanced perfectly with the slight sweetness of the potatoes. You could of course make this with regular potatoes but I recommend you try it with the sweet potatoes!!
Spicy Sausage and Sweet Potato Soup
1 tablespoon olive oil
1 large onion, chopped
3 cloves garlic, minced
1 pound spicy Italian sausage (casings removed)
2 sweet potatoes (about 1 pound), diced
6 cups chicken stock
1 cup Ditalini (or other small pasta)
1 bunch Swiss chard, roughly chopped (can use kale)
Kosher salt
Cracked black pepper
Gated Parmesan cheese
Heat oil in a large pot over medium-high heat. Add onion and saute, stirring occasionally, until translucent, about 5 minutes. Add garlic and cook for an additional minute. Add sausage and cook, breaking the meat up with a wooden spoon, until no pink remains, about 5 minutes. Add the sweet potatoes chicken stock, salt and pepper, and bring to a boil. Add pasta and cook about 8 minutes (just shy of al dente). Reduce to a simmer and add the Swiss chard. Cook until the greens have wilted and the pasta is tender. Adjust seasoning.
Ladle into soup bowls and top with grated Parmesan cheese.
Serves 6

ReplyDeleteWe don't eat meat but some of the recipes on that list look pretty tasty, and easy to substitute with something else instead of the meat. :) I just recently started eating sweet potatoes. They taste pretty good!
