Cheesy Tomato Casserole - A delicious, cheesy, meatless Monday meal, the whole family is sure to love!
When I found out this week's Sunday Supper theme was "Meatless Meals" I thought for sure I would have to sit this one out.
I mean, I cook for two and one of them is a major carnivore!
Meatless Monday?
I might as well say I am going to chain him to the wall and starve him.
Seriously
The idea totally freaks him out!
I know
Drama much?
Sssshhhhh you never heard me say that!
So I put on my thinking cap.
Think...think...think
Aha, I came up with it!
He has been asking me to make meatloaf for quite some time, but I have been on a bit of a fish and chicken kick.
So I knew I could tempt him with meat, red meat, and sneak the real dish I was working on in for a side.
Hehe
I am so clever.
But enough about my devious ways. Let's talk about this dish.
I loved it!
Kevin?
Oh ya, he went back for seconds.
Winning!!
Just think a nice creamy mac and cheese meets subtle Italian flavors.
You got it
HEAVEN!!
So break this meal out for a meatless night, or sneak it in on your carnivore as a side dish.
Either way you won't be sorry you did!
8 ounces large shell pasta
3 tablespoons butter
2 cloves garlic, minced
3 tablespoons all-purpose flour
2 cups fat free evaporated milk, warmed
2 cups mozzarella cheese, grated
1/2 cup Parmesan cheese, grated
1/2 cup Parmesan cheese, grated
1 tablespoon olive oil, plus more for drizzling
1 medium onion, chopped
1 15-ounce can diced fire roasted tomatoes
1 teaspoon dried oregano, crushed
1 teaspoon dried basil, crushed
1 teaspoon dried basil, crushed
1/4 cup non fat Greek yogurt
1/4 packed cup flat leaf parsley, chopped
Salt and pepper
1/4 cup seasoned bread crumbs
Preheat oven to 350 degrees F.
Preheat oven to 350 degrees F.
In a large pot, boil the pasta according to package directions for al dente. Drain and reserve.
In a medium pot, over medium heat, melt the butter. Once the butter has melted add the garlic. Stir and cook for a minute. Then whisk in the flour and cook, stirring constantly, until mixture has a nutty aroma, about 4 minutes.
Whisking constantly, slowly add the warmed milk. Cook, continuing to whisk along the bottom of the pan until boiling, about 5 minutes. Remove from the heat and stir in the cheese, one cup at a time, stirring constantly until completely melted. Set aside.

You are soooo charming, Bobbi! Your writing is sprinkled with pixie dust and smiles =)
ReplyDeleteMostly fish and eggs are the only animal products on my plate. So, I'd LOVE a huge heaping of your scrumptious looking and sounding super duper cheesy casserole.
Aaww thank you :) you are the sweetest!
DeleteOhhh look at all that cheese!!!!!!!!!!!! I could live on cheese only... that's how much I love cheese! So this is a winner for me!
ReplyDeleteYou and me both LOL I am a cheeseaholic!
DeleteOh man, I love all of that cheese! Your dish is just beautiful!!
ReplyDeleteThanks so much!
DeleteCheese! That is all.
ReplyDeleteI think even my carnivore would accept this for an entree, but maybe I need to have some meatloaf on the side just in case ;)
ReplyDeleteIt helps to keep them from growling too much :)
DeleteMy husband is the same way. . this Cheesy Tomato Casserole looks fabulous! I'll have to give this a try as a MAIN dinner dish! yum!!!
ReplyDeleteWhen you've got lots of yummy pasta and cheese, who needs meat?!
ReplyDeleteExactly!!
DeleteThis cheesy dish does look amazing! :)
ReplyDeleteThanks Jennifer!
DeleteThis looks amazing, and I love how you stuck it in on your carnivore! I am saving this as a side in my yumprint.com cookbook. Looking forward to giving it a try! HUGS
ReplyDeleteHehe I love being sneaky!!
DeleteCheeese ummmm!!!!!!!! :)
ReplyDeleteHaha, yeah, my soup was my main dish, but it was hubby's side dish. Ugh, men! This looks like a meal to me, and a yummy one, at that!
ReplyDeleteWe should just put them all in one house and throw meat in once in a while LOL
DeleteWhat a fantastic meatless meal - I love all the cheese too!! I'm not sure I'd share it with my hubs though :-)
ReplyDeleteCan't go wrong with mac and cheese! Love the tomatoes!
ReplyDeleteOMG what is it with the carnivore husbands? If I served this by itself my husband would look at the table and ask me where is the rest of the meal. So I'll cook a piece of chicken for him and I'll make a meal off this lovely pasta dish.
ReplyDeleteYes, I always get the look over my shoulder while I am cooking and the the "Where's the meat" comment. I hope you do give it a try :)
DeleteYum, what a great recipe for reluctant part-time vegetarians :) I love putting tomatoes on top of my baked mac & cheese, so this is right up my alley!
ReplyDeleteBobby, great dish. Fire roasted tomatoes with mac and cheese, what an amazing idea!! I have quite the drama going on at my house where I have not one but three devoted carnivores. And feeding them anything that is meatless is a nightmare. This would be a hit I know.
ReplyDeleteThose dang carnivores....what are we going to do with them??
DeleteOH I would totally take a big bowl of this for lunch or dinner any day. Luckily I have my hubby on board with all my crazy meatless meals, no meatloaf bribing necessary.
ReplyDeleteLucky girl!!!
DeleteI never think of tomatoes as a casserole... I can't believe I've missed out!
ReplyDeleteIt is so good!! I hope you give it a try!
DeleteOh wow!Your dish sounds amazing with the tomatoes and greek yoghurt and all the cheesey goodness!I wouldn't miss the meat at all :)
ReplyDeleteLove this baked mac and cheese. It would be so perfect for summer when tomatoes are so flavorful too!
