I was so excited when I found out the theme for this week's Sunday Supper was "Picnic". 

Living in Washington picnic weather is fleeting, so squeezing in as much picnic time as possible is a huge goal for my family. Sunshine, good food, and family? That is a trifecta in my mind

We all love the typical picnic fare like Red Skin Potato Salad, and Spicy Coleslaw. But we also love to change it up with dishes like Deviled Potato Salad, Ultimate Potato Salad, Kitchen Sink Macaroni Salad, and, Spicy Tropical Slaw. However, for this week, I wanted to take another family favorite and switch it up a bit. 

These Are a Few of My Favorite Things 6/28/14

Happy weekend gang! How has the first week of summer been treating you? We have been having some fabulous weather here in Western Washington, and when that happens we try to stay outside in it as much as possible. That usually transfers into grilling, or as the case may be here, smoking. 

This is our first year trying our hand at smoking and it has been a lot of fun. There have been a lot of hits, and of course a few misses, but all in all I think we are getting the hang of it. I am already planning on smoking the turkey this Thanksgiving instead of doing the traditional roasted bird. I may be addicted my friends!

We have also been spending some time at the beach this year. Usually my kids come over, we pack a cooler with some drinks and food, and make a day of it. The water is pretty ding dang cold so you won't catch me more than about ankle deep. But my the kids are brave. Ahhh youth!

So I will leave the water play to them and stick to feeding everyone. It is a win/win for everybody!

Pomodoro Pro - The Pomodoro technique, named after a timer shaped like a pomodoro tomato, is a time-management system that helps you achieve maximum productivity by working in specific time intervals. Pomodoro Pro is recommended to help me time work sessions. Basically, according to Pomodoro enthusiasts, you should work for 45 minutes and then take a 15 minute break to get up, walk around, grab a glass of water, talk to a friend, or stretch. The important thing is to block out your work and computer screen for 15 minutes. When you go back, you will be refreshed and ready to get back to what you’re working on. Sometimes it's not possible, but I try to do this every day now and swear by it!

Garlic Scape Pesto

Garlic Scape Pesto - Scapes are a wonderful Farmer's Market treasure I discovered last year. With a mild flavor (think scallions that taste like garlic). They make this pesto a wonderful bright sauce that compliments many dishes.

A couple of weeks ago my kids and I headed over to Seattle and wandered around Pikes Place Market. We had such a good time. If you have never been there you have got to go the next time you are in Seattle. I have lived in Washington for about 7 years now and it has to be one of my favorite places to visit. It is the perfect spot for a foodie! I mean, check out this row of fresh produce to drool over, errr pick from.

There is all the largest selection of fresh fish and seafood that I have ever seen anywhere in my life!!

Anyway, I found garlic scapes there. I had heard of them, but had never seen them. I mean, I live in a tiny little town and our "Farmer's Market" is pretty much a joke, so I had no way of getting my hands on any. As soon as I saw them I knew I had to buy them.

Did I have any idea what to do with them? Heck no! But I figured I could come up with something after I got them home. It would be an adventure. Who doesn't like an adventure?

You should have seen Kevin's face when I took them out of the bag. You would think I had brought an alien home! But I explained to him that the were kind of a cross between garlic and asparagus. In fact the first way I used them was to roast them like asparagus in the oven. I tossed a bit of minced garlic on the baking sheet with them, salt and pepper, a generous drizzle of olive oil and in they went. They tasted wonderful! They really did taste like asparagus with a mild garlic flavor.

Next up, pesto. I read on so many pages that pesto was the way to go with these bad boys. Who was I to argue? I brought out the usual suspects for pesto and got to work. You could make this with just scapes, but I decided I wanted to add a bit of basil to the list. Plus it gave me a few more scapes to work with!

The result is a slightly sweet pesto with a nice garlic flavor. Not the bite of raw garlic, just a mellow flavor.

I am so excited and am not sure what I am going to use it on first. I have already eaten it plain right out of the jar!!

Garlic Scape Pesto


  • 1/4 cup pine nuts
  • 1/3 cup coarsely chopped garlic scapes
  • 1/2 cup basil leaves, packed
  • Juice and zest of 1/2 lemon
  • 1/4 cup grated Parmesan cheese
  • Kosher salt
  • Fresh cracked black pepper
  • 1/2 to 3/4 cup extra virgin olive oil, whatever gets the pesto to the right consistency


  1. In a small, dry pan set over very low heat, lightly toast the pine nuts, stirring or tossing occasionally until just beginning to brown, about 2-3 minutes. Keep an eye on them because they can burn easily.
  2. Combine the scapes, basil, pine nuts, lemon juice and zest, Parmesan cheese salt, and pepper in the bowl of a food processor fitted with the blade attachment. Pulse until fairly well combined. Pour in the olive oil slowly through the feed tube while the motor is running until the pesto releases from the sides and becomes smooth in consistency. Taste and adjust seasoning as needed.
  3. Store in an airtight container.
Yield: Approx 1 pint
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 05 mins.
Total time: 15 mins.

Tip - If you are not using the pesto within the next few days you can freeze it. I like to freeze mine in an ice cube tray so you can pop out a few cubes as you need them, but not have to defrost the entire batch.

I have made Open Faced Caprese Sandwiches, Chicken Caprese Pasta, Caprese Stuffed Chicken Breasts, and Caprese Meatball Subs. I am not sure that Kevin follows along with that idea though. I mean, you know Mr I Need Meat, but he does put up with a meatless meal once in a while to keep me happy.

Hey gang! I know I missed the last couple of Saturdays. This past week I was out of commission due to strep throat UGH!! I can't remember the last time I had strep throat. I have had allergy episodes, colds, and the flu over the last couple of years. But nothing compares to strep throat! Either that or I am just a huge baby, which could very well be true.

Now that I am on the mend I have been making up lost time scouring the interwebs for awesomeness. It gives me a good excuse for sitting on my butt in front of my laptop. "Umm honey, I am working". 

Ssshhh it sounds good!

So as soon as we get any amount of sun here in Western Washington it seems like just about everything we eat goes on the grill. Meats, veggies, fruit, you name it! We seriously become obsessed, which I love because it keeps my kitchen clean and cool. Plus it give Kevin a chance to step in and drive, and me a chance to step back and take a breather. I mean don't get me wrong, I love cooking. Duh right? But I have no problem handing off the baton once in a while. I am no control freak. Do you love potatoes?

We sure do! My whole family are potato freaks lovers. Although I don't think there has ever been anyone on the planet that loved potatoes as much as my father did. It was not unheard of for him to make an entire meal of just potatoes. Mashed, baked, he didn't care. Just give him a plate of buttered up spuds and he was a happy camper!
