Aaahhh my dear foodie friends. This weeks Sunday Supper is being hosted by the fabulous Connie from Foodie Army Wife, and is all about the party. Not like woohoooo let's partay. I am talking about that nice get together with friends or family, or friends AND family if you aren't afraid of all of them in the same room sharing stories about you. Hhhmmmmm that's food for thought. Ya ummmmmm, let's keep them separate for now shall we?

Anywho, as I was saying, Sunday Supper's theme this week is Tantalizing Trays. Oohhh just the sound of that makes me feel all fancy pants. Except currently I am wearing sweats so ya, not so much. 

Was that over share? I mean aren't sweat pants the uniform of the day for food bloggers? Or is that just me? I promise I will change before the party!

Of course it is not like I abstain from bacon the rest of the year, holy crap I don't even want to think about that! But there is something about an official holiday that brings out extra excitement to celebrate right? Heck, I am always game for a good party, and I don't even care if it is BYOB (bring your own bacon.....ya that was weak I know).

Chili Cheese Hoagies

Sloppy Joe, Meatball Sub, and Chili, all got together and created this quick and easy dinner dish!

You know it is funny. It is back to school time and, even though I don't have any kids at home, I am finding myself focusing more on quick and easy meals.Maybe it is because I have been trying to squeeze as much cooking and photography time in as I can before we start to lose the evening light (I love to take my photos outdoors for the best light). Maybe it is because Kevin gets up to get ready for work right around dinner time so I don't want to spend all of that time in the kitchen when I could be spending time with him. Or maybe, I am just tired of cooking and want to sit down as quickly as possible. I think it is all of the above really. So kids or no kids, I am looking for some simple weeknight meals just as much as you parents out there.

These Are a Few of My Favorite Things 8/23/14

I have been so excited this week. The weather is still pretty nice here in Western Washington, and my tomatoes are growing like crazy! Last year I did OK, but they didn't produce a lot of tomatoes and the size wasn't the greatest. This year? TONS of tomatoes, and I even have some green tomatoes that are big enough for me to finally try my hand at making fried green tomatoes. Last year I was lucky if they were much bigger than golf balls. This year they are more like tennis balls, so I think these will work well. Do you have any tried and true recipes for fried green tomatoes? I would sure love it if you would leave me a link in the comments!

My birthday celebration kind of slopped over into this week too. My son and his girlfriend took me out to dinner Wednesday night. Her birthday was on Tuesday and they only have Tuesdays and Wednesday off together, so it was our chance to all be together. They know I love Mexican food so they took me to a local Mexican restaurant. It isn't the best Mexican food on the planet, but the company more than made up for it. A couple of Coronas, a shot of tequila, and some tacos with them made for the perfect evening. I really enjoy it when I can spend time with my kids.

So the summer is winding down my friends. I am so torn. I cherish the summers here because they are so short, and so absolutely beautiful. But one of the things I did love about moving to the Pacific Northwest from San Diego was that there was plenty of soup weather. When I think of soups, stews, chowders, and chili I think of chilly overcast days. That is when a nice hot bowl just warms your soul and that makes me incredibly happy. So even though I hate seeing summer go, I do look forward to my soup pot and slow cooker making an appearance in my kitchen again. How about you? Are you looking forward to the coming fall?

I was so excited to be chosen to participate in this week’s Sunday Supper with Gallo Family Vineyards. Not just because I love their wine and love coming up with ways to enjoy it in or with my recipes, but because I was going to get the opportunity to try their newest wine, a fabulous Riesling.

I also received a bottle of their Sweet Red. The Sweet Red is a smooth wine with the flavor of dark red fruits. It pairs wonderfully with all of the smoked meats we have been cooking up lately.

I tend to be a it slow at times. I see things, or trends, that interest me but I drag my feet about trying them, for whatever reason. 

Maybe it is Mr Picky that I live with? Ya, let's use that excuse. 

Sometimes I just see something that makes me go "Oooh", but figure he will think it is strange. Why this even crosses my mind I have no idea. As I have said in the past, 99.9% of the time he likes what I make and he has never refused to eat something that I have put in front of him. But sometimes just getting that "look" irks the crap out of me and my evil twin wants to pop him right in the head......that evil twin, she can be crazy I tell ya!!

It is so exciting to be given a new blog every month, and then scouring through it to find just the right recipe to make. I love being able to find things that I might never think of making.

So I am still smiling from how much fun I had on my birthday. Going out to a nice dinner is always enjoyable, but no fancy restaurant, in my mind, can beat just hanging out with the family and having a good ol' BBQ. 

Now that the kids have all moved to their own places, getting the family all together in one place, for one meal, is damn near impossible! With several different schedules, I was seriously shocked that not only the kids, but their significant others, we able to be here.

But now it is back to work for me, so I had to drag myself to Pinterest and get down to the business of finding you some goodies to look at and drool over. Ya, it is a tough job but somebody has to do it right? So let's see what I found.

My Favorite App 
Headspace is another great mindfulness app that aims to make you happier and healthier mind through meditation. The app teaches you different breathing techniques and encourages you to begin by taking 10 minutes a day just for yourself. They advertise “meditation on the move” and allow you to download content in case you’re on a retreat in some remote corner of the world and don’t have access to the Internet. The app has animated videos and sound clips to cover you for 365 days.

The Hatch Chile Store sent me a care package of their roasted chiles, and I have been enjoying them as much as I possible. So many ideas and possibilities for these green beauties!

The first thing I made was Green Chile Pesto. Pesto is such a versatile sauce. You can use it in pasta, on meat, spread it on bread, or how about mixing it into your scrambled eggs? Yum right? Chiles and eggs go together like peanut butter and jelly in my book!

BLT Potato Salad #BaconMonth

I had absolutely no idea, when I made this dish, that it is National Bacon Month. Who knew there was an entire month to celebrate America's favorite porky treat? I was merely working with ingredients I had at home, and a little light bulb that was floating around in my head.

After I made my Deviled Egg Potato Salad, I immediately thought, "How awesome would this be as a BLT Potato Salad?". I mean, to me, if you add bacon and roasted tomatoes to anything you can't go wrong.

Well, maybe not in ice cream.

Hhmmmmm you know I might even be game to give that a shot!

Pico de Gallo for a Saving Summer #SundaySupper

I loved the whole idea of doing a Sunday Supper around saving the wonderful bounty of summer. For the last few years I have grown my own tomatoes, and love doing it. There is just something so satisfying about growing your own food, and then using it in a dish. I have grown peppers the last two years, but my tomatoes have always been my #1 favorite. We love tomatoes just about any way you can prepare them. Fresh, roasted, grilled, smoked, you name it and we will eat it!

Green Chile Pesto

Combine the rich, creamy goodness of pesto with the zip of roasted green chiles and you have something this side of fabulous!

Over the last few days I have suffered from the mother of all migraine headaches!

The kind that lays you flat out in bed with blurry vision, light sensitivity, and sensitivity to sound. WOW, I haven't had one like that is years!! So dinner has pretty much been grabbing something, anything that sounds decent. Maybe not even decent, just that it will shut your stomach up. I may or may not have, at sometime over the past 2 days, eaten tuna right out of the can, and cold beans. All I know if it settled in my stomach and I could go back to bed.

But even through my pain blurred brain, I kept thinking about this pesto that I had made. It was just sitting in the refrigerator calling my name. So at about 2 AM I got up and had a piece of crusty Italian bread smeared with it. Mmmmm that made me very happy.

Now I have made a LOT of pesto in my day folks. Classic Pesto, and Garlic Scape Pesto are here on the blog. I can't believe I haven't included recipes to any others! But I am here to say that this Green Chile Pesto really knocked my socks off! My mind has been spinning with all of the ways I can use it, and believe me there is a longggggggggg list!!

One of the great things about pesto is that it freezes so well. When I make it I always make a full batch and then separate it out into 1/4 cup servings. I use the little zip top snack bags. Just scoop 1/4 cup of the pesto into a bag, lay it down on a flat surface, and carefully spread the pesto into an even layer, squeezing out the air, and zipping up the bag as you work your way across the bag. Then just lay them flat in your freezer. Once they are frozen, you can stack them up. 

Then when you are ready to use them, just pop a bag onto your kitchen counter and let it soften up for a few minutes, and WALA pesto ready to go for your pasta, meat, or however you want to use it! It really is the perfect thing for a quick weeknight meal. Boil some pasta, toss it with some shredded chicken and pesto. Serve with crusty bread and a side salad. Yummm perfecto!!

    Green Chile Pesto

    Hatch Green Chile Pesto


    • 1 pound roasted Hatch Green Chiles (4 to 6 chiles)
    • 1/3 cup pistachios
    • 4 garlic cloves, roughly chopped
    • 1/3 cup packed fresh cilantro
    • 1/2 cup Queso Fresco (can substitute Feta)
    • 1 tablespoon fresh squeezed lemon juice
    • 1/2 cup olive oil (can add more if pesto seems to thick)
    • Kosher salt
    • Fresh cracked black pepper


    1. In a food processor, combine the chiles, pistachios, garlic, cilantro, Queso Fresco, and lemon juice. Pulse a few times to combine, then stream in the olive oil as the food processor runs until pesto comes together.
    2. Taste and add salt and pepper to taste. Pulse a few times to combine.
    Yield: Approx 2 cups
    Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 00 mins.
Total time: 10 mins.

So working with American Family Insurance and Weekday Supper this week, I was tasked to come up with a recipe that was healthy, easy on your budget, and super quick to put together. I mean, with families working around several activity schedules, or mismatched work schedules, a healthy and delicious meal can be something that stresses out even the strongest parent.
