BLT Mac and Cheese

This week has ended with a bang! Yesterday I found out that I am going to be a Grandmother for the first time!! I am over the moon happy and finding myself kicking into Grandma mode already. I have to stop myself from calling my son's fiance everyday to see how she is feeling, and if she has any food cravings that I can satisfy for her. I have already been scouring the internet for cute baby clothes, and picking through patterns for baby afghans to crotchet. Visions of cradling my baby boy's baby in my arms have me on the verge of tears multiple times a day.

I am really enjoying the start of fall. Yes, it has been raining just about everyday for the last week (I do live in Washington), but I have had a fire going in my fireplace, my favorite afghan and fleece jammies have been broken out, and the smell of pumpkin has been filling my kitchen. 

I have no idea why I only cook with pumpkin in the fall. I mean canned pumpkin is available year round right? But I guess it is just that pumpkin and fall go hand in hand. It would seem a little strange to have pumpkin pie in the middle of the summer. Although far be it from me to judge. Lord knows I let my freak flag fly quite high!

With Halloween almost here I find myself getting more and more excited. I am seriously a big kid and love everything about it. I love to decorate the whole house and watching scary movies. When the kids were living with us it was more about coming up with foods and costumes that fit the chosen theme. A couple of years ago I made Goblin (Deviled) Eggs for our Ghouls and Goblins themed night. Everyone loved them, and they disappeared like a prom queen in a slasher movie.

I was so excited to find out that Sunday Supper was going to be working with Gallo Family Vineyards for a Halloween themed event. The participating bloggers received a bottle of Merlot, as well as their Red Moscato. They are both fabulous wines, that the whole family enjoys, but my hand down fave is their Merlot. My favorite wine with one of our family’s favorite holidays? Yes my friends, that is a good time!

Since I moved to Washington I rarely go out to dinner. 

A) Because I am a food blogger and would rather make a dish VS pay for it (Although getting out of the kitchen once in a while is a must)

B) Because I live in a teeny tiny town with very few options, and most of them aren't that good. 

Oh, I guess I could drive a bit to get to a decent restaurant, but that means dealing with traffic and paying to go over the toll bridge (gggrrrr I hate that). I guess I have really become a bit of a homebody. But in my defense, I would rather cook a nice meal and enjoy it with my family in my home.

I do love fall so much, the cooler weather, turning leaves, fire in the fireplace. But this week I have been missing our outdoor summertime fun. We were BBQing almost every night, sitting on the back deck, or around the fire pit, and enjoying animal watching (I now have 5 deer and several big fat well fed squirrels). So when I heard that the weather was supposed to warm up, and dry out a tad, I immediately made plans to use the grill. I was already making Cold Sesame Noodles for my Secret Recipe Club post and grilled chicken with an Asian flair seemed the perfect choice to accompany that tasty side.

For this month's Secret Recipe Club I was assigned the blog Feast on the Cheap, written by the mother-daughter duo of Mary Anne and Mariel. Mary Anne has been a caterer for the last 20+ years, and firmly believes that healthy, home-made food doesn't have to take a ton of money or hours spent in the kitchen. Mariel has grown up with her mother's fabulous cooking, which has opened her up to experimenting with different flavors, textures, and cuisines.

But when I really sat down and thought about it, I was reminded of one of my kids' favorite meals. Breakfast for dinner. Whenever I made breakfast for dinner you would have sworn it was Christmas. They were more excited for breakfast at dinnertime than if I made it in the morning for them!

Aaahhh yes, I do love my slow cooker and it is sadly so neglected during the summertime. I have no idea why. You would think it would still be put to use to keep from heating up my kitchen. But it seems that our grill gets the work out and my poor slow cooker is banished to the bottom of the pantry until the cool fall weather hits.

Then of course there is pork and apples. Aaahhh a match made in heaven! But I wanted something different, original. Or strange as Kevin might say.

When I first saw the theme for this weeks Sunday Supper I thought, "Ewwww processed foods, I can't stand that stuff. I am soooo game for this!". 

Then I realized that deciding what is processed or unprocessed isn't as cut and dried as it seems. We all know that those convenient boxed "helper" meals are on the bad list, but did you know that is you get technical you could say that the milk you drink is processed too? I mean it is pasteurized to kill harmful bacteria, but that would fall under the "processed" category. How technical do you want to get? 

So to figure out where I needed to start from I used Andrew Wilder, of Eating Rules, Kitchen Test.

This last week I have been having a battle inside my head. More so than usual. You see, the thing is that I am soooo happy it is fall. The pumpkins, apples, hot chocolate, turning leaves, crisp cool evenings. Yes I love fall. But, there is a little tiny stubborn part of me that is holding on to summertime tooth and nail. I will be happily curled up on my sofa, with my favorite fleece blanket, and I hear her whining, "It is so cold in here....turn up the heat for heavens sake! What do you think you are an Eskimo now?". *sigh* Yes, she is very annoying!

I have been on a snack kick lately. Normally I am not a muncher. I can take or leave chips and crackers. When I do get a case of the crunchy munchies, as I call them, I grab a few pistachios. They seem to satisfy that need to crunch without making me feel guilty for eating them. Oh don't get me wrong, there are times when I could tear the bottom out of a bag of cool ranch Doritos in a heart beat, but for the most part I am content with my faithful pistachios.For the most part.
