Is your family like mine? Complete food
ball freaks addicts? Even my youngest has come
around to our way of thinking this year and has gotten on board with the
home-gating. She gets all fired up and, if we can’t be together for the game,
will text me to comment on just about every play! But most of the time you will
find us all gathered around the TV decked out in our finest team gear, with
beads, baubles, and even the occasional face painting goes on.
It wasn’t always like this. Oh I have
been a football fan since I was a teenager, but the rest of the family? Nope,
that took a bit of work. One of the things that I used to love to do to try and
get the kids excited about watching the game, was to make sure there were fun
foods with “kid appeal”. I mean, hot wings and bratwurst aren’t exactly going
to make the kids run to the table. Well, maybe some kids, but not most.
So fun food it was. Sometimes it would be
fun things like peanut butter and jelly rolled up in a slice of bread and
sliced to look like sushi, or other times it would be things they could do
themselves, like a make your own English muffin pizza bar. They pile all the
goodies on, you pop them under the broiler, and TADA their own personalized
pizza. Simple yes, but the kids loved it. And most importantly it made them
excited for game day. See, my mind is always working on getting to my goal,
which would be a fun family football day!
Goldfish crackers were, and still are, one of
their favorite snacks. If they didn’t have a little baggy of them in their
lunches everyday they were not happy campers. My daughter used to say that
their little smiles just made her happy, even if she was having a bad day. So
it only seemed natural to incorporate them into a fun, kid friendly dish.
My local Walmart made it super easy for me to find the main ingredient for my cheesy fun finger food, by having it right smack at the end of the chip and popcorn isle.
It was even on rollback for $5.98, so I
bought a box of the Flavor Blasted Xtra Cheddar too.
How many of your kids like chicken
tenders? Mine begged for them at least once, if not more, a week. They love
those super extra crispy fast food ones too. Ya, figure the odds that they were
getting those a couple times a week!
Nope, that wasn’t happening. But, it was what gave me the idea for these
crunchy, cheesy little strips of smile inducing yumminess. Take two of their favorite things, and combine them together. They loved them so much I had to make them for just about every game!
Now, they are all grown up, but they still love them. I have even made Cheesy Chicken Tender lover out of Kevin!! So go ahead and give them a try. You can even bring the kids in the kitchen to help make them. Just make sure you have plenty of Goldfish crackers on hand because, if they are anything like mine (Kevin included) they will be nibbling as away as they go

Cheesy Chicken Tenders

Ingredients
- 8 chicken tenders
- Kosher salt
- Fresh cracked black pepper
- 1 cup fat-free Greek yogurt
- 3 cups original flavor Goldfish crackers, crushed
Instructions
- Preheat oven to 350 degrees F and line a baking sheet with foil
- Place the Goldfish crackers in a zipper top bag and seal it. Using a rolling pin, roll over the top to crush them. Make sure to leave some texture (like panko bread crumbs)
- Salt and pepper the chicken tenders and then dip them in the yogurt, be sure to coat both side evenly, then place the chicken in the Goldfish cracker crumbs mixture pressing to make sure to coat both sides.
- Place tenders on a foil lined baking sheet. Bake at 350 for 25-30 minutes or to an internal temperature of 165 degrees F.
Total time: 40 mins.
