First off let me wish a Happy Father's Day to all of the Dads out there!
Second of all, can I tell you how excited I am to be working with the Certified Angus Beef® brand today? Kevin, my rabid carnivore, would love nothing more than to sit down to beef every single night of the week. And me, being the wonderful, loving girlfriend that I am, only wants to give him the best of whatever I make. That my dear foodie friends is why I am so excited.
You see, all beef is not the same. Oh don’t get me wrong, Angus beef is a good thing. But there is a difference. Certified Angus Beef® brand is the crème de la crème of the beef world. They have a strict set of standards, and have rounded up the best Angus ranchers to insure that fact. Which translates into epic yumminess for you and me.
So, color me all sorts of happy! Shout out to all of the beef lovers out there! Hollaaaaa!!
And, btw, if you aren’t on the beef lovers train, what are you waiting for? Hop on and let’s go! OK, now let's get down to business. How many of you are grilling today? Do you grill for Dad, or does he always man the grill?
Getting Kevin to relinquish control of the grill is like pulling teeth around here. It is his "domain" into which no one shall enter without his permission. I know, drama much? But lately he has been pretty good about letting me take the driver's seat, with minimal grumbling.
Plus, he reallllly hates it when I make a big deal for him. Father's Day, his birthday, he wants me to treat them like they are just another day. Ya, like that is gonna to happen! Have you met me? This girl lives to spoil (just ask my kids) the people I love.
However, I knew a quick way to get him to settle his ruffled feathers, and get him to back away from the grill. Make him a big ol' juicy hunk o' beef. Specifically a nice grilled ribeye steak, his favorite cut. But, he tends to be kind of a steak "purist", and by that I mean that he wants to be able to get beef to mouth with minimal fuss. So I had to come up with something to accent that luscious steak, without it being to fancy or foo foo, or any kind fussy. Going with his love of spice, I decided that a nice chimichurri made with roasted jalapenos would be the perfect addition. I could whip it up, and slap it on his plate without slowing the process from the grill to his face.
So how did he like it? Pardon my while I take a minute to pat myself on the back, and do the happy foodie dance.
OK, I am back, and let me tell you that he love, lovvvve, lovvvvvvvved it!! I mean like, licked his plate, and then proceeded to scoped out the uneaten steak on my plate with big ol' puppy dog eyes.
I of course gave it to him, because I am awesome like that.
Now, are you ready to make your beef lovers happy? Go grab yourself some Certified Angus Beef® brand beef, you can find your local retailer here, get that grill screamin' hot, and whip up this chimichurri.
A word of warning though, be prepared to fight the puppy dogs stare. You might be OK, but it is my kryptonite!

Grilled Ribeye Steaks with Roasted Jalapeno Chimichurri
Juicy ribeye steaks, grilled to perfection, with a smoky, spicy roasted jalapeno chimichurri.
Ingredients
- 2 1" to 1 1/2" Certified Angus Beef® brand ribeye steaks
- 2 jalapenos
- 2 cups fresh flat leaf pasley
- 2 cups fresh cilantro
- 1/2 red onion, rough chopped
- 3 cloves garlic, rough chopped
- 2 limes, juiced
- 3 tablespoons red wine vinegar
- 1/2 cup olive oil
- 1 teaspoon cumin
- Kosher salt
- Fresh cracked black pepper
Instructions
- Allow the steaks out to come to room temperature (about 30 minutes).
- Meanwhile, grill the jalapenos until blackened on all sides, about 5 minutes total. Place them in a small bowl covered with a plastic wrap to allow the skins to steam and loosen, about 15 minutes. Peel the chiles.
- In a small food processor or blender, combine the jalapenos, cilantro, parsley, red onion, garlic, lime juice, red wine, olive oil, and a pinch of salt and pepper. Pulse until the mixture is a coarse puree. Taste and adjust seasonings and blend again. Cover and set aside.
- Heat the grill to high. Brush steaks with with olive oil, salt and pepper. Place steaks on hot grill. Grill for 3 minutes, turn and grill for an additional 2 to 3 minutes, depending on the thickness of your steak. Use a meat thermometer to check the temperature.You want them at 125 F, for the perfect medium rare. Remove from grill and place on cutting board to rest for 10 minutes.
- Slice the steak against the grain and spoon chimichurri over the steak. Serve with the extra sauce on the side.
Total time: 46 mins.

ReplyDeleteHa ha! I love your post. :) First of all I do not have to fight to get to use the grill. (I wish!) however, the fact that he licked his plate clean reminded me of when I met the father of my children and how he licked his plate at the first meal I ever ate with his family. LOL I was mortified. ha ha. Great post and I wish we weren't on opposite sides of the country cause I'd love to eat one of your meals!
