Hey you guys, I am super excited about today's post! Why you ask? Well, I will tell you. Today we are talking about a few of my favorite things, summertime, the out of doors, and picnicking. 

Did you know that July is National Picnic Month? 

How awesome is that? A whole month dedicated to good food, and tons of fun!

This has been an amazing summer already here in Washington. On the average, we usually have about 24 days of "summer". I am not joking, that's it peeps. Not even a full month! 

Other than that, you will have to fight with the typical Pacific Northwest damp and drizzle. But this year? We have already had some gorgeous days of sunshine! 

And they are still forecasting more to come. Which means we can actually celebrate National Picnic Month the way you are supposed to, outside in the sunshine!

So that means there have been a lot more summertime activities going on. Usually we just hang out on the back deck and the BBQ. We love our backyard and I could sit at stare into the woods for hours, it is just so beautiful!

But we have pulled ourselves away from our little patch of paradise and have gone for walks, hit the farmer's market, and took a drive to visit Kevin's family on a gorgeous little piece of camping property they own. You wanna talk about heaven.

I swear could move in tomorrow!! We have also gone to a few BBQs with friends and family, and spent some time down at the beach. Like I said, this is an amazing summer!

Creamy Pesto Chicken Sandwiches

A delicious alternative to the traditional chicken salad and the perfect sandwich to pack for your next picnic.


  • 2 cups cooked chicken, shredded
  • 1/3 cup mayonnaise
  • 1/2 cup pesto (homemade or store bought)
  • 4 green onions, chopped
  • Kosher salt
  • Fresh cracked black pepper
  • 2 tomatoes, thinly sliced
  • 8 slices fresh mozzarella
  • Green leaf lettuce
  • 4 sandwich rolls (I used panino rolls)

Equipment Used


  1. In a large bowl, combine the shredded chicken, mayonnaise, pesto, onion, salt, and pepper.
  2. Cut sandwich rolls in half, place some arugala on the bottom half, sliced tomatoes, and mozzarella cheese, then top with 1/4 of the pesto chicken mixture. Place top bun on the sandwich.
Yield: 4 sandwiches
Prep Time: 00 hrs. 15 mins.
Cook time: 00 hrs. 00 mins.
Total time: 15 mins.

    1. Yes, it has been amazing Brianne. We couldn't ask for anything better! I am so glad you like the sandwich. Like you said, you can always sub Greek yogurt for the mayo. I sub Greek yogurt for sour cream in most of my recipes now. I love the stuff!!
