Happy Sunday everyone! Today I am bringing you my latest obsession. Well, I am kinda obessed with hummus period, but this particular one is at the top of my play list and my fridge hasn't been minus it for more than a day over the last month. Ya, I am that obssesed. Soooo when I found out Sunday Supper was throwing a virtual pool party this week I knew I had to bring this for everyone.

I sure wish we were having a real pool party. The temps have been in the 90's for quite some time now in Western Washington, and us Pacific Northwesters are not used to that at all! None of us have air conditioning, who needs it here? So when it gets this hot, I mean like OhhEmmGeee have we arrived in hell hot, we have no idea what to do with ourselves. 

We have taken to the living room, with a fan, and all of the blinds drawn. I feel like a mole. A big, hot, sweaty, mole! UGH!

To console myself, I have been consuming mass quantities of this hummus! It has become my lunch of choice. Some veggies, some hummus, maybe a few pita chips? Oh ya, that is hummus heaven my friends. 

I even have Kevin on the band wagon! Crazy stuff peeps, crazy stuff.

But I have branched out from my typical hummus habit, to using it on sandwiches in place of mayo. Helloooooooooooo it's so good! It takes that ho hum ham sammy to new heights. I love it!

Another way I have been devouring eating this in the place of guacamole. See, a while back, I suddenly developed an allergy to avocados. 

I know. 

It is sad.

However, my newest BFF has all but erased the thought of avocados from my mind. 

Until I see a photo on Pinterest. 

Then I shed a silent tear.

Butttttttttt all I have to do is grab my hummus out of the refrigerator and I am a happy happy girl again. 

I am tellin' ya gang. You must make this. And then slather it all over everything and anything. 

Except maybe your dog. 

I would stick to sandwiches and burgers if I was you.

Roasted Jalapeño Hummus (Keto Version Included)

This hummus recipe made with roasted jalapeño is creamy with that jalapeño kick, with a keto friendly version, this hummus makes a great dip for veggies, addition to tacos and tostadas, and the perfect spread to add some zip to your keto friendly sandwiches.

ingredients:


  • 3 large jalapeños
  • 3 cloves garlic
  • 1 (15-ounce) can chickpeas
  • 3 tablespoons tahini 
  • 2 limes, juiced
  • 1/2 teaspoon kosher salt
  • 1/4 cup of chopped fresh cilantro leaves
  • 1/4 cup olive oil
  • Chili powder

instructions


  1. Bring your oven rack to the top of your oven, and heat your broiler to high.
  2. Drizzle the jalapeños with a bit of olive oil and place them on a baking sheet under the broiler. Broil, turning as needed, until the skin has bubbled and charred. Remove the peppers and place them in a bowl. Cover the boil tight with cling wrap and allow the peppers to steam for 15 minutes, or until cool enough to handle.
  3. Peel the skin off the peppers (if you can't get it all that is OK). Remove the stem and seeds and place them in a food processor with the chickpeas, garlic, tahini, lime juice, cumin, salt, and cilantro. As you run the processor, drizzle the olive oil in from the top until the hummus reaches your desired consistency. Taste and add salt if needed. Add more oil if a thinner consistency is desired
  4. Spoon the hummus into a bowl and sprinkle with chili powder and cilantro leaves for presentation if desired.

NOTES:

For a keto version of this hummus use the same ingredients except to substitute 1 medium head of cauliflower, cut into florets and steamed for the chickpeas, and add another tablespoon of tahini. 

Puree until smooth in the food processor, making sure to scrape the sides occasionally. Taste along the way and add more garlic, tahini, and salt to taste. You can add a bit of water if you would like a thinner hummus.
