So I know that I haven't been around much lately, but with the move, and everything that goes along with it.....unpacking, finding room for everything, cleaning the old place, I have barely had enough time to sleep and eat, let alone do some actual work.
Plus of course, it has to rain every time we get a load in the truck to drive it over to the new place........UGH!! Oh we have been getting a little glimpse of lovely summery weather, just to have the sun play hide and go seek for a week. I know, I know, I live in the Pacific Northwest, so that is a big ol' DUH right? But dang it, it can get even the hardest core Washingtonian down once in awhile. But, for the last few days, the sun has been out, I planted some tomatoes and herbs, and we even had the kids and the G-baby over for a BBQ. Where we actually sat outside 

But, I have missed y'all. Like a lottttttt!
Does that sound weird?
Ha, like you don't already know I run a bit left of center most of the time.
But seriously. I love coming up with new yummy eats for you, and hearing how much you love them. It makes my little foodie heart go pitty pat 

So, with my new found energy, and drive, I wanted to get into the kitchen and whip up something cool, and healthy, to make me feel even better.
This smoothie my friend is IT!
OK, so let's address the elephant in the room shall we? I know many of you are thinking there is no way that beets belong in a smoothie. Butttt before you run screaming from your computer, let me give you a little 411 on the good stuff going on in this smoothie
Beets
- Drinking beet juice may help to lower blood pressure in a matter of hours.
- Need a boost to make it through your next workout? Those who drank beet juice prior to exercise were able to exercise for up to 16 percent longer
- Phytonutrients that give beets their deep crimson color can help to ward off cancer
- Beets are high in immune-boosting vitamin C, fiber, and essential minerals like potassium
- Traditionally, beets are valued for their support in detoxification and helping to purify your blood and your liver.
Blueberries
- The iron, phosphorous, calcium, magnesium, manganese, zinc and vitamin K in blueberries all contribute to building and maintaining bone structure and strength.
- Blueberries are naturally free of sodium and contain potassium, calcium, and magnesium, all of which have been found to decrease blood pressure naturally.
- One cup of blueberries contributes 3.6 grams of fiber, which helps lower blood glucose levels.
- The fiber in blueberries helps lower the total amount of cholesterol in the blood and decrease the risk of heart disease.
- Vitamin C, vitamin A, and various phytonutrients in blueberries function as powerful antioxidants that help protect you from cancer.
- Studies have also revealed that in addition to reducing the risk of cognitive damage, blueberries can also improve short-term memory loss and motor coordination
I could go on and on with the benefits of bananas, oranges, spinach, yogurt, etc. But I wanted to focus in on just how awesome the main ingredients of this smoothie are. Kevin has suuuuuper high blood pressure and I am making him drink these as much as possible.
Plus they really do taste good!
Yes, we are beet lovers, and if you even remotely like beets, I will guarantee that you will love these smoothies. There is a touch of that earthiness, with the sweetness of the blueberries. You can always taste, and adjust the sweetness by adding more agave, or honey. Or just omit the beets if you can't bring yourself to try if with them.

The other thing that I adore about this smoothie is that it uses Cascadian Farm Organic beets and blueberries, which are flash frozen. That my friends means they are frozen lightning fast after they are harvested. Which in turn means they taste like the delicious fruits and veggies they are. No funky freezer taste.
But y'all know that I love Cascadian Farm for many different reasons.
The first of course is because they are organic. The less crud we put into our bodies, and our children's bodies the better right? AMEN!

Blueberry and Beet Smoothie
Thick, smooth, and ultra creamy, this smoothie pairs the sweetness of blueberries with the earthiness of beets, for an out of this world healthy, and tasty, smoothie you will love!

ingredients:
- 1 cup orange juice
- 1 banana *See notes
- 1 cup Cascadian Farm Organic frozen blueberries
- 1/4 cup Cascadian Farm Organic frozen beets
- A good sized handful of baby spinach
- 1/4 cup plain Greek yogurt
- 1 to 2 tablespoons agave syrup or honey
- Crushed ice if needed.
instructions
- Combine all of the ingredients in a high power blender, and blend until smooth.
notes
1 - I break my bananas into quarters and freeze them to help thicken my smoothies

OH yes Erin I do hope you give them a try. These don't have that funky frozen taste that some frozen veggies can have (or the metalic taste of canned). I love the touch of earthiness they add to this smoothie!

ReplyDeleteMy Dad loved beets too. I ate them because of that, and all of the other kids thought I was weird LOL But they are sooooo good, especially in this smoothie :)

DeleteWe LOVE smoothies in our house, and I recently started getting into beet salads after hating beets most of my life :) I had no idea Cascadian Farm made frozen beets! We get their frozen fruit when our summer supply runs out. Can't wait to try this!
