So we meet again over some lemony, blueberry goodness. 

My addiction continues, and must be shared. Oh yes, it must!


I just can't help myself  once I finally got around to making lemon curd, and my blueberry bushes went crazy, I knew I had to combine them because, well, lemon and blueberry! The just go together so well!

Speaking of addictions, my Walking Dead addiction just continues to get worse and worse. Although I don't think it is a bad thing, I may be driving the other people that live here a bit nuts.

With the new season starting in just a couple of weeks, I just had to go back and watch every previous season again. Of course I have also been known to binge watch in the middle of the summer, just cuz. Even with Fear the Walking Dead (which I know a lot of die hard TWD fans don't like, but I watch because, well, zombies), I have to get my fix of Daryl, Glenn, Rick, Maggie, and the rest of the gang.

Do you watch The Walking Dead? 

Are you ask freaked out about the new season opener as I am? I mean whyyyyy, why do they have to kill someone off.

I know, I know, it is in the script right? That is what I always say to my kids.

Who do you think it is going to be? Don't even say Daryl because I will lose my shizz if that happens. 

A lot of people seem to think it will be Glenn, I thought maybe Abraham, mostly because I don't want to lose Glenn. But I don't know......

OK, OK, I will leave the zombie talk behind and get back to this glorious plate of OhhEmmGeeee goodness. 

I mean, I was super excited to make this, but had no clue how truly amazeballs it would be! Like seriously mind blowingly delicious! 

It was just Kevin and I noshing the first time I made this, so to keep us from gorging ourselves and eating every last bite, I took the leftovers to the neighbors. They were ecstatic since they were remodeling and had no kitchen at the moment.

Yay me 

I think I have new BFFs!

Lemon Blueberry Stuffed French Toast

Lemon Blueberry Stuffed French Toast is the perfect brunch dish that your whole family will love.
prep time: 10 MINScook time: 22 MINStotal time: 32 mins

ingredients:

For the French Toast
  • 4 eggs
  • 1 1/2 cups half-and-half
  • 1/2 teaspoon ground ginger 
  • 1 teaspoon vanilla extract 
  • 1 teaspoon sugar 
  • Kosher salt 
  • 8 thick slices of bread 
For the Filling
For the Topping

instructions

  1. Preheat the oven to 350 degrees F.
  2. Whisk eggs, half-and-half or milk, ground ginger, vanilla extract, sugar and a pinch of salt in a shallow baking dish.
  3. Heat 1 tablespoon butter in a nonstick skillet over medium heat.
  4. Spread 1/4 cup lemon curd on 4 slices of bread, top with several blueberries, then another bread slice. Press together; dip in the egg mixture and cook in the skillet until golden, 2 to 3 minutes per side, adding more butter as needed. Transfer to a baking sheet and bake 10 minutes.
  5. Top with powdered sugar and blueberry syrup.

    1. I agree this could be a dessert too in my book. I don't watch TV on the regular, I tend to binge watch so I will run a show over a couple of days to catch up while I work LOL I know, it is crazy.
