- 3/4 cup heavy cream
- 3/4 cup chicken bone broth
- 1 tbsp fresh marjoram chopped (can use 1 teaspoon dried)
- 1 tbsp fresh sage chopped (can use 1 teaspoon dried)
- 1 tbsp fresh thyme chopped (can use 1 teaspoon dried)
- 1/2 tsp paprika
- Pink salt
- Fresh cracked black pepper
- Fresh ground nutmeg
- 4 cups cooked turkey chopped
- 2 eggs lightly beaten
- 2 cups ground pork rinds
- Avocado Oil for frying
Instructions
- Place the onion, celery, and carrots in a food processor and pulse until minced.
- In a large pot, melt butter. Add the minced veggies and saute until softened, about 5 minutes. Whisk in 3/4 cups keto flour and add the heavy cream and chicken bone broth. Cook and stir until mixture thickens and bubbles, and continue cooking for 1 minute more.
- Add parsley, sage, thyme, paprika, salt, pepper, and nutmeg and combine well.
- Allow to cool then place in refrigerator for at least one hour (can refrigerate overnight).
- Place the cooked turkey into the food processor and pulse until ground.
- In a large mixing bowl, combine the sauce with the ground turkey. Place back into the fridge to chill thoroughly.
- Create a work station with a shallow bowl of the remaining keto flour, the beaten egg, and a shallow bowl with the ground pork rinds.
- With wet hands, shape 1/4 cup of the mixture into patties, cones, or balls, then roll in flour, egg wash, and ground pork rinds.
- Heat 1 inch of avocado oil in a skillet over medium heat. Working in batches, cook croquettes in a single layer until golden brown, about 2 minutes per side. Transfer to paper towels to drain.
- Serve immediately with cranberry sauce and/or turkey gravy.
