When I found out that Stirrings was having a contest to come up with a cocktail using their mixers and rimmers my mind, almost immediately, went to mojitos.
I am a big time lover of that classic cocktail, but also love to change it up a bit like I did with my Sparkling Raspberry Lime Mojitos and Blueberry Mojitos.
With New Years still fresh in my mind, I decided I wanted something bubbly. I love prosseco and choose it over regular champagne for any occasion that calls for bubbles. So I knew it would be the Simple Mojito mixer + prosseco, but wasn't sure what else I wanted to include.
So I figured I would take a peek in the liquor cabinet and see what we had. There, waaaaay in the back, was my bottle of blackberry liqueur that I used a few years back in my Vampire Kiss Martini. I figured that Kevin would really like that since he is a huge blackberry lover. You know me, always aiming to please right?
*koff* *koff* yup I am a people pleaser

I didn't use very much, just enough to give it a slight hint of blackberry, because the mixer is so good.
And speaking of how good the mixer is, why did it take me so long to find this wonderfulness? Instead of making simple syrup, muddling limes and mint, blah blah blah, I could have been opening a bottle and getting right down to it!
Well, now I know, and so do you!
Plus Stirrings mixers are all natural, so that is another huge plus for me.
OK, so fast forward to the testing of this delicious cocktail. Jessi was helping me (like she wouldn't volunteer to be a taste tester the day I am making cocktails?), and when we got to this version we both knew it was perfect.
We did allow Kevin to have a couple sips here and there, and he agreed this one was the shizz 

So now we have a new fave, for now, until I work my way through all of the mixers to make something else yummy!

Blackberry Mojito Sparklers
Blackberries, lime, and mint all play together in this light, bright, and bubbly cocktail.
Ingredients
- 8 fresh mint leaves
- 8 fresh blackberries
- Ice
- 1 ounce blackberry liqueur
- 8 ounces Stirrings Simple Mojito Cocktail Mix
- Prosseco, chilled
Equipment Used
Instructions
- Muddle the mint leaves and blackberries in a cocktail shaker. Fill the shaker with ice, then add the blackberry liqueur and mojito mix. Shake well.
- Strain into glasses, top with prosseco. Garnish with fresh blackberries and a sprig of mint.
Prep Time: 00 hrs. 05 mins.
Total time: 5 mins.
