Did you know that March is National Frozen Food Month? Yup, it is, so I really wanted to come up with something tasty, easy to make, and kid/family friendly for y'all.
As Mini Me and I cruised the frozen food aisle our minds started working, and ideas started to fly. We were yelling them back and forth to each other. The other people shopping must have thought we were crazy, or playing some bizarre foodie version of Marco Polo that they had never heard of.
At one point I was in the breakfast food area, and she was in the meat/entree area, and we both yelled out Chicken and Waffles.
No joke, we do this a lot, it kinda creeps people out.
So we both decided that chicken and waffles was the direction to take this dish, but plain ol' chicken and waffles? Yawn, booooring.
Nope, we needed to make this something different.
Since I am the Queen of making pretty much anything into a mac and cheese, or casserole of some kind, I knew that a casserole was what was getting ready to go down.
I have to admit that I had been tossing this idea around in my head for quite some time. But for some reason I never thought to utilize frozen food. I guess part of me felt like using frozen food would be "cheating", but y'all don't want recipes that have a kabillion ingredients and steps, and take forever to make.
No, you want delicious food, that is easy to make.
I also remembered that, when I first started my journey to eating better, I had been told by a nutritionist to stick to the outer edges of the grocery store when I was shopping.
Why?
Well, what is on the outer edges?
Produce
Meat
refrigerated foods
frozen foods
And before you say that frozen food isn't the way to go, which was kinda my reaction at first too, let me tell you a few great things about the things you can find in the freezer.
Real food, just frozen (Duh right?) but what I mean is that it is food that is preserved at the peak of freshness.
You can find portions and packaging that don’t leave anything to waste. I really hate wasting food. Just ask my family. They aren't huge on leftovers, but they know Mom flips out when they end up in the trash.
I always have frozen fruit and veggies on hand, as well as a few single serving meals for the Mr or Mini Me on the nights that I don't cook, or for lunch if I haven't packed anything.
Actually it was a bit difficult to get this casserole made. Not that the recipe or ingredients make it difficult. No, it was difficult because Mini Me kept trying to eat the chicken and waffles before I could get them into the casserole!!
I would say kid - but she is almost 25.
She still wants to lick the beaters, or the bowl, or the spoon, and is always in the background ready to pounce and grab some of whatever I am making.
I can't complain though. I am just happy she enjoys what I make and, if I cook, she gets to do the dishes!
So, here we are, gazing at the deliciousness that is a Chicken and Waffles Casserole.
I of course used Eggo waffles. Why? Because they are convenient and delicious with no artificial colors or flavors. And because they are a brand that I have enjoyed for years, my kids grew up eating them. "Leggo my Eggo" was heard from my kitchen on many a morning!
Everyone loved this casserole, including the G-baby. So it is definitely family/kid friendly.
Now, go hit that frozen food aisle and check out all of the awesome things you can find there!! Oh, don't forget to pick up the popcorn chicken and waffles so you can whip this up for your family too
Prep Time: 00 hrs. 35 mins.

Chicken and Waffles Casserole
Say goodbye to boring breakfast with this easy, kid friendly, chicken and waffles casserole.
Ingredients
- 1 (24-ounce bag) popcorn chicken, cooked according to package directions
- 8 Eggo homestyle waffles, toasted and cut into cubes
- 6 large eggs, beaten
- 3/4 cup half and half
- 1/4 cup maple syrup
- 2 teaspoons sriracha sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon dry mustard
- Kosher salt
- Fresh cracked pepper
Instructions
- Preheat over to 350 degrees F.
- Grease a 9 x 13 casserole dish (or, for a deep dish type casserole, use 7 x 11 casserole dish).
- Layer half of the cubed waffles in the bottom of the dish, then top with half of the popcorn chicken. Repeat with the remaining waffles and chicken.
- In a medium bowl whisk together the eggs, half and half, maple syrup, sriracha sauce, salt, and pepper, until combined. Pour the egg mixture evenly over the chicken and waffles.
- Allow the casserole to sit for 30 minutes to allow the waffles to soak up the egg mixture.
- Bake for 25 to 35 minutes, or until the custard is set. If the top begins to brown too much, cover it with tin foil.
- Allow to cool 10 minutes before serving.
- Serve with maple syrup.
Prep Time: 00 hrs. 35 mins.
Total time: 60 mins.

DeleteI was looking for a way to use up some leftover frozen waffles that I had as well as some fried chicken. I follow a Paleo diet, but was able to easily tweak this to suit my needs. It turned out so delicious! It was a great way to use leftovers as well so cheap and easy to put together!
