Mini Taco Pizzas - Switch up your regular recipes for Taco Tuesday with these easy to make mini taco pizzas
So the move is now getting so close, and my nerves are getting SO shot!
Even though I have moved 14, or more times (my ex was military), the closer the move gets my cool is getting a little luke warm. I am trying to be the steady one since Kevin hasn't really moved a whole house load before, so I keep telling myself "We got this".
But holy crap I am having a hard time keeping it all together!
One of the main issues is that we ended up with squatters on the property. It sat vacant for a few months and, long story short, a couple moved in.
Now, you would think that a situation like this would be easily rectified right? Call the cops, have them arrested for trespassing, and get them out.
NOPE!
Not in Washington.
Here, just like in California and a few other states, once someone has moved onto your property you have to treat them like you would a renter. They are afforded all of the rights that a legal renter is entitled to.
You have to serve them with an eviction notice, and they can battle it out with you if they want. It can take up to 90 days or more to get them off off your poperty!
Crazy right?
Luckily, I guess you can call it that, we have been able to talk to them and explained that we are moving in on the 13th so they need to get out.
However, we asked them to be out by the 7th and as of last night they were still on the property.
So, as of now, half of my house it packed up, utilities are turned on in our name, and we still aren't sure if we are moving this Thursday or not.
ARG!! Blood pressure rising!
So, how do I combat stress?
I make myself something yummy to eat of course.
And by yummy, I mean Mexican.
Mexican food/flavors are some of my favorite when it comes to comfort. Maybe it is because I grew up in Southern CA, Maybe it is because my babysitter, when I was little, was from Mexico and made the BEST food ever. I really don't know. All I know is that when I am stressed burritos, tacos, and tostadas scream my name.
On this occasion though, I decided to do a mash-up with one of my other favorite comfort foods, pizza.
Pizza reminds me of my Dad. I swear that man could have eaten pepperoni pizza every day and be happy, and remembering my Dad makes me happy, so pizza always comforts me.
I also found this amazing pita bread at Costco. It is nice and soft, and pliable. Not like the pita that I have gotten at the regular grocery store. I used it for my Gyro Meatball Sandwiches, so I was looking for ways to use my leftover bread.
This was perfect!!
After I downed one of the babies I was feeling much better!

Mini Taco Pizzas
Do you want Mexican food? Pizza? Why chose between your favorites? Mash them up into this quick and easy plateful of deliciousness!
prep time: 10 MINScook time: 10 MINStotal time: 20 mins
INGREDIENTS:
- 4 pocketless pitas
- 1 pound Certified Angus Beef® brand ground beef
- 1 tablespoon chili powder (regular, hot, or chipotle)
- 2 teaspoons cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon coriander
- 1 teaspoon Mexican oregano
- Kosher salt
- Fresh cracked black pepper
- 1 can refried beans
- Salsa (homemade or store-bought)
- 1 cup shredded Mexican blend cheese
- Shredded lettuce
- Diced tomato
- Chopped green onion
- Cilantro
- Greek yogurt (or sour cream)
- Hot sauce (recommend Cholula)
INSTRUCTIONS
- Preheat oven to 425 degrees F. Place pitas directly onto oven rack and heat for 5 minutes or until lightly browned. Remove from the oven and place on a baking sheet.
- Meanwhile, in a large skillet over medium-high heat, cook the ground beef until cooked through and no pink remains. Drain fat if needed, then add the chili powder, cumin, garlic powder, onion powder, coriander, oregano, salt, and pepper, and stir to combine. Remove from the heat.
- Prepare the taco pita pizzas by spreading 1/4th of the refried beans on each pita. Add salsa, the taco meat, and 1/4 cup cheese. Place the pizzas on a baking sheet.
- Place the baking sheet in the oven and bake for 5 minutes, or until the cheese has melted
- Top the pizzas with shredded lettuce, diced tomato, green onion, cilantro, Greek yogurt (or sour cream), and hot sauce

ReplyDeletePretty clever! In Mexico, we have something called "sopes" which is similar to this except the base is made out of corn-dough (masa), but it looks almost the same and the ingredients are pretty much the same.
ReplyDeleteYes :) I saw sopes when I was at the butcher shop the other day. They are where I find most of my Mexican food products. It is hard to find anything here in Washington! I will have to give them a try!

That sucks about the squatters on the premises. They should not get to use up your utilities that you are paying with your own money. I hope it all works out for you. But now I want some of those mexican pizzas too.
