I don't know about where you are, but here in Western Washington, summer is finally in full swing. We have had 70 to 80 degree days with no end in sight. It is awesome!
The only thing that is a bit of a pain is that we don't have any screens in our new place so we have had to run the AC to keep from melting in the house.
I know a lot of you are probably saying "70 to 80 degrees and you are using an AC?" but A - we have a flat roof, and tons of windows for the sun to shine in and heat the place up, and B - I am a BIG baby. How I ever lived in San Diego without dying from the heat I have zero clue!
Maybe I really have acclimated to this weather over the last 11 years, maybe it is my age and the fact that hot weather + hot flashes = total misery.
Whatever the reason, I am currently unapologetically living for my AC.
Sunday is usually my meal planning/meal prepping day. I am setting up my menu for the week, and prepping lunches for my daughter and Kevin.
But, in this heat, the last thing I want to do it cook in my kitchen for any length of time. Most of our meals are being cooked on the grill, veggies included.
Oh I might toss together a potato or pasta salad, but for the most part, the grill is my best friend.
So, I decided that lunches this week needed to be quick, and easy, with minimal cooking needed. These Chicken Caesar Salad Wraps fit that bill perfectly. Just a few minutes of cooking for the chicken breasts, and you are on your way to lunches for 4 days!
These wraps really satisfied both Kevin and Mini Me.
The chicken made Mr. "If there isn't meat it's not a meal" happy, and Mini Me lurvssss Caesar salad so you know she was over the moon for a handheld version.
The only thing the Mr said?
"If you didn't want to cook in the house, why didn't you have me grill the chicken outside?"
Damn!
I hate it when he is smarter than me!!
Yield: 4 wraps
Chicken Caesar Salad Wraps
prep time: 5 MINScook time: 16 MINStotal time: 21 mins
INGREDIENTS:
- 2 boneless skinless chicken breasts
- Kosher salt
- Fresh cracked black pepper
- Olive oil
- 1 large head of romaine lettuce
- 1/2 cup Parmesan cheese
- 1/2 to 1 cup Caesar dressing ( recommend Cardini's )
- 1 cup Caesar salad croutons
- 4 large flour tortillas ( recommend Mission Super Soft Flour Tortillas )
INSTRUCTIONS
- Preheat the oven to 350 degrees F.
- Salt and pepper the chicken breasts.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Place the chicken breasts in the skillet and cook for 3 minutes per side. Then place the skillet in the oven for 10 minutes, or until the internal temperature of the chicken breasts reach 165. Remove the skillet from the oven and place the chicken breasts on a cutting board.
- Meanwhile, chop the lettuce into 1-inch pieces and place it, along with the Parmesan cheese, into a large bowl.
- Chop the chicken breasts into bite-sized pieces, and add it to the lettuce and cheese.
- Pour 1/2 cup of the salad dressing over the salad and toss to combine. Add the croutons and toss again. Add more dressing if wanted.
- Spoon 1/4 of the Caesar salad into a flour tortilla. Fold in the sides, and roll the tortilla up tucking the top of the tortilla over the salad and rolling tight.
- Wrap each Chicken Caesar Salad Wrap in cling wrap and refrigerate.

I LOOOOOVE chicken caesar salad wraps! I used to eat them all the time. But lately I've had some that don't toss the salad before adding to the wrap and they taste too dry. So I was pleasantly surprised to see that you do it the right way haha. I gotta start making these for myself at home, now that I have a recipe!

This is a perfect Caesar Wrap recipe. Love the simplicity of cooking the chicken part way first and then letting the oven get it nice and tender and juicy. I seasoned the chicken with more than just salt and pepper which made it extra yummy. Thanks for sharing the love! =)
