Well, I know y'all have listened to me complain talk about the hot weather that we have been having, and I know that "hot" can be a subjective term, but the forecast was just changed from 90 to 106!
OK, that is HOT, I don't care where you are!!
We have cooler weather coming, high 80's, and that is going to feel like a cold front is coming through!
Us Washingtonians just don't deal with hot weather well.at.all!
I gotta give Kevin some credit because, with our recent move, the grill is on the back deck with zero shade anywhere. He has been standing out in this weather grilling and smoking!
Crazy man.....certifiable!!

My happy butt has been inside, by the air conditioner, with a fan, and a cold drink!

Now, I haven't been completely unproductive.
I made Kevin some Blueberry BBQ Sauce sauce to satisfy his barbeque loving taste buds, we have a bowl of Mediterranian Cauliflower Salad in the fridge, and (since I am kinda diggin' the whole Mediterranian dealio) I made this Greek Chicken Salad.
Am I allowed to say "HOLY YUM BATMAN" about my own recipe? Cuz ummm HOLLAAA this may just be my new fave chicken salad!
I love my Lemon Herb Chicken Salad, Loaded Chicken Salad, and especially love my Buffalo Chopped Chicken Salad!
But this chicken salad, it light, and bright, and great in a lettuce wrap, on a low carb bun, or just out of the bowl.
Kevin even took it for lunch two days in a row!!
WOW right?
I know!!
Well, Kevin and I just had a little argument discussion about how all these veggies don't belong in a chicken salad.
I said yes and he emphatically said no, possibly using some colorful language to make his point heard! #pottymouth
Bring forward this Greek Chicken Salad.
That Mr. "veggies don't belong in a chicken salad" ate for two days in a row.
It is the BOMB, he thought it was amazing, and my record of being right stands.

Greek Chicken Salad

With fresh cucumber, tomato, and onion, this easy to make, tasty chicken salad is perfect for your low carb lifestyle!
Ingredients:
For the chicken salad
- 1 pound cooked chicken breast, shredded or cubed
- 1 cucumber, peeled, seeded, and diced
- 2 Roma tomatoes, seeded and diced
- 1/2 small red onion, diced
- 3 tablespoons fresh Italian parsley, finely chopped
- 1 tablespoon fresh dill, chopped
- 1 lemon, juiced
- 3/4 cup zero carb mayo
- 1/2 cup feta cheese crumbles
- Kosher salt
- Fresh cracked black pepper
For serving
- Romaine lettuce leaves
- Low carb buns
Instructions:
- In a large bowl, combine the first 10 ingredients. Taste and add salt and pepper as needed.
- Serve chicken salad in lettuce wraps or on low carb buns.
