These Cheesecake Mummy Cookies are easy to make and sure to bring Halloween fun to the whole family!

Even at my age, Halloween is one of my favorite holidays. I have so many good memories from my childhood.
Homemade costumes, trick or treating, spooky stories, and the treats......oh, of course, the treats!
My Mom always went with store bought goodies.
We bought the refrigerated cookie dough. Then I got to decorate the cookies with colored frosting and sprinkles.
I think some of those cookies probably weighed a pound after I got done with all of my decorating!

I was the same way with my kids, not being very chefy in those days, store-bought sweets were what we would have around the house.
We focused more in on making the house as scary as possible, then scaring the trick or treaters when they came to the house.

I remember one year, the kids and I had a fire in the fire pit, and spooky music and noises playing in the background.
My son was wearing a jumpsuit, and one of those creepy clown masks, which is kinda funny because he hates clowns, and was sitting in a chair.
The kids would come up to get their candy, thinking he was a stuffed dummy, and he would jump up. There were a few times he scared me, and I knew he was there!!

This year the G-baby is 3 1/2 years old (can you believe it??)!
I want to get her into the holiday treat game too so I will have her in the kitchen, helping me.

But I also wanted to make a few fun treats for the older kids,
and by older kids I mostly mean ME!

I did some poking around Pinterest for ideas, and 6 hours later.......
Is it just me that gets totally sidetracked on Pinterest.
I swear, my ADD kicks in and I am clicking on one thing, then another, ooohhh look at that, WOW I gotta make that.......*sigh*
BUT I did finally stumble across these cute little mummy cookies. I decided to use them as a jumping off point, then add my own little twist.

I huge ol' puffy heart cheesecake.
It is one of my favorite desserts. So I had to incorporate that into my treat.

Why not make a cheesecake/pie/cookie? Sounded good to me, and the other big kids around here.
I decided to take it easy on myself, and you, by using store-bought pie dough (you are welcome to make homemade though), and the cheesecake center is super simple. Just cream cheese, egg, vanilla, and powdered sugar.
Then just brush the outside with a bit of egg white, and sprinkle on some granulated sugar. Easy peasy!!
Cute, fun, and ohhhh so delicious!
Yield: 18 cookies

Cheesecake Mummy Cookies
These little Cheesecake Mummies try to be scary, but they are just too cute.
prep time: 30 MINScook time: 15 MINStotal time: 45 mins
INGREDIENTS:
- 1 package Refrigerated Pie Crust (2 crusts)
- 4 oz cream cheese -slightly softened
- 1/4 cup powdered sugar
- 1 egg, yolk and whites separated
- 1/2 teaspoon vanilla extract
- Red food dye
- Black food dye
- Granulated sugar
- Candy eyes
INSTRUCTIONS
- To make the cheesecake filling in a bowl stir together cream cheese, powdered sugar, egg yolk, and vanilla extract. Blend well, then add red food dye, and a drop or two of black, to get your desired color. Cover bowl and chill until ready to assemble the mummies.
- Preheat oven to 375 F and line large baking sheet with a silicone baking mat, or parchment paper, set aside.
- To assemble the mummies roll out one of the rounds of pie dough onto a floured surface to about 13 x 11-inch rectangle. Cut the edges down to make a 9x6 inch square. Cut the square into 2x3 inch rectangles (9 rectangles), then cut the leftover pieces into strips to use as the mummy "wrapping". Do the same with the remaining pie dough.
- Arrange the rectangles, spaced apart on prepared baking sheet and spread cheesecake filling onto each rectangle, leaving an edge on all sides uncovered.
- Using your finger, wet the uncovered edges with a bit of water. Top with strips to create "mummies", then seal edges with your fingertips, and trim the excess. Brush the finished mummies with lightly beaten egg whites and sprinkle with granulated sugar.
- Bake until golden brown about 15 minutes.
- Let cool a few minutes, then push the candy eyes into the cheesecake filling.

OK those are adorable! That would be a fun little treat for the kids to eat right before they go trick-or-treating. I think I might surprise them with this treat.
