Hey you guyssssssssssssssssssssss (I always think of the Goonies when I say that.....please tell me you know that movie!!)
Guess what?
My guy is still in the NASCAR chase, going for his second championship 

Did I just lose you there? Does anyone else watch NASCAR?
I know y'all know that I am a HUGE football fan, woot woot GO HAWKS






But I love my NASCAR just as much! I pretty much grew up, at least through my teenage years, at race tracks. Dirt track, asphalt, I love it all. The roar of the engines sends chills down my spine every time. There is nothing quite like being right there in the middle of the action.
Unfortunately, I have only been able to go to a handful of NASCAR races
So I have to settle for screaming at watching the races on TV. And just like with football games, we always have a spread of nibbles and munchies on the table so we can feed our faces and watch the race at the same time.

Multitasking at it's finest here folks!
Sometimes I get a little foo foo, as Kevin would say, and make things like Mini Beef Wellingtons, BLT Crostinis, Roasted Jalapeno Hummus, Crab Puppies, Buffalo Chicken Wontons, Smoked Salmon Dip, Mini Reuben Pigs in a Blanket, and Copycat PF Chang's Chicken Lettuce Wraps.
But most of the time I want to just whip something easy up so I can sit down and feed my face as quickly as possible. That is when I turn to recipes like Chipotle Black Bean Dip, Salsa Fresca (Restaurant Style Salsa), Bavarian Party Dip, Chili con Queso, Hot Reuben Dip, Ranch Veggie Pizza, Mini Baked Ham and Cheese Sliders, or this Chicken "Crack" Dip.
The reason this is called "crack" dip is because you will not be able to stop eating it! I am not joking here peeps, this stuff is crazy!!
The first time I made it I was just making some for Kevin and me, so I made a small batch thinking that would last us through an entire game.
HA!
Not even close!!
I think it was gone in something like 0.2 seconds flat!
Then Kevin looks at me.
You made more right?
Oops!!
Needless to say, I this big batch every time I make it now.
This recipe should now feed a small crowd but, if you are not hosting the whole team, feel free to cut it in half.

Buffalo Chicken Dip AKA Chicken Crack
Buffalo Chicken Dip AKA Chicken Crack takes everything you love about Buffalo wings and packs it into a deliciously cheesy dip that you just can't stop eating!
prep time: 10 MINScook time: 20 MINStotal time: 30 mins
ingredients:
- 2 8-ounce blocks of cream cheese, room temperature
- 1 cup ranch dressing (I used Hidden Valley Ranch)
- 1 cup hot wing sauce (I used Frank's Red Hot)
- 2 cups shredded cheddar jack cheese
- 4 cups shredded chicken (Easy slow cooker shredded chicken)
- Fresh flat-leaf parsley leaves, chopped for garnish
For Serving
- Celery sticks
- Carrot sticks
- Chips
- Crackers
instructions
- Preheat the oven to 350 degrees F.
- In a large bowl, combine the cream cheese, ranch dressing, wing sauce, 1 1/2 cups shredded cheese, and the chicken breast.
- Spoon into a cast iron skillet or baking dish, then top with the remaining 1/2 cup cheese.
- Bake for 20, or until the cheese is bubbly. Top with chopped parsley.
- Serve with carrots and celery sticks, chips or crackers

ReplyDeleteI used to watch NASCAR religiously with my parents and sister. I don't watch it anymore as it's really too much drama. I did meet Tony Stewart's dad once when Tony Stewart and Matt Kenseth visited my area for a special meet and greet and race event, so that was pretty cool!

ReplyDeleteWould you believe me if I told you I can hear the Nascar races from my back yard when they are going on? Also when they seem to practice all-the-time. We live right near the Watkins Glen track. Anyways...your dip looks so good. We have a Buffalo chicken dip but yours is different so I already shared your recipe with my Mom.
