Things here have been downright nuts!
Trying to have a family get together is damn near impossible anymore. We have kids here in town, one in Seattle, and Mini-Me lives in Oregon now. So choreographing everyone in one place?
Ya, have fun with that!
Now, I love the holidays as much, if not more, than the next guy. I love the lights, the sounds, the smells, everything. But planning multiple celebrations, with all of the trappings, can begin to dull that holiday sparkle.
Being a food blogger, you know everyone expects well....they expect fabulous food and I love to supply that as much as I can. But sometimes I just need a little assistance. A shortcut, a hack, whatever you want to call it, Momma needs some help ASAP!
My family's favorite lasagna comes from the frozen food aisle, many of our Mexican faves are there too. I love the fact that you can find just about any cuisine you can think of at any time or on any day.
One of our all-time favorite cuisines is Asian and we all know that some of our favorite restaurant dishes can be just a tad labor intensive if you try to make them at home. Then I found InnovAsian and all of the yummy products they have to offer! Everything from Sweet and Sour Chicken (Kevin's fave) to Beef and Broccoli, Shrimp Fried Rice, and (my favorite) this General Tso's Chicken. I big ol' puffy heart it and order it every time we go out.
Ask my kids about Mom stressing out. I drive them crazy. Mom, everything doesn't have to be perfect!
Haha, that statement just did not compute!
But, I am my worst critic anyway so the kids have finally gotten it into my head that I don't have to slave away in the kitchen for hours on end for it to be a wonderful celebration. And thank goodness they did. This specific evening ended up being so much fun!
We busted out board games, had Christmas music playing, enjoyed some eggnog, and some deeelish nibbles. These General Tso's Chicken Lettuce Wraps being the hands-down winner of favorite new appetizer.
Nobody had a clue that they were not made from scratch!
I will take that as a HUGE holiday win!

Yield: 8 wraps

General Tso's Chicken Lettuce Wraps
Quick and easy to make, these lettuce wraps take appetizers to the next level by combining that classic Chinese entree with a favorite appetizer. The result is nothing short of delicious!
prep time: 5 MINScook time: 15 MINStotal time: 20 mins
ingredients:
1 (18-ounce) box of InnovAsian Cuisine General Tso's Chicken
1 tablespoon vegetable oil
1 cup matchstick or shredded carrot ( I used the pre-cut carrots available in the produce area)* See Cook's Notes
1 (8-ounce) can sliced water chestnuts, chopped
1 tablespoon low sodium soy sauce
1 head of butter lettuce, 8 leaves removed and washed
4 green onions, chopped
instructions
Cook the chicken per box instructions.
Meanwhile, heat the vegetable oil in a skillet, over medium-high heat. Add the carrot, water chestnuts, and soy sauce. Cook, stirring occasionally until the carrot and water chestnuts begin to soften, about 5 minutes.
Place a tablespoon of the carrot mixture into the center of a lettuce "cup".
Top with chicken.
Sprinkle each wrap with toasted sesame seeds and chopped green onion.
Cook's Notes
If using shredded carrot VS matchstick, add carrots to the water chestnuts and soy sauce for the last minute of cooking.
