Have you given meal prep a try?
I had been wanting to but, since I usually cook full recipes for just Kevin and me, there always seems to be something leftover for him to take to work for lunch.
Then I thought, DUH, what about me?
I am horrible horrible horrible, about planning meals for myself. Breakfast? Lunch? Nine times out of ten it usually fall into the "I have no time to think so I am just going to make/eat the same thing I have for the last week and a half!".
It is so sad really.
Me, the person that has SO many food ideas rambling around inside her head, can't seem to come up with anything imaginative for her own meals SMH.
So, after drooling over so many meal prep picture on Pinterest, and reading tons and TONS of recipes, I decided that I needed to jump on board the wagon and go for a ride.
Yeeeehaaaawww!

What is funny is that Kevin thought the whole "meal prep" idea was silly (what else is new right?). His take on the lunch/dinner situation was, if there weren't leftovers in the fridge, grab a can of soup, or make a sandwich.
*sigh* Borrrrrrrring 😕
That my friends is why people fall off the wagon with their intentions of eating healthier.
I don't know about you, but if I am left to my own devices with zero food plans, and fast food within driving distance, ya I am going to be down with takeout Chinese, or a big ol' sub sandwich.
Tasty? Yes.
Healthy? Ummm not so much.
SO I jumped into the game and the first place I went to was the Mediterranean. I have been SO in love with Mediterranean flavors lately. It used to be Mexican, and don't get me wrong that is still one of my faves, but something about the Mediterranean has been calling my name and tastebuds!
A few of my favorites? Chicken Kabobs with Greek Salad, Greek Burgers, Greek Salsa, and Mediterranean Quinoa Salad. Just to name a few.
My other obsession new love is cauliflower ANYTHING. Yup, steamed, fried, roasted riced, gimme dat cauliflower!
Things like Cheesy Cauliflower Tots (one of the G-baby's faves), Cauliflower Hash, Cauliflower Au Gratin, Garlic Herb Cauliflower Rice, Shrimp and Bacon Cauliflower Fried Rice, and of course we can't leave out Roasted Cauliflower and Cheese Soup!
So I took bits and pieces of many of those and put them all together in this delicious, and FAR from boring, meal prep. I mean gyro meatballs, garlic and her cauliflower rice, Greek salsa, and creamy Tzatziki sauce? What is not to love?
So take a little trip to the Mediterranean with me over lunch OK?

Mediterranean Meatballs with Tzatziki Over Cauliflower Rice
Make meal prep healthy and delicious with these Mediterranean Meatballs with Tzatziki Over Cauliflower Rice.
prep time: 10 MINScook time: 15 MINStotal time: 25 mins
ingredients:
- 1 pound Certified Angus Beef ® brand beef
- 1/4 cup breadcrumbs* See Notes for Keto & Gluten-Free substitutions
- 1 large egg, lightly beaten
- 1 1/2 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried marjoram
- 1/2 teaspoon minced onion
- 1/4 teaspoon minced garlic
- 1/2 cup feta cheese
- 1/4 cup of fresh parsley leaves, chopped
Serve with:
- Greek Salsa
- Garlic and Herb Cauliflower Rice
- Tzatziki Sauce
- Pita wedges (for Keto pita try this recipe or these from Amazon)
instructions
- Preheat the oven to 425 degrees F.
- In a large mixing bowl, combine the ground beef, breadcrumbs, egg, the remaining parsley, oregano, thyme, basil, marjoram, minced onion, and minced garlic. Form into 16 meatballs (I use a small cookie scoop).
- Place the meatballs on the baking sheet lined with parchment paper and bake for about 15 minutes or until cooked through. Cooking time will vary depending on the size of your meatballs.
- When the meatballs are cooked through, remove them from the oven to rest.
- Place 4 meatballs in each container, 1/4th of the cauliflower rice, a scoop of salsa, and a dollop of tzatziki sauce. * See Notes

If you want to microwave the meatballs and cauliflower in the container, remove the salsa and tzatziki sauce beforehand. Can also pack the salsa and tzatziki in individual containers like these.
For Keto meatballs use crushed up pork rinds.
For Gluten-Free meatballs try gluten-free oats blended up a bit in a food processor first. Or try crushing up your favorite gluten-free flax or fiber cereal.

ReplyDeleteI've never done Mediterranean meatballs with my daughter. But she seems to love all of the other kinds. I think I will definitely be trying this out as she loves them so much. And I am all for this kind of food. Looks delicious. And you are right, its easy to fall off the wagon without any set plan.
