Sometimes I feel like it takes me a good month to get back into the swing of things. A sort of holiday hangover if you will. 

But we all know we have to get back in the saddle right. We've got places to go, jobs to do, and people to feed. And, if your people are like my people? They get pretty dang cranky if they don't get fed! 

However, with the places to go, and jobs to do, getting a nice hot breakfast on the table for everyone can feel like mission impossible.

Now, y'all know I am a HUGE casserole girl and overnight breakfast casseroles like my Easy Overnight Eggs Benedict Casserole, Make Ahead Ham and Cheese Breakfast Casserole, Chicken and Waffles Casserole, and Strawberries and Cream Cheese French Toast Casserole happen in our house on a pretty regular basis. 

BUT, those have always been reserved for the weekend. The poor weekdays we left to scrambled eggs, cheese omelets, and oatmeal. 

That was until I met my new BFFs.

The Good Morning Slow Cooker seasoning packets add fresh and rich flavor to any egg casserole or French toast, so this drool worthy casserole was thrown together in no time flat.

I mixed the eggs, milk, and cheese, with the McCormick Slow Cooker Mexican Egg Casserole seasoning packet, scattered some hashbrown potatoes in the bottom of my slow cooker, poured in the eggs, set the timer, and I was off  to make some coffee, take my shower, and get everything going for the day. All the while this delicious casserole was cooking away in my slow cooker. All I did was add some chopped tomato and cilantro.

I mean look at it 👆 this took zero work and gave maximum flavor!

Kevin, the consummate skeptic, gave a little side eye to the casserole as it was cooking 👀

Are you making eggs for breakfast?

Yes.

Yup.

I think not since he proceeded to eat over half the dang casserole!!

Slow Cooker Mexican Breakfast Casserole

This easy to make slow cooker breakfast casserole is bursting with the Mexican flavors you love and perfect for a weekend brunch or just your everyday breakfast.
prep time: 5 MINScook time: 2 hour and 30 MINStotal time: 2 hours and 35 mins

ingredients:

  • 12 large eggs 
  • 1 cup milk 
  • 1 package McCormick Good Morning Slow Cooker Seasoning Mix 
  • 1 cup shredded cheese 
  • 2 cup hash brown potatoes (fresh or frozen) 

instructions

  1. Mix eggs, milk, and the seasoning package in a large bowl until well blended. Stir in cheese. Grease the inside of your 6 quart slow cooker, or spray it with non-stick cooking spray. Spread hash brown potatoes evenly in the bottom. 
  2. Carefully pour the egg mixture into the slow cooker. * See Cook’s Notes 
  3. Cook 2 ½ hours on high or 4 to 4 ½ hours on low or until eggs are set.

Feel free to make this dish your own. Sprinkle extra cheese on top of the eggs before you cook, or after. Top with sour cream, fresh salsa, and avocado. 

Or, try up to 2 cups of these add-ins - diced tomato, corn, beans, cooked sausage or chorizo. 

Cubed corn muffins or Italian bread can be substituted for the potatoes

  1. This look soo good I'm just sad that I can't eat eggs anymore since they really hurt my tummy don't know why still need to get it checked it out then I can start eating them again. Pinning this for later.

    1. Have you tried the egg substitutes? I believe 1/4 cup of that is equal to one egg, so you would use 3 cups.
