Sometimes I feel like it takes me a good month to get back into the swing of things. A sort of holiday hangover if you will.
But we all know we have to get back in the saddle right. We've got places to go, jobs to do, and people to feed. And, if your people are like my people? They get pretty dang cranky if they don't get fed!
However, with the places to go, and jobs to do, getting a nice hot breakfast on the table for everyone can feel like mission impossible.

All the while this delicious casserole was cooking away in my slow cooker. All I did was add some chopped tomato and cilantro.

Slow Cooker Mexican Breakfast Casserole
This easy to make slow cooker breakfast casserole is bursting with the Mexican flavors you love and perfect for a weekend brunch or just your everyday breakfast.
prep time: 5 MINScook time: 2 hour and 30 MINStotal time: 2 hours and 35 mins
ingredients:
- 12 large eggs
- 1 cup milk
- 1 package McCormick Good Morning Slow Cooker Seasoning Mix
- 1 cup shredded cheese
- 2 cup hash brown potatoes (fresh or frozen)
instructions
- Mix eggs, milk, and the seasoning package in a large bowl until well blended. Stir in cheese. Grease the inside of your 6 quart slow cooker, or spray it with non-stick cooking spray. Spread hash brown potatoes evenly in the bottom.
- Carefully pour the egg mixture into the slow cooker. * See Cook’s Notes
- Cook 2 ½ hours on high or 4 to 4 ½ hours on low or until eggs are set.

Feel free to make this dish your own. Sprinkle extra cheese on top of the eggs before you cook, or after. Top with sour cream, fresh salsa, and avocado. Or, try up to 2 cups of these add-ins - diced tomato, corn, beans, cooked sausage or chorizo. Cubed corn muffins or Italian bread can be substituted for the potatoes

This look soo good I'm just sad that I can't eat eggs anymore since they really hurt my tummy don't know why still need to get it checked it out then I can start eating them again. Pinning this for later.
ReplyDeleteHave you tried the egg substitutes? I believe 1/4 cup of that is equal to one egg, so you would use 3 cups.
