SO, that is what brings us here on this fine frigid (at least here in Western Washington) Thursday.

I have to admit that I spend a LOT of time thinking about cheese.
It is abnormal really.
I tend to try and fit it into just about every recipe I write.
Then Kevin reminds me that the world doesn't love cheese like I do.
Then I pout ๐
And wonder what is wrong with you people. I mean, seriously, we know there is nothing wrong with me.......right?

I know there are plenty of hardcore cheese lovers like me.

So, now that we got that out of the way, let's get down to some serious cheesiness, shall we?
I had been working on this recipe for quite some time, adding this or that, or changing things out or around.
But two things remained constant, besides the cheese of course ๐
It had to be easy and it had to be a one-pot skillet kind of dealio because nobody wants to do a sink load of dishes after filling up with a yummy tummy hugging meal like this.
NOBODY.
So I got my list together and got my butt to work.

Broccoli ✔️
Rice ✔️

I have to admit that the G-baby was the approval I was really looking for. I want to get her in the kitchen with me because I know that the more kids are involved with cooking a meal, the more likely they are to eat it.
So my first step is just talking to her about what I am doing and showing her the ingredients.
Those convos go kinda like this;

We go through the ingredients while I name them off...

Ummm okaaaay trees it is then!
So, if Y'all are down for some cheesy goodness that is super easy, cooked in one pan......and has TREES, this is the recipe for you!!
Ask the kids, they might be into trees too!

Cheesy Beef and Broccoli Rice Skillet
This easy Cheesy Beef and Broccoli Rice Skillet is all made in one pot so it is perfect for the weeknight when everyone wants a delicious meal, but no one wants to do dishes!
prep time: 5 MINScook time: 27 MINStotal time: 32 mins
ingredients:
- 1 pound Certified Angus Beef® brand ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 3 tablespoons flour (use Gluten Free AP flour for a GF dish)
- 1 cup milk
- 2 cups chicken stock
- 1 (8-ounce) can tomato sauce
- 1 tablespoon Worcestershire sauce
- 1 tablespoon hot sauce (I used Lingham's)
- 1 cup uncooked white rice
- 1 large head of broccoli cut into florets
- Kosher salt
- Fresh cracked black pepper
- 1 cup cheddar cheese, shredded
instructions
- In a large nonstick skillet, over medium-high heat, Cook the ground beef, onions, and garlic, stirring frequently, until the beef is cooked through and onions have softened - about 5 minutes.
- Make a well in the center of the beef mixture and add the tomato paste. Stir, allowing the paste to warm, about 2 minutes.
- Sprinkle in the flour and stir until the flour is well incorporated about 2 minutes.
- Add the milk and stock. Then add the tomato sauce, Worcestershire sauce, hot sauce, rice, and broccoli. Season with salt and pepper.
- Bring mixture to a boil. Reduce heat to low and cover, simmering 15 to 20 minutes or until rice is tender and liquid is absorbed, stirring once or twice to prevent the rice from sticking to the bottom of the pot.
- Sprinkle with cheese, cover, and continue cooking until the cheese is melted.
