Hola, ¿cómo estás hoy mis amigos? 

No, I do not speak Spanish.

Even with 2 years of high school Spanish, and living in Southern California for oh, most of my life, I never really learned. I could introduce myself, ask your name, where you live, and ummmm where is the bathroom, but a true conversation? Nope, I was lost. So I have to admit that my greeting came from an online English to Spanish translator.

I will take all of the help I can get.

But why then am I taking my little cerebral trip south of the border? Well, because making this dish got me feeling a bit nostalgic, and that is because this is one of those recipes that I have been making pretty much as long as I have been cooking.

However, I am kind of embarrassed to tell you how I first made it. 

If you have have been reading my blog for awhile, you know I have admitted, on more than a million occasions, that did NOT cook very healthy, or well for that matter, for many many years. I was the Queen of boxes and cans!

That is how this recipe came to be. My desire to "tweek" one of those boxed meals. You know, the one that you just add the meat to and WALA there is the family's dinner?

*hanging head in shame*

I thought I was being all "gourmet-ish because I used packaged taco seasoning, the cheeseburger macaroni boxed meal, canned refried beans, cheese, and tortillas and just layer them all up. 

Macaroni AND tortillas? 

Holy carb overload Batman!!!

But even after I lost weight and was determined to cook healthy real food, my kids would actually request that horrible dish  I wanted to make it for them but definitely NOT the old way! That is made me go back to the drawing board. 

I decided to take this from a carb-o-rama to a dish that serves up the protein we all need.

One of the first things I did to up my game in this recipe was use Certified Angus Beef ® brand ground beef.

So, I got rid of the packaged taco seasoning to cut down on sodium. Of course, dropped the super processed box meal with the macaroni, ditched the refried beans for non-fat refried black beans, and used Certified Angus Beef ® brand ground beef to pack in as much flavor as possible. 

If you want to bump it up even more you could add some corn, chopped bell pepper, olives, avocado, oh the sky is the limit! I have even been known to sneak some grated zucchini or spinach in. Ssshhhh don't tell!

What does all of that do? 

Well, it takes this dish from the carbtastic gut bomb that it was, to a delicious meal that I feel good about feeding the fam

Hearty Mexican Lasagna

This lasagna recipe is hearty, delicious, and brings all of those Mexican flavors your family loves!

ingredients:

For the Meat Sauce
  • 1 pound Certified Angus Beef ® brand ground beef
  • 1/2 cup (about 4-ounces) tomato paste
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon Mexican oregano 
  • Kosher salt
  • Fresh cracked black pepper
  • 1 tablespoon flour
  • 1 cup chicken stock
  • 2 cups of your favorite salsa, store bought or homemade
For the Cheese Layers
  • 1 (15-ounce) container ricotta cheese
  • 2 cups (8-ounce block) pepper jack cheese, shredded
  • 2 eggs, lightly beaten
  • 3/4 Cotija cheese, grated + more for garnish
  • 1/4 cup chopped cilantro + more for garnish

  • 9 oven-ready lasagna noodles
  • 1 can refried black beans
  • 2 cups cheddar cheese, shredded
  • 1 tomato, chopped
  • 4 green onions, chopped

instructions


  1. Preheat oven to 375 F. 
  2. Lightly grease a 9x13" baking dish.
Meat Sauce
  1. In a large skillet, over medium heat, add ground beef. Break up the meat with a wooden spoon and cook until meat is well browned. 
  2. Push the beef to the sides of the pan and add the tomato paste stirring it a bit and allowing it to warm. Add the cumin, chili powder, garlic powder, oregano, salt, and pepper and sprinkle with the flour and stir to combine. 
  3. Cook for a minute or two to get rid of the raw flour taste then stir in chicken stock, scraping up any browned bits off the bottom of the pan. Add the salsa and mix thoroughly and lower heat to simmer. Cook for 15 minutes adding more chicken stock if it gets too thick.
Cheese Mixture
  1. In a large bow, combine ricotta with the 2 cups of pepper jack cheese, eggs, cotija cheese, and cilantro. Stir to combine.

  1. Combine the refried beans in a bowl with a bit of water or chicken stock to thin enough to spread.
Assembly
  1. Spread 1/4th of the meat sauce in the bottom of the baking dish.
  2. Layer 1: Place 3 noodles on top of the meat sauce, spread with half of the refried beans. Top with half of the ricotta cheese mixture, and sprinkle with 1/3 of the shredded cheddar cheese.
  3. Layer 2: Spread on 1/4 of the meat and repeat layer 1.
  4. Spread another 1/4th of the meat sauce on, top with 3 noodles.
  5. Spread the remaining meat sauce on top and sprinkle with the last 1/3 of the cheddar cheese.

  1. Cover loosely with aluminum foil and bake in preheated oven for 30 minutes. Remove foil, and bake additional 15 to 20 minutes
  2. Remove from oven, allow to rest 10 to 15 minutes. Top with cotija cheese, chopped tomato, chopped green onions, and chopped cilantro.
