Anyone living la vida low-carb knows that Mexican food is mostly a huge no-no. Tacos, enchiladas, burritos, beans, rice, ya pretty much all of that deliciousness is off limits.

That made this girl very verrrrrrrrrrrrrrrrry sad 😥

Being a So Cal girl transplanted into the Pacific Northwest, it was bad enough that I was having a difficult time finding good Mexican food unless I cooked it.

Then I went low-carb and that threw a huge wrench in the works!

How was I going to be able to enjoy the flavors I love so much AND stay low-carb?

That lit a fire under my butt to get to work creating dishes that we could enjoy and not feel guilty about it.

I have come up with Keto Flour Tortillas so we can indulge in these Creamy Keto Green Chile Chicken Enchiladas, Low-Carb Taco Meatloaf, and now this amazing Mexican Cauliflower Rice.

This was the perfect side for the taco meatloaf and I can't wait to make it with the chicken enchiladas too. I love, love, LOVE it!

The Mr., who isn't a big rice fan, said it was good. I used the spicy taco seasoning to keep him happy and he even said it could go spicier. So, if you like things on the warmer side, add another jalapeno to give it that extra zing.

I thought it was great the way it was.

I don't call him the complainer for nothing 😂

Mexican Cauliflower Rice

This Mexican Cauliflower Rice recipe is low-carb and perfect as a side for all of your favorite keto dishes!
prep time: 5 minscook time: 10 minstotal time: 15 mins

Ingredients:

  • 1 tablespoon olive oil
  • 1 jalapeno pepper, diced
  • 2 (10-ounce) bags frozen cauliflower rice (recommend Birdseye Savory Herb Frozen Cauliflower Rice)
  • 1 can diced tomatoes
  • 1/4 cup of chicken bone broth or stock
  • 2 teaspoons onion powder
  • 1 envelope taco seasoning (I used the spicy)
  • 1 cup Mexican blend cheese

Instructions

  1. In a large skillet, over medium-high heat, add oil. Once it is heated add the jalapeno and saute for 3 minutes.
  2. Add the cauliflower rice, tomatoes, bone broth, onion powder, and taco seasoning and bring to a simmer. Reduce the heat to medium-low and cook until the cauliflower rice begins to soften about 5 to 8 minutes.
  3. Sprinkle the skillet with the cheese and cover. Let cook until the cheese is melted, 2 or 3 minutes. Remove from heat and top with your favorite toppings like sour cream, avocado, green onions, and chopped cilantro.

    I want to try this recipe this weekend. By reading this blog I can say that Mexican cauliflower rice is very low carb one. And it is tasty grain free side dish! Chopped cauliflower florets mimic the texture and look of rice.
    What is more this cauliflower rice is not the astounding, hippie thing it is made out to be. It can really taste great! Like ridiculously great. Even to every one of you who hate cauliflower. You are seriously not talking flat, odd cauliflower taste here. This Mexican cauliflower rice is overflowing with everything we cherish about Mexican food – the spice for one! I am a major spicy food individual and garlic – there must be garlic in all things!
