My birthday is coming up in a couple of weeks and we are having a big BBQ so I decided that I wanted to make a low carb side that didn't contain cauliflower.

I have mentioned how I am pretty hooked on cauliflower now, and Kevin......not so much.

He enjoys all of the recipes I create, eats them, but he seems to have a knee jerk reaction to hearing the word cauliflower now.

I don't get it.

Although I do have to remind myself that he didn't get the nickname "The Complainer" for nothing 😂

He lives to give me a hard time sometimes I swear!!

But, with it just being him and I living here, and me being the one that is cooking the majority of the time, he just has to deal with what I decide to make.

Hence a shit ton of cauliflower recipes!

I get it.

Being low carb, I really look for ingredients that I can work with that I don't have to limit servings sizes to itsy bitsy to fit into my macros.

Cucumber is a perfect one for that reason.

Cucumbers are low in calories but high in many important vitamins and minerals.

One 11-ounce (300-gram) unpeeled, raw cucumber contains the following:
  • Calories: 45
  • Total fat: 0 grams
  • Carbs: 11 grams
  • Protein: 2 grams
  • Fiber: 2 grams
  • Vitamin C: 14% of the RDI
  • Vitamin K: 62% of the RDI
  • Magnesium: 10% of the RDI
  • Potassium: 13% of the RDI
  • Manganese: 12% of the RDI
Since a typical "serving" of cucumber is about 1/3 of a cucumber, you would, of course, divide those numbers by 3.

To maximize their nutrient content, cucumbers should be eaten unpeeled. Peeling them reduces the amount of fiber, as well as certain vitamins and minerals. 

I usually eat English cucumber (which is what I use in this recipe) because the skin is a bit thinner and the seeds are smaller. The seeds contain quite a bit of nutrients as well so chow down on those bad boys!!

I like a bit of "bite" to my salad so hence the radish and red onion, feel free to omit them if you aren't a big fan but I hope you give it a try with them because I think they really balance it out well. 

Mini-Me hates radish with a passion but doesn't mind them in this salad so that is huge!


Radish is another veggie that works really well on keto/low carb diets. I substitute them for potatoes in things like this Ultimate Keto Instant Pot Beef Stew and nobody can tell the difference.

In fact, the Mr. told me it was his favorite of all of the beef stew recipes I have created 😮

This salad is really perfect for a BBQ or picnic.

It gives you all of those cool, creamy, tangy flavors that go so well with burgers, BBQ chicken, ribs, and more.

If you want to make this even lower carb you can, of course, substitute zero carb mayo for the sour cream, but I like the tang you get from sour cream, and the carb count is still really low using it.

To make whipping this salad up easier I highly recommend using a mandoline slicer. It gives you the same thickness slices and cuts the chopping time down tremendously!

Just be careful. Use the guard, get a metal glove, or go super suuuuuuper slow. The first time I used mine I didn't pay attention and cut myself pretty good.

Like 7 stitches good!

Kevin wouldn't even let me use a cheese grater for a while after that 😂

Creamy Low Carb Cucumber Salad

Ingredients:

  • 4 cups cucumber (2 medium English), thinly sliced
  • 1 bunch radishes, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 1/2 teaspoons Redmond's real salt — divided, plus additional to taste
  • 1/2 cup sour cream
  • 1 tablespoon white wine vinegar
  • 3 to 5 drops (to taste) of Better than Stevia liquid
  • 1 teaspoon garlic paste
  • 1/2 teaspoon black pepper
  • 3 tablespoons fresh dill, finely chopped
  • 3 tablespoons fresh chives, finely chopped

Instructions:

  1. Place the cucumber, radishes, and onion in a colander and sprinkle with 1 tablespoon salt. Toss to combine. Cover and let sit 30 minutes. Toss again to allow the accumulated liquid to drain. This will ensure your salad does not become watery.
  2. Shake the colander to drain and transfer to a dry bowl.
  3. Pour the dressing over the veggies and toss to combine.
  4. Stir in the dill and chives. Taste and season with additional salt and/or pepper if desired.
  5. Refrigerate for 1 hour before serving.
