This is not your average chicken salad recipe. 

Oh no, no, no!

This is a traditional creamy chicken salad that meets all of the delicious flavors of a loaded baked potato and an amazing tasty low carb marriage happens!

With bacon, chives, and shredded cheese, it is perfect for keeping your lunch interesting or makes a wonderful dish to take to a potluck or summer barbecue. 

But, I warn you, it will go fast, so you may want to make a triple (or more) batch. 

I thought I was just coming up with a tasty keto-friendly recipe for myself, and y'all, but then the Mr. got a hold of it and it was gone in no time flat!

I love it when my non-keto family members and friends enjoy my ketofied recipes.

It gives me the warm fuzzies and makes me smile 😊

But, that is good for you too because I know there are a ton of you out there trying to navigate the low carb highway with passengers that are not super fond of being there.

The Mr. started out that way. But I have to admit that he has come around to the keto side quite nicely now.

Oh, he was grabbing burgers and sub sandwiches for lunch on almost the daily. But, thanks to recipes like this, he is happy with me packing up a tasty low carb wrap for his lunch instead.

I have to admit that this Loaded Chicken Salad recipe came about partially to satisfy my craving for big ol' baked potato.

Kevin still has them when we grill steaks and yes, I do tend to drool. I don't really miss potatoes at any other time really, but next to a steak and salad, a potato shines like a diamond 💎

 After a year and a half of living la vida low carb, the call from that potato is pretty quiet, but a girl can still have potato dreams right?

So I decided to take those cravings and mash them up with something that I can have any day of the week I want it.

WHAT ARE THE BEST INGREDIENTS TO MAKE LOADED CHICKEN SALAD?


First, let's talk about the chicken.

I almost always use chicken thighs because they contain more fat so they fit into my macros nicely. 

4 ounces of cooked chicken thigh contains (approx):

Calories - 225
Protein - 18 grams
Carbs - 0
Fat - 12 grams

4 ounces of cooked chicken breast contains (approx):

Calories - 200
Protein - 50 grams
Carbs - 0
Fat - 5 grams

So you can see, the calorie difference is minor. However, the fat is double. So, when you are trying to hit that fat macro to make sure you are staying in ketosis, thighs can be the way to go.

Remember, keto is a moderate protein/high-fat diet.

However, breasts can be fine if that is what you prefer, or if you are not strict keto.

I love to use Sir Kensington mayo because there are zero carbs in it. 

I used to be a Best Food's only girl, but I am willing to loosen up when I can save a gram here and there ya know 😉

When it comes to cheese I always opt to shred/grate my own. 

Bagged shredded cheese can contain cellulose, to keep the shreds from sticking together, and that adds carbs.

If I am going to eat carbs I want to enjoy them, not have them be all sneaky and hidden!

So break out that cheese grater and save your carbs for a keto cookie or candy treat!
