I am a jalapeno popper fanatic! I would eat them every day if I could.
Ok, maybe that is a bit of an exaggeration, but not much of one.
Before I went low carb I came up with this Jalapeno Popper Pasta Salad and it became a picnic and BBQ fave.
I also made these Jalapeno Popper Deviled Eggs and was sooooo happy when I realized that they were perfect for low carb and keto peeps.
Mini Me just told me that she has been dreaming about those deviled eggs, which I know is code for "Mom will you please make me those deviled eggs for me?" 😂
I have a ton of popper variation recipes flying around in my head. They are main dishes, side dishes, salads, etc.
Please tell me you get as excited about these flavors as I do!
CAN I EAT MEATLOAF ON A LOW CARB OR KETO DIET?
I know most meatloaf recipes use bread or breadcrumbs as a binder, which means they are a no-no if you are living la vida low carb.
So, since the Mr. is a HUGE meatloaf lover. I mean like he could eat meatloaf every week meatloaf lover! I knew one of the first recipes I was going to adapt was my Mom's Meatloaf recipe.
I found that you could either use almond flour or crushed pork rinds.
That was a hard one for me because, before I went keto I hated pork rinds with a passion. But, hubs loves them.
Pair that with the fact that almond flour does add carbs whereas pork rinds do not and pork rinds it was.
Be careful though, not all pork rinds are created equal.
You want pork rinds that are keto-friendly, which means they are either baked, or fried in keto-friendly oil or lard, not vegetable oils. I always check ingredients but a lot of the time my grocery store is out so I just order them from Amazon so I know I will have them when I need them.
Tip - Since I make a lot of meatloaves, I will grind an entire bag of pork rinds and store them in my freezer in an airtight container, or if I am feeling especially frisky, I will make several meatloaves and freeze them for quick and easy dinners!
WHAT YOU'LL NEED TO MAKE THIS JALAPENO POPPER MEATLOAF RECIPE:
- Cream cheese
- Mexican seasoning blend
- Ranch seasoning
- Ground beef
- Jalapenos
- Eggs
- Spicy pork rinds
- Cilantro
- Redmond's real salt
- Bacon
- Cheddar cheese
Also helpful are:
Kitchen scale (helpful in making sure the meatloaves, and the filling, are all the same weight)
Foil or parchment paper
This recipe is easily customized to your own taste.
Not huge on spice? Use 1 jalapeno instead of 2.
Hubs and I love jalapeno so I don't even remove the ribs and seeds from my jalapenos, which is where all of the heat lives in a pepper.
But, if you are not a regular traveler on the jalapeno bandwagon, you would certainly remove the ribs and seeds and/or only use one pepper.
Jalapenos can be tricky little guys though.
I make homemade salsa fresca on a regular basis and it is like rolling the dice when you buy jalapenos. Sometimes it will come out spicy and other times I am like, "Umm hello? Are there peppers in this recipe?"!
A little tip that I was told, the wrinkled jalapenos are spicier. So, if you want heat go for the wrinkles!
Do you like lots of creamy cheesy filling?
There is a debate going on here between the menfolk AKA The Mr. and Mini Me's other half Josh, and the girls.
We like things creamy, gooey, cheesy, etc.
Then men? Prefer more meat, less filling.
So, are you Team Cream Cheese?
Yes! Double the recipe for the cream cheese filling and roll it into 2-ounce "logs" instead of 1-ounce ones.
More of a meathead?
Perfect, just make the recipe as written and go to town!

Keto Bacon Wrapped Jalapeno Popper Mini Meatloaves

This amazing bacon-wrapped jalapeno popper mini meatloaf recipe is the stuff of keto dreams! Ground beef studded with spicy jalapenos, stuffed with a dreamy spiced up ranch flavored cream cheese mixture and wrapped in bacon. Ingredients:
- 4 ounces cream cheese
- 2 teaspoons Mexican seasoning blend
- 1 1/2 tablespoons ranch seasoning
- 2 pounds ground beef
- 2 jalapenos, minced
- 2 large eggs, lightly beaten
- 1 1/2 cups spicy pork rinds, ground
- 1/4 cup fresh cilantro, plus more for garnish if wanted, chopped
- 1 teaspoon Redmond's real salt
- 8 slices of bacon
- 1 cup shredded cheddar cheese
Instructions:
- Preheat the oven to 400 degrees F. Line a sheet pan with foil or parchment paper.
- Combine the cream cheese, Mexican spice blend, and ranch seasoning in a food processor until well blended. Place the cream cheese mixture in an airtight container in the refrigerator.
- In a large bowl, combine the ground beef, jalapenos, eggs, pork rinds, cilantro, and salt, just until combined.
- Separate the meat mixture into 4 even portions.
- Remove the cream cheese mixture from the refrigerator and separate the mixture into 4 even portions.
- Press 2/3rds of a portion into the bottom of a mini loaf pan.
- Roll a portion of the cream cheese mixture into a cylinder and press it lightly into the ground beef mixture in the loaf pan.
- Top with the remaining 1/3 of the ground beef mixture and carefully remove from the loaf pan, pressing all seams together so the cream cheese is sealed inside.
- Beginning at one end of the mini meatloaf, wrap 2 pieces of bacon around it until completely covered, trimming any excess if necessary.
- Place the meatloaves on the sheet pan and bake for 30 minutes.
- Remove from the oven and top with the cheddar cheese, return to the oven for 10 minutes.
- Remove the meatloaves from the oven and top with chopped cilantro if using.
