Hello, my lovelies! 

Things have been a bit crazy here in Washington state. The lockdown is in place, two of my kids are out of work. My husband is still working but layoffs are coming down on almost a daily basis there.

Needless to say, I am STRESSED out!

I am sure you are all feeling it too, so I just want to say I am there for you. I know I can't help with jobs or money, but I can listen if you want to talk, and I can try to get recipes to you that will help with feeding your family delicious low carb meals that they will enjoy.

During stressful times I always fall back to my childhood comfort foods. Yes, that usually will include carbs because I was raised a carb junkie! I have been craving mac and cheese like no other!!

So I pulled out my Mom's old meatloaf recipe and decided to tweak it a bit to make it keto-friendly.

The result was a meatloaf that not only tastes terrific but has less than 2 net carbs per slice! This means, for people like my hubby that LOVE meatloaf, 2 slices is OK!!

Another bonus with this recipe is that it is great for meal prep. I have been trying to be really good about making menus and sticking to them.

That is not only good for sticking to a low carb lifestyle by avoiding last minute bad decisions (that I am the Queen of), but it is helpful for shopping so we don't buy more than we need.

So I make a menu, write out my list, hubs does the shopping on his way home from work, and then I pick a day to get the meals prepped for the upcoming week.

This meatloaf recipe is perfect for that.

When I am making it for meal prep I just pop it into a loaf pan, wrap it with foil, and place it into the freezer for later that week. Then I take it out of the freezer the day before and put it in the fridge to defrost, turn it out onto a sheet pan (Tip - line your sheet pan with foil, I obviously forgot to do that here), and pop it into the oven.

Another tip, check the internal temperature after cooking to make sure it is at least 135 degrees F. After carryover cooking it will be a nice medium.

I love using ground beef. Not only for ease of meal prep, but because it is budget friendly, and perfect for keto recipes.

Keto is all about low carb, high fat, moderate protein. Ground beef fits into that perfectly. I am always on the lookout for ground beef on sale, and if I can find grass-fed ground beef on sale? Woohoooo!

This keto homestyle meatloaf is tender and delicious, just like Mom used to make. The only thing missing is the carbs!

Ingredients:

For the meatloaf
  • 2 pounds ground beef 
  • 2 eggs
  • 3/4 cup heavy cream
  • 2/3 cup ground pork rinds
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • 1 tablespoon Italian seasoning
  • Redmond's real sea salt
  • Fresh cracked black pepper
For the sauce

Instructions:

  1. Preheat oven to 350 degrees F.
  2. Line a rimmed baking sheet with parchment paper or tin foil.
  3. In a large bowl whisk together the eggs and heavy cream. Then add the pork rinds, onion powder, garlic powder, Italian seasoning, salt, and pepper. Stir to combine then add the ground beef. Using your hands, combine the meat with the egg mixture. Shape into a loaf on the prepared baking sheet.
  4. Combine the ketchup, brown sugar Swerve, and dry mustard. 
  5. Top the meatloaf with 1/2 of the ketchup mixture
  6. Bake for 45 minutes.
  7. Top with the remaining ketchup mixture and bake for an additional 15 minutes.
  8. Remove from heat and allow to stand for 10 minutes before slicing.

  1. Hi there. Looks yummy. I use ground chia seed as a binder in my LC/Keto meat loaf. I am curious, however, as to why you don't just cook it in the loaf pan instead of mounding it on a sheet? Is that shape a family tradition?

    1. It is just a preference for me. I don't like using a loaf pan because then the fat sits in the bottom of the pan. I had never heard of using chia before. Interesting!
