My Cheesy Beef and Broccoli Rice Skillet was a fave, on the blog, and with the family for so long. Then I went low carb and the skillet went without.
I honestly have no idea why it took me so long to adapt it to my low carb lifestyle.
Oh well, maybe it was me breaking my ankle, then dealing with this COVID stuff, but damn girl, get with it! How can you let such goodness go unloved?

I mean we all know that cauliflower rice is pretty much a staple when you are livin' la vida low carb right?
I have been making things like Green Chile Cauliflower Rice, Coconut Lime Cauliflower Rice, Garlic Herb Cauliflower Rice, and Mexican Cauliflower Rice for quite some time now.
This isn't rocket science here.
I didn't need to reinvent the wheel.
But for some reason I just didn't pull the trigger, connect the dots, and get this deliciousness on the table until now.
This is one of those recipes that I like to refer to as stupid easy.
I had a reader comment on another recipe I used that term with by saying that "stupid easy" was her love language 😂
I think it is mine too!
WHAT DO YOU NEED TO MAKE LOW CARB CHEESY BEEF AND BROCCOLI?
- Ground beef
- Onion powder
- Garlic powder
- Salt & pepper
- Tomato sauce
- Heavy cream
- Worcestershire sauce
- Hot sauce, optional
- Riced cauliflower
- Broccoli florets
- Cheddar cheese
You know I am a huge fan of one-pot/pan meals so this fits right into that.
I mean it is pretty much throw everything in a pan and go. It can't get much easier than that right?
Plus it is done and on the table in under 30 minutes!
The only way this could get any better is if the dishes washed themselves!
Now THAT would be something, wouldn't it?
A girl can dream I guess.
But, let me get serious for a minute, kinda.
One of the things that stopped me from really diving into the low carb/keto lifestyle was the cooking.
We all grew up eating carby stuff right?
What did we have with almost every meal?
Pasta
Rice
Potatoes
Bread
When you take those away you are left sitting at your kitchen table trying to meal plan staring at a blank sheet of paper with pen in hand and zero clues in your head.
Am I right?
Then put that together with the non-low carb peeps in your life.
That for some reason can eat potatoes every night of the week but as soon as you throw cauliflower at them a couple of times you get the "Cauliflower agaaaaaaaain?" whine.
Even though they have loved literally every cauliflower recipe you have put in front of them.
The struggle is real people.
THE.STRUGGLE.IS.REAL.
The beauty of cauliflower is that, just like potatoes, it really doesn't have much of a flavor on its own. It takes on whatever you put with it.
Now, I know the smell is can be an issue.
I mean that is what had me running for the hills when I was a kid and I am sure I am not alone right?
This is one of the recipes that doesn't have a smell factor to deal with. So no kids running for their room with this one, I promise.
Case in point, my friend made this for her family. She has 2 school-age kids and never told them there was cauliflower in it.
They happily gobbled it up.
Then, a couple weeks later, her daughter REQUESTED it for dinner.
I will take that as a win, my friends!

Low Carb Cheesy Beef and Broccoli Rice Skillet
Yield: 4 to 6 servings

This is a low carb version of my Cheesy Beef and Broccoli Rice Skillet recipe. It is a perfect quick and easy weeknight dinner the whole family will love with all of the flavor minus carbs.
Ingredients:
- 1 pound ground beef
- 1 tablespoon onion powder
- 1 teaspoon garlic powder
- Kosher salt
- Fresh cracked black pepper
- 8-ounces tomato sauce
- 1 cup heavy cream
- 1 tablespoon Worcestershire sauce
- 1 tablespoon hot sauce (I used sriracha), optional
- 2 cups frozen riced cauliflower (can use fresh)
- 10-ounces frozen broccoli florets (approx 1 head of fresh broccoli)
- 1 cup cheddar cheese, shredded
- Fresh chopped flat-leaf parsley, optional
Instructions:
- In a large nonstick skillet, over medium-high heat, cook the ground beef, onion powder, garlic powder, salt, and black pepper, until the beef is cooked through, about 5 minutes.
- Add the tomato sauce, heavy cream, Worcestershire sauce, hot sauce, cauliflower rice, and broccoli.
- Bring mixture to a boil. Reduce heat to low and cover, simmering 15 to 20 minutes or until the broccoli is tender, stirring once or twice.
- Taste and add additional salt and pepper if needed.
- Sprinkle with cheese, cover, and continue cooking until the cheese is melted.
- Top with chopped parsley if using.
