How are ya holdin' up out there? I know things are gettin' kinda crazy. 

Just when we think we are heading into the time of the year that we can settle into warm and comfy vibes and BOOM things go sideways!

It might not mean much, but I am here for ya, as much as I can be. 

Even if it is just working on recipes in my kitchen, or typing up a post, I am here.

That is why I decided to take a teensy break from the holiday-ish recipes and bring you a more comfort foody kind of recipe. 

I know sausage in itself might not seem like comfort food to some, but I have another recipe planned for this Sunday that will make my little plan much more clear so bear with me my darling foodies OK?

Now, why homemade sausage you are asking right?

Well, that is because storebought sausage can hide a multitude of things, some of which I do not even want to go into!

But, as it pertains to the low carb lifestyle, the main thing being CARBS.

Depending on who and how your storebought sausage is made, those carbs can start to really stack up. 

And I don't know about you, but there is nothing I hate more than thinking I am being a really good girl only to find out that carbs were snuck in on me without my knowledge via shady shi......errrrr ways like corn syrup, or other unnecessary ingredients or fillers.

Plus, I just like to know what is in my food, and honestly? I think it tastes better!

INGREDIENTS TO MAKE KETO ITALIAN SAUSAGE


  • Salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Red wine vinegar
  • Sweet Hungarian paprika
  • Ground fennel
  • Red pepper flakes (omit if you want a mild sausage)
  • Dried thyme
  • Dried rosemary
  • Dried oregano
  • Dried parsley
  • Ground pork

FAQ ABOUT KETO ITALIAN SAUSAGE


Do I have to make this with pork? No, Italian sausage is traditionally made with pork, but you can make this sausage with chicken, turkey, beef, etc. I do try to use a fattier cut of meat to get my macros in, and sausage is just usually fattier. So, if I am using chicken or turkey I go for thighs, beef I go for chuck.

Do I really have to let the sausage rest in the fridge for 8 to 24 hours? Well, I say yes, because it really allows the flavors to get together and party. I really try to let it go the full 24 hours. But I have also been that girl that has forgotten to plan ahead and needs to get the recipe going in 4 hours. So, just know that the longer you can let it sit the better OK? 

Can I freeze the uncooked sausage? How about the cooked sausage? Yes, you can freeze the uncooked sausage providing the ground pork you used was never frozen. I mean, if it was handled properly it technically can be refrozen, but I just don't like to mess with it. At that point, I would cook it and then freeze it. Uncooked sausage can be frozen for 2 to 3 months and cooked sausage can be frozen for 1 to 2 months.

This keto Italian sausage recipe is gluten-free, sugar-free, and is made with ingredients you probably already have in your kitchen!

Ingredients

  • 1 teaspoon salt
  • 1/2 teaspoon fresh cracked black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon red wine vinegar
  • 1 tablespoon sweet Hungarian paprika
  • 1 teaspoon ground fennel
  • 1/2 teaspoon red pepper flakes (omit if you want a mild sausage)
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1/2 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 pound ground pork

Instructions

  1. Mix all of the seasonings together in a small bowl.
  2. In a large bowl, sprinkle seasoning blend over the ground pork and combine well with your hands.
  3. Wrap the sausage in plastic wrap and place in the refrigerator for 8 to 24 hours.
  4. Form into patties or use in recipes in place of storebought sausage.
