OK,it is almost December, which in my book means it is time for ALL of the cookies!
Amiright?
Of course, I am!
This year I really made an effort to work on cookie recipes for y'all.
And that really means I was craving cookies so you gave me the excuse to work on low carb cookie recipes.
Yay, you!
So far we have Low Carb Berry Cream Cheese Sugar Cookies, Low Carb Pumpkin Chocolate Chip Cookies, and Keto Double Chocolate Chip Cookies here on the blog.
But I realized that the original cookie recipe, I mean the very first one I ever worked on, was not here on the blog.
Y'all know I am not much of a baker.
I mean, I piddle here and there. But I am not a hardcore down and dirty flour everywhere kinda girl.
I low key kinda wish I was, but alas, I am not.
That gene skipped a generation.
One afternoon Kevin was craving chocolate chip cookies.
Now, mind you, all of your usual baking suspects have long been gone from our home.
I have been living la vida low carb for about 2 years now, so AP flour, regular sugar, and all of that stuff is lonnnnnnnng gone.
And, low carb baking isn't just a matter of swapping out low carb ingredients for traditional ones.
Sooooo here I was with my low carb flour and sugar substitutes, sugar-free chocolate chips, traditional cookie recipes, low carb cookie recipes, and a Mr that was craving chocolate chip cookies.
😬
WHAT DO YOU NEED TO MAKE LOW CARB CHOCOLATE CHIP COOKIES?
- Superfine ground almond flour
- Sugar-free chocolate chips
- Powdered sugar substitute
- Salt
- Baking soda
- Butter
- Vanilla extract
- Heavy cream
But my mind was made up and I was on a mission to give the Mr what he was craving!
So, I rolled up my sleeves and got to work.
Now, let me backtrack here a bit.
I wanted to come up with a good cookie recipe, but I also wanted to use as few ingredients as possible. I was trying not to grab a bunch of ingredients that required a special trip to the store, or Amazon order to get the job done.
I have seen recipes that call for some specialty ingredients, and I want to give them a try because they have some fabulous reviews, but for this day, and purpose, I wanted a recipe that was easy to make, with ingredients we would all have on hand.
The end result was easy to make cookies that the Mr loved, that didn't require a ton of ingredients or a special trip to the store or order from Amazon!
FAQ ABOUT LOW CARB CHOCOLATE CHIP COOKIES
Do I have to use superfine almond flour? I only use superfine almond flour so I have not tried this recipe with any other kind. I have seen other recipes that call for regular almond flour.
Can I make this into a big batch recipe? Absolutely! I am baking for 2 here so I try to keep my recipes small batch, but by all means, double, or triple away!
How do I store the leftover cookies? These cookies store really well in an airtight container.
