Well, we made it through Christmas my friends!
I hope yours was wonderful.
Ours was quiet, just our immediate "bubble", which was fine.
When I was young (oh that made me sound old didn't it?) I loved big groups and parties, but now I really appreciate the more "intimate" settings.
We watched Christmas movies, listened to Christmas music, cooked together, ate some amazing food, and opened gifts.
I think my favorite part of the night was cuddles with the grandkids though 😊
Now, we look forward to the New Year.
My fave things are football and food! We always have a table full of things to choose from so we can graze while we watch the games.
Kevin requested my smoked salmon dip, and I usually serve that with crackers so I had to find a different vehicle by which to get it into our faces. So I did a search and found these delicious little blinis on The Keto Diet App.
I knew they would be the perfect way for us to enjoy our smoked salmon!
In a small bowl, combine the sour cream and cream cheese with a hand mixer. Stir in the capers, onion, dill, and lemon juice. Taste and add salt as needed.
INGREDIENTS FOR KETO BLINIS WITH SMOKED SALMON PATE
You will need:For the Smoked Salmon Pate
- Sour cream
- Cream cheese
- Capers, rinsed
- Red onion
- Lemon
- Pink sea salt
- Smoked salmon
- Fresh dill
- Fresh cracked black pepper
For the Blini
- Almond flour
- Baking powder
- Pink sea salt
- Eggs
- Unsweetened almond milk
- Butter
- Olive oil
HOW TO MAKE KETO BLINIS WITH SMOKED SALMON PATE
For the Smoked Salmon Pate
STEP 1
STEP 2
Chop 2 ounces of the smoked salmon and fold into the cream cheese mixture.
STEP 3
Cover and place in the fridge.
STEP 4
Reserve the rest of the smoked salmon for serving.
For the Blinis
STEP 1
Separate the egg whites and yolks. Place the egg yolks, melted butter, and almond milk in a mixing bowl. Gently whisk until combined
.
STEP 2
Fold in the almond flour, baking powder, and salt.
STEP 3
Carefully fold the egg whites into the batter just until combined. Don’t overbeat as this will cause the blinis to flatten.
STEP 5
Heat a skillet over medium-low heat using just enough olive oil to coat the bottom. Spoon a heaping teaspoon full of batter per blini into the pan and cook for about a minute or until golden. Flip and repeat on the other side.
STEP 6
Repeat until all the batter is used up (you should be able to make approx 16 blinis).
STEP 7
Place cooked blinis on a baking sheet lined with parchment paper.
STEP 8
Top each blini with a smear of the smoked salmon pate, a curl of the remaining smoked salmon, garnish with a bit of fresh cracked black pepper, and some fresh dill.
FAQ ABOUT KETO BLINIS WITH SMOKED SALMON PATE
Can I make these ahead of time? You can make the pate and blinis the day ahead and store them separately in airtight containers in the fridge, then put the blinis together the day of.
How do I store leftovers? Unfortunately, once the blinis have been topped with the pate they don't store well, but, if you have bilins that have not been topped, you can store them, as well as the pate, in the fridge for up to 3 or 4 days.
Can I make the blinis nut-free? I have not tried to make them with coconut flour yet, but I will be trying very soon! Coconut flour is much more absorbent so the ratio of flour to moisture would be much different.
These little bite-sized gems are the hit of the party whenever I make them, and I tend to hoard them if I am given half the chance.

It is funny to think that, up until I moved to Washington in 2006, I used to hate salmon. Now, I can't get enough of it!
The Mr is super excited because next month he is ordering a boat.
This is a life long dream of his!
He won't get it until March but, once he gets it, he is hoping to keep the fridge and freezer stocked with an endless amount of fish of all kinds. So hopefully you will be seeing a LOT of yummy fish recipes here on the blog.

Ingredients
For the Smoked Salmon Pate
- 1/4 cup sour cream
- 4 ounces cream cheese, softened
- 1 tablespoon capers, rinsed, drained, and chopped
- 1/4 small red onion, diced small
- 1/2 lemon, juiced
- Pink sea salt
- 6 ounces thinly sliced smoked salmon
- Fresh dill for garnish
- Fresh cracked black pepper
For the Blini
- 1/2 cup + 1 tablespoon almond flour
- 1/2 teaspoon gluten-free baking powder
- Pinch of pink sea salt
- 2 large eggs
- 3 tablespoons unsweetened almond milk
- 1 tablespoon unsalted butter, melted
- Extra virgin olive oil
Instructions
