Aaahhhh Christmastime, and all of the sweet treats it brings ๐งก
When I first went low carb I thought I would have to say goodbye to all of that forever, and I was so sad.
But then I thought, heck no!
If there are vegan meat substitutes, there are keto cookies damn it!
Of course, there are, and just a few searches brought me more cookie recipes than my little brain could handle.
That set me on a course of trying a kabillion and one cookies. Which of course the Mr did not mind.
That was where cookies like these Low Carb Chocolate Chip Cookies, Low Carb Berry Cream Cheese Sugar Cookies, Low Carb Pumpkin Chocolate Chip Cookies, and Keto Double Chocolate Chip Cookies came from.
INGREDIENTS NEEDED FOR KETO SNOWBALL COOKIES
- Superfine almond flour
- Powdered erythritol
- Sea salt
- Butter
- Real vanilla extract
If y'all have followed me for any length of time, you know that I am not a big fan of complicated recipes, especially when it comes to baking.
This one is super easy!
I mean it is what I refer to as stupid easy, which is perfect for me ๐
A handful of ingredients that are in most low carb pantries already, a few baking supplies that we all already have, a few minutes, and you have some delicious cookies.
The hardest part is waiting for them to cool, and please let them cool because they do taste so much better if you allow them to cool completely.
Otherwise, they taste a bit raw or underbaked, and we don't want that!
I will admit that these cookies are at the top of my baking list for any time of the year, not just Christmas.
#1 because of how easy they are to make.
#2 because the grandkids love them.
Hmmmm maybe I should rearrange that order because we all know that the grandkids should be #1 right?
But seriously, when your sweet loving granddaughter, that tells it like it is no matter what, loves a low carb treat?
Yup, you know you have a winner on your hands there!
So this is a keeper and a year-round treat in my book.
FAQ ABOUT KETO SNOWBALL COOKIES
My cookie dough seems to dry, what do I do? You can add more softened butter, a teaspoon at a time.
My cookie dough seems to wet, what do I do? Just add a little more flour, one tablespoon at a time until the dough just comes together.
Can these cookies be made vegan? Yes, just substitute solid refined coconut oil for the butter in the recipe.
Are these cookies paleo? No, but, if you substitute powdered coconut sugar for the powdered erythritol they would be.
Can I freeze the cookies? Sure, if you are like me and want to make a ton of cookies to give away, freeze them in a single layer on a cookie sheet up to 2 months ahead of time. Defrost in the refrigerator and dust with more powdered sugar if you like.

Keto Snowball Cookies

Ingredients
- 2 1/2 cups superfine almond flour
- 3/4 cups powdered erythritol, divided
- 1/4 teaspoon of sea salt
- 1/2 cup butter, room temperature
- 2 teaspoons real vanilla extract
Instructions
- Preheat the oven to 350 degrees F.
- Add the almond flour, 1/2 cup of the powdered erythritol, and sea salt to a large bowl and mix to combine. Add the butter and vanilla and mix until a soft dough forms.
- Using a small cookie scooper, scoop the cookie dough and roll into 24 balls.
- Place them on 2 baking sheets, spacing 1-inch apart.
- Bake for 10 minutes, then let cool slightly before transferring to a cooling rack.
- Dust with the remaining powdered erythritol (I use this small, fine-mesh sieve).
- Allow the cookies to cool completely, they will taste undercooked if you eat them while they're warm.
