Well, here we are my friends, the last post before Christmas 😮

Annnnnnd I still have presents to wrap, and food to prep, and cleaning to do. At least I have all of my shopping done. So there is that.

This is a low carbified version of the stew my grandmother used to make every Christmas eve. Sometimes she would make it for New Year's as well. Even as a kid I looked forward it.
It was so rich and creamy. The holidays really didn't start without it!

FAQ ABOUT OYSTER STEW
Do I have to use fresh/raw oysters? Well, first let me say that this works best with fresh oysters because they have more flavor, as well as they come in their "liquor". But, I have been known to make this with cooked oysters in a pinch. I used clam juice for the liquid you could get from the fresh oysters. It wasn't the same, but it did calm my craving.
Can I make this dairy-free? Yes, I have subbed coconut milk, the canned kind, for the heavy cream when serving this to dairy-free peeps.
How do I store the leftovers? Store any leftovers in an airtight container in the fridge for up to 3 days. I would not freeze it.
This year I am hoping to get the grandkids to give this stew a try.
One is 5, one is 3.
I know I started out very young with this stew and it is a part of my holiday memories going back as far as I can remember, so I would love for it to be a part of theirs as well.
But one is pretty picky, so I am not going to hold my breath on that one!
Do you have a holiday traditional dish that you remember from your childhood?
Maybe something that most kids wouldn't like?
I would love to hear about it! Leave me a comment and tell me about it!!
Merry Christmas everyone 🎄
