This Keto Tomato Bisque is the stuff of keto dreams my friends!
One of my hands down, all-time favorite comfort food meals has always been a bowl of creamy tomato soup and a grilled cheese sandwich.
Once I went keto I figured that was all in the past, and I was sad, very verrrrrrrry sad.
I knew tomatoes were higher in carbs AND everything else that goes into that old standby can o' soup is pretty much a no-no too.
Then I realized that tomatoes weren't necessarily off the table. If you balance your day and don't eat them all of the time, you can allow yourself a bowl of this soup when the craving strikes you!
As for that grilled cheese?
I have worked my way through a ton of store-bought keto bread, and most of them were awful. The only one I have found that is acceptable to my palate is Sola bread, if you want to buy an already made bread. They have several different kinds, as well as hamburger buns, hotdog buns, and now bagels too!
If you prefer to "make" your bread, but want an easy option, Wholesome Yum has a new bread mix out that I am SO excited about.
So now tomato soup and grilled cheese are back on my menu and I can't tell you how happy that makes me!
You will need:
- Bacon
- Garlic
- Tomato paste
- Crushed tomatoes
- Chicken bone broth (homemade or storebought)
- Organic onion powder
- Pink sea salt
- Fresh cracked black pepper
- Dry sherry
- Heavy cream (can sub canned coconut milk)
- Fresh basil
Cook bacon in a large soup pot over medium-high heat until it begins to crisp. Remove half of the bacon and drain on paper towels.
STEP 2
Reduce heat to medium; add garlic and cook for a minute, then add the tomato paste and stir to combine. Cook for 2 minutes.
STEP 3
Stir in crushed tomatoes, chicken bone broth, onion powder, salt, and pepper to taste.
STEP 4
Bring to a boil, reduce heat to low, and simmer for 20 minutes, stirring occasionally
STEP 5
Stir in the sherry and cream, simmer for 10 minutes, stirring frequently.
STEP 6
Add half of the basil and remove soup from heat. Blend with an immersion blender (or transfer to a blender and blend in small batches) until smooth.
STEP 7
Can I make Keto Tomato Bisque paleo or vegetarian? Absolutely! You can sub canned coconut milk for the heavy cream and leave out the bacon. Just use olive oil or coconut oil in place of the bacon fat in step 2.
How do I store the leftover Keto Tomato Bisque? Store your leftover bisque in an airtight container in the fridge for up to 4 days.
Can I freeze Keto Tomato Bisque? Sure! I know some people don't agree with freezing dairy but heavy cream doesn't curdle like another dairy can. With that being said, I put my frozen soup in the fridge overnight and then reheat it slowly on the stove, stirring frequently. If the soup is too thick you can thin it with bone broth, or even water.
I freeze all of my soup in these microwavable, dishwasher safe containers and use these easy to remove labels.

This soup, like my Easy Cauliflower and Cheese Soup and, soon to be posted, Keto Cream of Mushroom Soup, is a soup that I love to make on meal prep days because it is so simple.
I don't know about you, but I love to have a week (or two) worth of freezer meals ready to go for those nights when the "mehs" hit me.
You know those nights?
When you and your significant other are looking at each other saying "What do you want for dinner?" "I don't know, what do you want for dinner?".
I always try to plan ahead but we all know those nights happen.

Keto Tomato Bisque with Bacon

Ingredients
- 6 slices bacon, chopped
- 3 cloves garlic, minced
- 3 tablespoons tomato paste
- 1 28-ounce can crushed tomatoes
- 3 cups of chicken bone broth (homemade or storebought)
- 1 tablespoon organic onion powder
- Pink sea salt
- Fresh cracked black pepper
- 1 cup dry sherry * See Notes
- 1 1/2 cup heavy cream (can sub canned coconut milk)
- 1/4 cup fresh basil
Instructions
- Cook bacon in a large soup pot over medium-high heat until it begins to crisp. Remove half of the bacon and drain on paper towels.
- Reduce heat to medium; add garlic and cook for a minute, then add the tomato paste and stir to combine. Cook for 2 minutes.
- Stir in crushed tomatoes, chicken bone broth, onion powder, salt, and pepper to taste.
- Bring to a boil, reduce heat to low, and simmer for 20 minutes, stirring occasionally
- Stir in the sherry and cream, simmer for 10 minutes, stirring frequently.
- Add half of the basil and remove soup from heat. Blend with an immersion blender (or transfer to a blender and blend in small batches) until smooth.
- Place bisque in serving bowls; top with a drizzle of cream (optional), the remaining bacon, and basil
Notes:
Use a good dry drinking sherry, not cooking sherry.
Can use chicken bone broth in place of sherry if you prefer. The resulting soup will not be as rich, but it will reduce the net carbs per serving by approx 2.
