From corned beef tacos (hello, California roots!) to Reuben sliders, I'll happily enjoy corned beef any way I can get it. But this Keto Corned Beef Hash? It's hands-down my favorite way to transform leftovers into something extraordinary.

    The best part? You don't have to wait for St. Patrick's Day to enjoy this low-carb breakfast beauty. Between local grocery stores and Costco, corned beef is available year-round. And if you can't find pre-packaged corned beef, grab a brisket and some pickling spice - your Instant Pot will do the rest!

    • 2 tbsp olive oil
    • 3 cloves garlic minced
    • 2 cups riced cauliflower
    • 1 tbsp organic onion powder
    • 1 lb cooked corned beef diced
    • 1/2 cup keto compliant mayonnaise
    • 1 tbsp hot sauce I used Sriracha sauce
    • 1/2 tsp prepared horseradish
    • 1/2 tsp organic onion powder
    • 1/2 tsp Tamari
    • 4 large eggs
    • fresh flat-leaf parsley chopped

    Instructions
     

    • In a large cast-iron skillet, heat olive oil over medium heat.
    • To the pan, add the garlic. Sauté for a minute or two until garlic is fragrant and golden.
    • Add riced cauliflower and onion powder and cook until it is cooked through and begins to turn golden brown.
    • Add the corned beef to the skillet. Cook, stirring often until the corned beef edges begin to crisp.
    • Using a large spoon, make 4 wells in the corned beef mixture. Make them deep enough that the bottom of the pan is exposed in the center of the hole.
    • Crack an egg into each well. Reduce heat to medium-low and cover the skillet. Allow the eggs to cook until the whites are done and the yolk is still runny.
    • Remove from the heat.
    • Sprinkle the hash with fresh parsley and drizzle the Russian Dressing over the top of the before serving.
