I know that corned beef is not really a traditional Irish thing. It is an Irish American thing, but that is OK I love it, as does my whole family.
Once I discovered cooking it in the Instant Pot I knew that I would never cook it any other way! It comes out tender and juicy every.single.time. Actually, before I could even make the decision to always make my corned beef in the Instant Pot, Kevin announced that he never wants it cooked any other way again.
So we will let him think he made that decision I guess 😉

Place the trivet into the Instant Pot. Add the garlic, and pickling spice into a 6-qt Instant Pot. Place the brisket on the trivet. Add the beef bone broth.
Select manual setting; adjust the pressure to high, and set time for 85 minutes. When finished cooking, quick-release pressure.
Remove brisket from the Instant Pot and wrap in foil to keep warm.
Add the turnips and carrots, and top with cabbage. Season with salt and pepper, to taste.
Select manual setting; adjust the pressure to high, and set time for 8 minutes. When finished cooking, quick-release pressure.
Thinly slice corned beef against the grain and serve with the turnips, carrots, and cabbage, garnished with mustard and parsley if desired.

- Corned beef brisket
- Beef bone broth
- Garlic
- Turnips
- Carrots (can omit for strict keto)
- Cabbage
- Pink sea salt
- Freshly ground pepper
- Fresh parsley leaves
- Whole grain mustard
HOW TO MAKE KETO INSTANT POT CORNED BEEF AND CABBAGE
STEP 1
Rinse brisket with cold water and thoroughly pat dry.
STEP 2

FAQS ABOUT KETO INSTANT POT CORNED BEEF AND CABBAGE
Can I use another vegetable in place of the turnips? Yes, other low carb potato substitutes are radish, celery root, rutabaga, kohlrabi, or cauliflower.
Can I cook this Keto Corned Beef and Cabbage in the slow cooker? Yes, you will have to up the amount of liquid. You want to almost completely cover the corned beef brisket with beef bone broth, or water. Cook for 5 to 6 hours on high or 8 to 10 hours on low. Add the vegetables at the end to keep them from becoming mushy.
How do I store the leftover corned beef and cabbage? Store it in an airtight container in the fridge for up to 4 days, or in the freezer for 3 months.

This really is one of my favorite ways to enjoy a beef brisket because it produces such a tender juicy roast. I could eat it by itself all day long and be happy! But the leftovers are just as good IMO I have been known to just nibble on them cold!

Cooking it in the Instant Pot is really the perfect set it and forget it way to cook a brisket because it is typically a tougher cut of meat. The Mr loves to cook brisket in the smoker, and it is amazing, but I don't like to fuss with my meals so popping it into the IP, setting the time, and coming back when it is done and delicious is the way I roll!
