Keto Instant Pot Corned Beef and Cabbage: The Easiest Way to Perfect Irish-American Comfort! 🍖

Let me tell you about my love affair with St. Patrick's Day! Long before a DNA test confirmed my Irish heritage this past Christmas, I was that enthusiastic person decked out in green from shamrock glasses to antenna toppers. Turns out my Celtic blood knew what it was doing all along!

Now, let's address the elephant in the room - yes, corned beef isn't traditionally Irish but rather Irish-American. But when something tastes this good, who's counting? And since discovering the Instant Pot method, this keto-friendly version has become our family's absolute favorite way to prepare it.

In fact, my husband Kevin made the executive decision (or so he thinks 😉) that we're never cooking corned beef any other way again. Why? Because this method produces perfectly tender, juicy meat every single time - no fussing, no babysitting the pot, just set-it-and-forget-it perfection.

What makes this recipe truly special isn't just its simplicity - it's how versatile the leftovers are (if you have any!). From Keto Reuben Sliders to Keto Corned Beef Hash, one cooking session sets you up for multiple delicious meals. Though I'll admit, sometimes those leftovers don't make it to other recipes because they're so good straight from the fridge!

While my husband loves smoking brisket low and slow, I prefer this no-fuss approach. The Instant Pot transforms this typically tough cut into fork-tender perfection while keeping everything keto-friendly. It's the perfect solution for those of us who want amazing results without spending all day in the kitchen.

🥘Keto Instant Pot Corned Beef and Cabbage Ingredient Notes

Here, I explain the best ingredients for my Keto Instant Pot Corned Beef and Cabbage recipe, what each one does, and substitution options. For the exact measurements, see the recipe card below.

All of the ingredients needed to make keto corned beef and cabbage in an Instant Pot.
    • Corned Beef Brisket: Choose a flat cut for even cooking. Substitution: Point cut works but may cook less evenly.
    • Beef Bone Broth: Creates rich cooking liquid. Substitution: Regular beef broth, but bone broth adds more nutrients and can be higher in carbs.
    • Turnips: Low-carb potato replacement. Substitution: Radishes, rutabaga, or celery root works well too.
    • Savoy Cabbage: Holds texture better than regular cabbage. Substitution: Regular green cabbage works.
    • Pickling Spice: Provides classic corned beef flavor. Substitution: Use a packet that comes with beef, or make your own blend.
    • Pink Salt: Enhances flavors while providing minerals needed on keto. Substitution: Regular sea salt works but lacks mineral benefits.
    • Whole Grain Mustard: Adds traditional serving touch. Substitution: Any mustard you prefer.

The printable recipe card at the bottom of the page contains a detailed list of measurements and instructions.

Storing and Reheating Your Keto Instant Pot Corned Beef and Cabbage

    Storage and Reheating

    Storage Instructions:

    1. Refrigerator Storage:
      • Store meat and vegetables separately
      • Keeps fresh for 4-5 days
      • Store in airtight containers
      • Keep meat in some of its cooking liquid
    2. Freezer Storage:
      • Freeze corned beef for up to 3 months
      • Wrap tightly in foil, then freezer bag
      • Not recommended to freeze vegetables
      • Label with date and contents

    Reheating Instructions:

    1. Whole Brisket:
      • Instant Pot Method:
        • Add 1 cup of broth to the pot
        • 5 minutes high pressure
        • Natural release 5 minutes
      • Oven Method:
        • 350°F covered with foil
        • Add a splash of broth
        • Heat until warm (about 20-25 minutes)
    2. Sliced Meat:
      • Stovetop: Heat slices in broth
      • Microwave: Cover with damp paper towel
      • Heat in short intervals
      • Don't overheat, or the meat will toughen
    3. Vegetables:
      • Best reheated separately
      • Quick steam or microwave
      • Avoid overcooking

    Pro Tips:

    • Always reheat with some liquid to maintain moisture
    • Slice meat before storing for easier reheating
    • If freezing, freeze meat in cooking liquid
    • Vegetables are best fresh but can be reheated gently

    💭My Recipe Tips

    1. Perfect Your Beef Selection: Look for flat-cut corned beef brisket if possible - it cooks more evenly. Rinse thoroughly before cooking to remove excess salt and pat completely dry.

    2. Liquid Matters: Don't be tempted to add more liquid than what is called for. The meat and vegetables will release their own juices, and too much liquid can dilute flavors.

    3. Timing Strategy: The 85-minute cooking time is for a 3-pound brisket. Add about 5 minutes per additional half pound. Always cook meat first, then vegetables separately.

    4. Vegetable Success: Cut vegetables in uniform sizes for even cooking. Don't skip piercing the turnips - it helps them cook properly and absorb flavors.

    5. Slice It Right: Always slice meat against the grain for maximum tenderness. Let it rest in foil while cooking vegetables to retain juices.

    6. Pressure Release: Quick release is important - natural release can overcook the vegetables. However, if the release seems too forceful, release it in short bursts.

    7. Serving Tips: Save some of the cooking liquid to serve with meat or for reheating leftovers. A dollop of whole-grain mustard adds traditional flavor.

FAQ about Keto Instant Pot Corned Beef and Cabbage

Why does my meat need to be on the trivet?

The trivet keeps the meat elevated above the liquid, allowing it to steam rather than boil. This results in more tender, flavorful meat that isn't waterlogged.

My meat seems tough - what went wrong?

This usually means it needs more cooking time. Every piece of meat is different; add 10-minute intervals under pressure until fork-tender.

Can I cook a larger brisket?

Yes, just add about 5 minutes per additional half pound. Make sure your Instant Pot is large enough - the meat should fit without cramming.
