As we hit the end of February my thoughts turn to springtime.
Maybe it is my wishful thinking that it will hurry up and get here. I am tired of being cold, and wet!
Maybe it is my excitement thinking about getting my new raised bed garden finished and ready to be planted. The Mr is building my beds for me in the next couple of weeks and my grow light, and heating pads, and seeds, and seed pots are all here ready to be set up this weekend.
I have a whole corner of my office completely set up and dedicated to growing my little seedlings, and boy oh boy did I go crazy with the number of seeds I purchased! But, I just couldn't help myself. I had so much fun with the few things I grew in my back porch quarantine container garden I just had to up my game for this gardening go-round. I hope it all works out!
Or, maybe it is just that I love lemon and berries, and spring just calls for those flavors.

I always say lemon reminds me of sunshine, so no matter what the weather if I am eating a lemon treat it makes me feel bright and sunny inside.
Weird? Probably, but that is just how I roll 🤣
This year I decided to take the uber-popular thumbprint cookies I made for Christmas, and make them "springy" by adding my quick low carb lemon curd to them.
And boy oh boy am I glad I did!
And so is the family.
STEP 1
Preheat your the to 350 degrees F.
In a medium-sized bowl, whisk the almond flour, brown monk fruit, xanthan gum, and sea salt. Add the butter and vanilla and mix until a dough forms.
Roll an even tablespoon of dough into 12 balls and place them on a baking sheet. Make an indent in each with your thumb.
Bake in the oven for 10 minutes. When you remove them from the oven, you may need to push the indents back down a little with a spoon.
Let them cool for 5 minutes then transfer the cookies to a cooling rack to cool completely.
Spoon a teaspoon of the lemon curd into each cookie.
