I know y'all have heard me blather on and on about how much I love St Patrick's Day, and corned beef, but let me continue along that line and gush over these sandwiches!
This was one of my favorite ways to eat corned beef, and one of the most popular recipes on the blog back in my carbalicious days. So you know that I had to figure out how to make this fit into my low carb lifestyle!
I had thought all was lost until I found Sola burger buns!
Then the clouds parted and shamrocks and rainbows came shining through.
Yes, you can make homemade keto burger buns but I am self admittedly a bit lazy when it comes to somethings and baking can be one of them. Also, to date, I have not been super lucky when it comes to making keto bread. I am working on it but man oh man it has been a process!
So a low carb bun that tastes good and doesn't require me to bake? Ya, I was super excited about that!
These little sliders are now back on my menu, multiple times a year.
Luckily the Mr.loves them as much as I do, and what is not to love?
Tender corned beef topped with sauerkraut, melty Swiss cheese, and a homemade Russian dressing?
Who doesn't want to sign up for that?
STEP 1
In a small bowl, combine the mayo, hot sauce, horseradish, onion powder, and Tamari.
Cover and place in the refrigerator.
Preheat broiler to high.
On a baking sheet, place the bottom buns.
Top with shredded corned beef, 1 to 2 tablespoons of sauerkraut, and 2 quarters of the sliced cheese. Place in the oven and broil until the cheese melts.
Smear the top bun with a good amount of the Russian dressing and place it on top of the melted cheese.

FAQS ABOUT KETO REUBEN SLIDERS
Are these Keto Reuben Sliders really OK for the keto diet? There are different approaches to the keto diet. Strict keto, and lazy aka dirty keto. Dirty keto allows for things like wheat or some processed foods as long as they fit into your macros. These sliders won't kick you out of ketosis but, if you are strict keto, you can make your own buns, use chaffles (see a link below), or even use romaine lettuce leaves and make a wrap.
Can I freeze these Keto Reuben Sliders for later? Yes, I wrap them in parchment-lined foil and freeze them as a meal prep lunch. To reheat just remove them from the foil, wrap them in a damp paper towel, and reheat in the microwave.
Could I make these with different meat? Sure, I have made Buffalo Chicken sliders like this. Just toss some shredded chicken in Buffalo sauce and top with your favorite cheese and some ranch dressing or this blue cheese sauce.

Like I have mentioned, I love all things corned beef so these of course are a favorite of mine. I have been known to make an entire corned beef roast just so I can have these sliders, so that tells ya something!
I am also a huge fan of meal prepping so this is a great way to make a grab-and-go lunch or even a light dinner. I have paired this with a side salad for dinner tons of times!
Also, this is an idea that will translate into the use of other leftovers. Have some leftover Mexican shredded beef? Use that, some cheddar/jack or pepper jack cheese, and salsa. Leftover Buffalo chicken? Top it with your fave cheese and ranch or the blue cheese sauce I linked above!

- 2 cups zero carb mayonnaise
- 4 to 6 tablespoons hot sauce (I used Sriracha sauce)
- 2 teaspoons prepared horseradish
- 2 teaspoons organic onion powder
- 2 teaspoons Tamari
- 8 Sola sweet slider buns (or homemade)
- 4 slices Swiss cheese slices, quartered
- 2 cups sauerkraut, drained
