Oh my stars gang, these Valentine Hot Chocolate Bombs are the shizz!

I know it always takes me a hot second to get with the trends, but I am so glad I did. I love hot chocolate and thought it was something I would just be left to dream about once I went low carb. Color me so happy that it is not true!

Then add on top of it that I am getting these out to you right in time for Valentine's Day.

    Woohooooo ??

Now I have our Valentine menu completely planned.

Brunch will be these sugar-free keto hot chocolate bombs, with Salmon Eggs Benedict.

Dinner will be filet mignon, crispy skin black cod, Ceasar salad, and Roasted Asparagus with Garlic and Parmesan.

How good does that sound? I am drooling just thinking about it!

Now, I know these might seem like they are tough to make but trust me, they are not. I was able to make them perfect the very first time.

So, if I can do it, you can too!

HOW TO MAKE KETO VALENTINE HOT CHOCOLATE BOMBS

    STEP 1

Add Choc Zero chocolate baking chips to a bowl and melt in the microwave in 30-second increments stirring in between until smooth.

    STEP 2
Fill the molds with melted chocolate making sure to only fill the sides of the mold all the way to the top (keep the inside hollow for the hot chocolate mix and marshmallows). Use the back of a spoon to smooth the chocolate onto the mold.

    STEP 3
Place in the freezer for about 10-15 minutes or until they are easy to pop out. Very carefully remove the chocolate from the mold by pulling one direction on the silicone mold and then the other. If they don’t pop out easily, place them back in the freezer for a few more minutes.

    STEP 4
Heat a plate in the microwave for about 15 to 20 seconds (be careful taking it out as the plate will be hot), take one chocolate bomb half and press the open part onto the hot plate for a few seconds to melt the chocolate bomb half and twist it on the plate a bit to smooth the edges.

    STEP 5
Using one chocolate bomb half, add the hot cocoa mix and some marshmallows pieces.

    STEP 6
Heat the plate again to smooth the other half of the chocolate bomb.

    STEP 7
Connect the two half pieces of chocolate bomb together to seal it.

    STEP 8
Repeat to make the remaining bombs.

    STEP 9
Place the chocolate bombs in the refrigerator.

    STEP 10
Heat the remaining chocolate chips and the coconut oil in a microwave-safe dish in 30-second increments, stirring in between until the chocolate is melted and smooth.

    STEP 11
Add a few drops of the red food coloring (you can add more until you reach the desired color).
    Stir well to combine.

    STEP 12

Remove the hot chocolate bombs from the refrigerator and decorate by drizzling the melted chocolate over top and allow to dry.

    STEP 13

To use a hot cocoa bomb, carefully place one in the bottom of a cup.

    STEP 14

Heat unsweetened almond, or coconut, milk separately in the microwave or on the stovetop until it begins to boil.

    STEP 15

Pour the hot milk in the cup over the top of the hot cocoa bomb. Stir and enjoy!

    STEP 16

Top with whipped cream and red glitter to make it extra special (optional).
