I was the weird kid that, back in the day when they served spinach in school lunches, would gladly scoop up everyone's unwanted side and gobble it up while they all looked at me like I had lost my damn mind.
When it comes to the creamed version of this leafy green I firmly believe there are just two camps.
Those that love it, and those that have never had a good version of it.
This is that version, my friends.
Not only is it super easy to make, but it tastes so good you will never want any other version of it!
This Easy Creamed Spinach fits nicely into the keto lifestyle but isn't just for low carb peeps. Spinach is one of those special ingredients that brings so much to the table (no pun intended).
A serving of spinach contains:
- Calories: 23
- Protein: 2.9 grams
- Carbs: 3.6 grams
- Sugar: 0.4 grams
- Fiber: 2.2 grams
- Fat: 0.4 grams
For those of us living la vida low carb, you subtract that 2.2 grams of fiber from the 2.9 grams of carbs and you get 1.7 grams of net carbs per serving of spinach.

INGREDIENTS NEEDED TO MAKE EASY CREAMED SPINACH

- Bacon
- Fresh baby spinach
- Cream cheese
- Sour cream
- Parmesan cheese
- Organic garlic powder
- Organic onion powder
- Nutmeg
- Red pepper flakes
- Pink sea salt
- Fresh cracked black pepper
Heat a large skillet over medium-high heat and cook the bacon until crisp. Place on a paper towel.
STEP 2
Reduce the heat to medium and add the baby spinach to the skillet, saute until the spinach wilts and is heated through,

Add the cream cheese to the pan. Stir together until cream cheese has melted.
STEP 4
Add sour cream, parmesan, garlic powder, onion powder, nutmeg, red pepper flakes, and salt and pepper, and mix together until completely combined.
STEP 5
Chop the bacon and sprinkle over the top.
Can I use frozen spinach instead of fresh? I prefer the fresh baby spinach in this because it has a mild sweet flavor, but yes you could use frozen if you need to, or prefer. You can use 10 ounces of frozen. Make sure it is thawed and drained. I wring it out in a clean kitchen towel to get as much water out as possible.
Can I make this Easy Creamed Spinach ahead of time? Yes, you can. Just allow the creamed spinach to fully cool before placing it in the refrigerator. Make sure to press some plastic wrap directly onto the surface of the creamed spinach to prevent skin from forming. Place the creamed spinach in a skillet and reheat over low heat just until it begins to bubble.
How do I store leftover Easy Creamed Spinach? You can store your leftovers in an airtight container in the refrigerator for up to 3 days.

It also reheats perfectly. Just make sure to reheat it on low so it comes up to temp without burning. Once it is bubbly and warm you are good to go.
I wouldn't recommend freezing it though because dairy has a tendency to get a bit grainy due to the fact that the fat separates during the freezing process. It doesn't change the flavor, but it isn't very pretty to look at.
