    Y'all, I am sooooo happy to be bringing this keto bread recipe to you because it is the BEST keto bread recipe I have ever made!

    Just like most of you, going keto has been rough on me when it comes to cravings. I missed the pasta, potatoes, and rice, all of those carby things that we grew up eating.

    But most of all I missed bread! 

    I was the PB&J girl, the grilled cheese sandwich girl, the french toast on the weekend girl. Bread was such a huge part of my life pre-keto. But I actually did pretty well with those cravings for a couple of years after I started the low carb lifestyle.

    Then I got sick last February and cooking became something that was so hard for me. I had to rely on the Mr. to do most of it or eat things that were easy to grab and make. So bread snuck back into my diet. A quick sandwich was easy to throw together for lunch.

    But man, the carbs added up so fast doing that. I mean there are 13 grams of carbs in just one slice of regular white bread. Make a sandwich and you are packing in 26 grams of carbs before you even put anything between those slices! 

    Most people try to stay below 30 net carbs for the day so you have blown that in just one meal!!

    No thanks!

    But, with me trying to get back on track, yet craving bread like crazy, I hit the interwebs to try to figure out what I could make that would feed those cravings without blowing my carb count out of the water. I had already tried just about every store-bought "keto" bread with very little luck. I didn't mind the Sola bread I found and still use it from time to time, but it is super pricey and still kinda left me wanting more. It is good in a pinch, but just not 100% what I was craving. 

    That is when I found Diedre's low carb bread on YouTube. I was shocked by how amazing the bread looked in the video. 

    I quickly purchased all of the ingredients,  including a bread machine, and got to baking! 

    After giving her recipe a try, I checked out a few more low carb bread recipes I found. Most just had minor tweaks here and there, some used baking powder, some used lupin flour, and some used psyllium husk powder. 

    I eventually settled on this version as I feel it has the best look, texture, and taste. I now make this bread every single week! Even my non-keto son had no clue it was keto!!

    These are the ingredients necessary to make The Best Keto Bread.

    This is a basic breakdown of the steps involved in making The Best Keto Bread. You will find the full directions in the recipe card at the bottom of the post.

    Adding the warm water, honey, and yeast to the bowl of your breadmaker, stir and allow to sit for 7 minutes. Step 1.

    Storage

    Store the bread in a cool dry place like this bread box or this bread bag.

    You can slice the bread and then freeze it. Then thaw or toast the slices as you need them.

    💭Top tip

    Keep bread in a cool dry place. I purchased this bread keeper and store my bread in it. I slice it as needed and my bread stays good for a week, or more. You can also use a bread bag.

    I purchased this bread slicer to help me make even thin cuts because I am a bit wild with my cutting skills at times.

    FAQ about Keto Bread

    Can I have honey on the keto diet?

    Normally the answer would be no. Honey is a "healthier" alternative to sugar but is high in calories and carbs, so not keto-approved. However, in this recipe, the amount is extremely small and the yeast used to allow the bread to rise actually "eats" the honey so the carbs are consumed by the yeast. The honey in this recipe will not spike blood sugar or kick you out of ketosis.

    What is vital wheat gluten?

    Vital wheat gluten is like a superhero when it comes to low-carb baking. It is a "flour" that is all gluten and very little starch. It’s not technically flour itself, but it’s made from wheat flour that has been hydrated to activate the gluten and then processed to remove everything but that gluten. It’s then dried and ground back into a powder. It helps to improve the elasticity and rise of the raw dough and the crumb and chewiness of the finished bread.

    Can I eat vital wheat gluten on the keto diet?

    Yes, vital wheat gluten is low in carbs and high in protein it is considered to be keto-friendly. It does not spike blood sugar. However, if you are gluten-free it will not work for you. I am gluten-sensitive and can consume it though.

    Is oat fiber keto-friendly?

    Yes, it is, however many people confuse oat fiber with oat flour. Oat flour is not keto-friendly, while oat fiber is. Although, you need to be careful when choosing the oat fiber you use. Many are actually pretty high in carbs. The brand I listed contains zero net carbs.

    Is this keto bread really keto-friendly?

    It depends on what type of keto diet you are on. If you are strict keto I would say probably not. Strict keto avoids all wheat, sugars, etc. If you are on a lazy or dirty keto diet, this bread is perfectly acceptable.

    • 1 cup warm water (100 to 115 degrees F)
    • 1 tsp honey
    • 1 tbsp Dry Active yeast
    • 2/3 cup Ground Golden flax meal
    • 1/2 cup oat fiber
    • 1 1/4 cup vital wheat gluten
    • 4 tbsp Besti Monk Fruit and Allulose Powdered Sweetener
    • 1/2 tsp xanthan gum
    • 1 tsp pink salt
    • 2 large eggs room temperature, slightly beaten
    • 2 tbsp unsalted butter softened

    • Add the warm water, honey, and yeast to the bowl of your breadmaker, stir and allow to sit for 7 minutes.
    • Mix the dry ingredient together in a medium bowl.
    • Add the eggs to the breadmaker, then add the dry ingredients and the softened butter.
    • Set the breadmaker white bread loaf.
    • Set the crust darkness level, I use light.
    • Keep bread in a cool dry place. I purchased this bread keeper and store my bread in it. I slice it as needed and my bread stays good for a week, or more.

      Love love this bread!! It's the only one that I make now that I am on keto. I have tried dozens of keto bread recipes and this is the only one I make now.

      If you look at the top of the recipe card it says 18 slices so the nutritional info is based off of that. You can always check the servings on my recipe cards and that will tell you what the nutritional info is based on.

      Would this dough work for pizza dough? I realize it's a bread machine recipe, to bake bread (which is fabulous, by the way!). But, my machine has an option to just make the dough. If love to have a pizza dough.

        I currently use this as my pizza base https://bobbiskozykitchen.com/keto-flatbread-sandwich-wraps/ but am working on a pizza dough recipe that uses King Arthur keto flour, although that will not be gluten-free.

      Can I substitute lupin flour in equal parts for flaxseed meal?

        The flax meal helps to make the bread moist and tender, I do not think the lupin flour would do the same. I have never tested it though so I cannot say for sure. I tested a lot of recipes, including ones that used lupin flour, before I settled on this one for taste and texture.

      I've tried many different keto recipes and I must say this is the BEST Keto Bread recipe!
      Aldi's had my favourite store bought but they have stopped carrying it. So now I have to make my own as others just don't taste the same.
      Bobbi has given me the perfect texture & flavour bread. Without Almond Flour which I find makes things taste grainy.
      I love having just a slice of bread with butter or sandwiches. It is so delicious!

      Hi there and thank you for this recipe! I can't wait to try it. I tried a similar one but something went really wrong and I want to fix it. I didn't have oat fiber so I substituted psyllium husk which I read was a good substitute. Everything else was the same, I used a scale and followed instructions exactly. Any idea what caused my bread not to rise?

        I have never swapped them out so I cannot say for certain. Anytime you substitute an ingredient in a recipe you run the risk of it failing since the recipe is tested as written. I hope you enjoy this recipe, it was a life saver for me and my family!! I missed grilled cheese sandwiches haha!!

      Bobby, I have made this bread on several occasions, I follow directions closely. Only once has the bread risen to look like a full loaf. It seems to be half risen, in most instances. I changed the yeast to make sure it is fresh. I do use truvia instead of your suggested sweetener. We eat the bread anyway b/c it is moist and tender, never dry or "rough". My husband loves it, and I rarely get more than a couple of slices. Can you offer any suggestions. This is not meant to be critical b/c obviously tons of ppl have been very successful. Could it be the truvia?

        I would suggest using the teaspoon of honey because that is what "feeds" the yeast. The sweetener subsitutes do not do that. The sugar that you add with the honey will actually be "eaten" byt the yeast. You can then add your sweetener of choice to the bread mix.

          Bobbi, I use honey to activate the yeast and I use Truvia as a substitute for the monk fruit/allulose ingredient, is that acceptable?

          Yes. I now just use honey period, but to keep the carbs down I would use a teaspoon of honey to activate the yeast and then add your Truvia to sweeten.
