I don't know if it was the pasta, or those old cream of canned soup memories flooding my brain, but it looked and sounded SO good!
I think I let myself pout over not being able to have it for a few days and then the light bulb went off in my head. I knew there had to be a way that I could make it but stick to my diet. I do so love a challenge so I dug in with both hands and started writing and testing recipes.
The first thing I had to do was make those cream soup recipes keto friendly. Which was actually pretty easy.
Then choose a pasta substitute.
I thought about zoodles, like I use in this Chicken Alfredo Zoodle Bake recipe, or maybe spaghetti squash noodles.
But once I tried Palmini noodles in my Keto Lasagna and had carb lovers telling me they were just as good as the real thing? Ya, I knew I had a winner!
I even enlisted the help of people in my neighborhood for this recipe. When I made a batch I would put the word out on our Facebook page and people came and picked up a serving to test it out for me.
This final version got the thumbs up from everyone that tried it, old and young, low carb or not!
INGREDIENTS NEEDED TO MAKE KETO CHICKEN TETRAZZINI

- Sour cream
- Butter
- Chicken bone broth (homemade or storebought)
- Salt
- Pepper
- Garlic powder
- Onion powder
- Frozen peas (can omit for strict keto)
- Cooked chicken
- Palmini angel hair noodles
- Mozzarella cheese
- Cheddar cheese
- Parmesan cheese
- Fresh parsley
HOW TO MAKE KETO CHICKEN TETRAZZINI
STEP 1
Preheat oven to 350 degrees F. Coat a 9×13 baking dish with butter or olive oil cooking spray, set aside.

In a large bowl whisk together both soups, sour cream, butter, chicken broth, salt, pepper, garlic powder, and onion powder until combined.

Stir in the peas, chicken, noodles, and 1 cup of the mozzarella cheese; toss to combine until fully coated.

What are Palmini noodles? Palmini noodles are made from hearts of palm. They are firmer than zoodles or spaghetti squash noodles and have a flavor that I would put somewhere between artichoke and asparagus, but 10 times better!
How do I store leftover Keto Chicken Tetrazzini? If you have any! It will store well in an airtight container in the fridge for 3 or 4 days.
I am strict keto, what can I use instead of peas? The carbs from the peas in this are really very low, but if you are strict keto you could add mushrooms in place of the peas, just saute them in some butter before adding them to the mix.

Due to my eyesight I had to hire someone to do my photography for me a little over a year ago. Aside from Jen just being a sweetheart with a fabulous sense of humor, one of the things I love about her is that she is NOT keto so I get the oppinion of two adults and 2 kiddos that can have the carb loaded versions of my recipes any time they want. They aren't dying for some kind of a subsitute so they might settle for something.
Nope, I get straight up real truth from them all. Her mother in law is gluten-free so I get that oppinion as a bonus.
I have yet to send Jen a recipe that they have absolutely hated *knock on wood* but it does really keep me on my toes because I know if I can win them over I can win just about anyone over!
The verdict on this was a thumbs up from her daughter as she was shoveling spoonfuls into her mouth. I will take that as a HUGE win!

- 1/2 cup chicken bone broth (homemade or store-bought)
- 1 teaspoon pink sea salt
- 1/2 teaspoon fresh cracked black pepper

- 2 pounds seasoned cooked chicken, chopped or shredded
